CHEESY PEA PASTA
This is a very quick and simple recipe with peas and a cheesy tomato sauce. My mom and grandmother used to make this for us when I was small. Serve with a loaf of bread and a salad, if desired.

Steps:
- Heat olive oil in a skillet over medium heat; saute onion for about 5 minutes. Add salt, pepper, tomato sauce and water; bring mixture to a boil and add peas; reduce heat and simmer for about 30 minutes.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Stir cooked pasta and cheese into tomato sauce mixture. Cover pan and turn off heat; let stand for 20 minutes.

- Cook pasta according to package directions. Meanwhile, in a large skillet, saute the mushrooms, onions and garlic in butter for 5 minutes or until tender. Stir in flour and cornstarch until blended. Gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add peas, jalapeno, salt, pepper and hot pepper sauce; simmer for 1 minute. Stir in 1-1/2 cups cheddar cheese and Monterey Jack cheese until melted. Remove from the heat., Drain pasta; transfer to a greased 13x9-in. baking dish. Stir in cheese sauce. Sprinkle with bread crumbs and remaining cheddar cheese. , Bake, uncovered, at 375° for 35-40 minutes or until golden brown and bubbly.

I wanted to make something different other than spaghetti noodles to put underneath my Chicken Parmesan. I looked through the cabinets and freezer and came up with this. It was a wonderful substitute!

- 1. Cook pasta according to directions on box, adding the peas during the last 3-5 minutes of cooking.
- 2. Drain pasta and peas.
- 3. Return pasta and peas to cooking pot and add the butter, milk, and cheeses. Stir over low heat until cheese is melted.

- Preheat the oven to 200 degrees C/ gas mark 6
- Grab a saucepan, pour all the pasta in and fill with cold tap water until the pasta is submerged. Cook the pasta until "al dente" or done. But just before it is done, add the vegetables into the saucepan.
- While the pasta is cooking, place the flour, the margerine, the mustard powder and the milk into another clean saucepan and stir well until smooth.
- Set the sauce on a cooker and start to boil, stirring continuously until the sauce thickens. Keep simmering until smooth.
- Add the cheese to the sauce, and stir in in.
- Remove the pasta and veg from the cooker, and drain it using a colander. Put the pasta and veg back in the saucepan and mix in the cheese sauce.
- Mix in all up then pour it into the oven proof tray, and put it in the oven for 10 minutes.
- Take the tray out, take the pasta out the tray and put on a plate. Sprinkle the bacon all over, then serve.

CHEESY TUNA PASTA BAKE WITH GREEN PEAS & BROCCOLI | RECIPES

- Preheat the Oven & Prepare the Ingredients • Preheat the oven to 350ºF. • Rinse the broccoli, peas, and green onion. • Chop the broccoli into smaller florets, de-shell the peas (if in pods), dice the green onion and mince the garlic. • Grate the cheddar cheese.
- Cook the Pasta & Broccoli • Bring a large pot filled with water and a pinch of salt to boil. • Once boiling, add the pasta and boil for 6 minutes. Add the broccoli and continue to cook until the pasta and broccoli are fork-tender, about another 3-5 minutes. • Drain the pasta and broccoli in a colander in the sink. Return them to the pot and stir in the flour.
- Bake the Casserole • Add the garlic, peas, milk, and half of the cheese to the pot and stir. • Flake the tuna into the pot using a fork and season with salt and pepper to taste. • Pour the mixture into a medium baking dish. • In a medium bowl, combine the green onion, panko/breadcrumbs, and the remaining cheese. • Mix well and sprinkle on top of the casserole. • Bake in the oven until the top is golden-brown and the cheese is fully melted, 10-12 minutes.
- Bring It All Together • Remove the casserole from the oven and let cool slightly before evenly dividing between two bowls or plates to serve!
