This apple sauce recipe is the easiest, most delicious treat you can make to have as a snack, condiment, or an ingredient for other meals.

6 lb. apples, peeled, cored, and cut into 8 slices
1 c. apple juice or apple cider
Juice of 1 lemon
1/2 c. brown sugar, packed
1 tsp. cinnamon, more or less to taste
Optional ingredients: Nutmeg, maple syrup, allspice, butter, to taste

Steps:

  • Combine all ingredients in a large pot and cook over medium heat, stirring occasionally, for 25 minutes.
  • Carefully puree in a food processor or blender (don't fill too full; split into two portions if needed) until smooth. Store in the fridge and serve by itself, over pork chops, over ice cream, over pancakes...or any place where applesauce is needed!

Steps:

  • Reduce the apple cider in a saucepan over medium-high heat until it's thick and coats the back of a wooden spoon, 10 to 15 minutes. Stir in the cream and salt and cook until it reaches the desired consistency, an additional 2 to 3 minutes.

12 apples (I love Gala)
1 cup brown sugar
3/4 cup apple cider
2 Tbsp ground cinnamon
1 tsp ground nutmeg
1 tsp salt
1 1/2 tsp vanilla
juice from half of a lemon (about 1 tsp)

Steps:

  • Peel and core the apples. Chop into thin slices.
  • Place apples into a large pot.
  • Stir in remaining ingredients, making sure apples slices are evenly coated.
  • Cook apples over medium heat, stirring occasionally, until the apples are soft. Approximately 25-30 minutes. If the liquid cooks down too much, stir in additional apple cider, 1/4 cup at a time.
  • Using a potato masher, carefully mash the apples until they are no longer recognizable slices.
  • Stir the applesauce and continue cooking until desired consistency is reached.
  • Remove from heat and give the apples one final mash to break up any remaining larger chunks.
  • Cool and enjoy!

3/4 cup apple cider
1 tablespoon sugar, plus more if needed
Pinch of salt

Steps:

  • Bring apples and cider to a boil in a medium saucepan over medium-high heat. Cover pan; reduce heat. Simmer until apples are very soft, about 12 minutes. Remove lid; stir in sugar and salt.

1/2 cup/120 milliliters vegetable oil
1/2 cup/120 milliliters unsweetened applesauce
1/2 cup/100 grams granulated sugar
1/2 cup/110 grams packed dark brown sugar
3 large eggs
1 large Granny Smith apple, unpeeled and shredded (about 1 cup)
1 cup/240 milliliters apple cider
2 tablespoons unsalted butter
1/2 cup/60 grams confectioners' sugar
Pinch of kosher salt

Steps:

  • Heat oven to 350 degrees. Butter and flour an 8 1/2-inch-by-4 1/2-inch loaf pan. In a medium bowl, whisk together flour, baking powder, cinnamon, salt, nutmeg and cloves. In a large bowl, whisk together the oil, applesauce, sugars, eggs and apple.
  • Fold the dry ingredients into the wet ingredients until just combined. Transfer to the prepared pan and bake until a toothpick inserted into the center comes out clean, 50 to 60 minutes.
  • Transfer to a rack to cool slightly, then remove the cake from the pan and let it cool completely.
  • When the cake has cooled, prepare the glaze: Bring the apple cider to a boil in a small saucepan over medium-high heat. Continue to cook the cider until it has reduced to 1/3 cup, about 10 minutes. Add the butter, confectioners' sugar and salt. Reduce the heat to maintain a simmer and continue to cook the mixture, whisking often, until it has become syrupy and thickened slightly, about 4 minutes. Set aside to cool until it thickens slightly.
  • Drizzle the glaze over the cake, and serve.

4 teaspoons baking powder
1 tablespoon plus 1 1/2 teaspoons ground cinnamon
1 teaspoon fine salt
1/4 teaspoon baking soda
1/4 teaspoon freshly grated nutmeg
1 2/3 cup sugar
3 tablespoons vegetable shortening
1 large egg plus 1 egg yolk
1 cup smooth applesauce
1/4 cup buttermilk
1 teaspoon pure vanilla extract
Vegetable oil, for frying

Steps:

  • Whisk the flour, baking powder, 1 1/2 teaspoons of the cinnamon, salt, baking soda and nutmeg in a medium bowl.
  • Beat 2/3 cup of the sugar and shortening in another bowl with a mixer on medium speed until sandy. Beat in the egg and yolk, then gradually mix in the applesauce, scraping the bowl. Beat in half of the flour mixture, then the buttermilk and vanilla, and then the remaining flour mixture. Mix to make a sticky dough; do not overmix.
  • Scrape the dough onto a lightly floured sheet of parchment paper in a baking sheet and pat into the size of the baking sheet, about 1/2-inch thick. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
  • Heat 2 inches of oil in a large heavy-bottomed pot over medium-high heat until a deep-fry thermometer registers 350 degrees F. Line a baking sheet with paper towels. Cut the chilled dough into 12 rounds, using a floured 3-inch biscuit cutter, then cut out the middles with a 1-inch cutter (or use a doughnut cutter). Slip 2 or 3 doughnuts at a time into the hot oil and fry until golden brown, 1 to 2 minutes per side, adjusting the heat as needed. Transfer to the paper towels to drain.
  • Mix the remaining 1 cup sugar and 1 tablespoon cinnamon in a medium bowl. Toss the doughnuts in the cinnamon-sugar. Serve warm.
