SUMMER BEEF SKEWERS

Steps:
- In a bowl, combine the first eight ingredients and mix well. Pour 1 cup into a shallow dish; add vegetables. Pour remaining marinade into another shallow dish; add beef. Cover and refrigerate both for 4-6 hours or overnight, turning occasionally., Drain and discard marinade from beef. Drain and reserve marinade from vegetables. On metal or soaked wooden skewers, alternately thread beef, tomatoes, mushrooms, zucchini and summer squash., Grill, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Continue turning and basting for 8-10 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve kabobs over rice if desired.

SUMMER STEAK KABOBS

- In a large bowl, combine first six ingredients. Add beef; turn to coat. Cover and refrigerate 8 hours or overnight., On 12 metal or soaked wooden skewers, alternately thread beef and vegetables; discard marinade. Grill kabobs, covered, over medium heat until beef reaches desired doneness, 10-12 minutes, turning occasionally. Serve with rice.

MOROCCAN BEEF KEBAB / SKEWERS
This is a nice variation from ordinary kebabs. The longer you let the meat marinate, the more tender it will be when you cook it. (The times listed below does not include marinating time).

Steps:
- Cut any large pieces of meat in half so they will cook faster. Then place the beef cubes in a medium bowl. Chop the parsley & add it to the beef, set aside to be used later.
- Pour the olive oil in a small glass bowl. Add the spices, vinegar & tomato paste, stir until well blended. Grate the onion & add it to the oil mixture.
- Stir the mixture in with the beef until it is well coated. Cover with a lid & place in the refrigerator to marinate for at least 2 hours.
- Place the beef on skewers, leaving a little gap between each piece. Grill on each side until the meat is no longer pink inside, between 10-15 minutes.
- Serve with thick bread instead of utensils. (Moroccans eat most of their food with their right hand, using only bread to scoop up the meal).
BEEF SKEWERS

Steps:
- Soak skewers in water for 1/2 hour.
- Preheat the broiler.
- In a small sauté pan over low heat, toast the sesame seeds, stirring constantly to avoid burning them. When the seeds are golden, remove them from the pan and reserve.
- Slice the beef into very thin strips - 1 1/2 inches in length, 3/4 inch in width, and as close to 1/4 inches thick as you can get.
- Slice the white stems of the green onions into 3/4-inch-long pieces; discard the rest.
- Roll up one piece of beef like a jellyroll. Place it on a skewer, add one piece of green onion, then another piece of beef and another scallion. Repeat with all the skewers. Sprinkle the skewers with salt.
- To cook: Place under the broiler for 2 to 3 minutes for medium rare. Sprinkle with sesame seeds and serve.

- The Day Before: Mix together the marinade ingredients. Add beef cubes and marinate 24 hours in the refrigerator.
- Prepare Kabobs: Cut onions and peppers into large chunks. Clean mushrooms and cut off large stems.
- Drain beef and thread beef and veggies onto skewers. Grill.
