TACO DIP

Taco Dip image

This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

Provided by Food Network Kitchen

Categories     appetizer

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 11

1 tablespoon vegetable oil
1 1/2 pounds ground beef
Half a 1.25-ounce packet taco seasoning mix, or 3 tablespoons homemade taco seasoning
2 tablespoons tomato paste
One 14.5-ounce can black beans, drained and rinsed
2 cups sour cream
2 cups shredded sharp Cheddar
1 large tomato, chopped
2 cups shredded iceberg lettuce
Sliced black olives and/or pickled jalapenos, optional
Tortilla chips, for serving

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
  • Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.

LAYERED TACO DIP

Layered Taco Dip image

An elegant, yet easy way to start off any party!! This dip has a great eye appeal...You may have to take the first bite just to get others to join in!! They will be glad you and they did though!!Cook time includes chill time. Preferably for me it would be overnight just to let flavors blend. However, I am sure it would be acceptable after 3 to 4 hours of chill time.

Categories     Lunch/Snacks

Time 3h20m

Yield 12-15 serving(s)

Number Of Ingredients 12

1 lb lean ground beef
1 (4 ounce) can chopped green chilies, undrained
2 teaspoons instant beef bouillon
1 (16 ounce) container sour cream
1 (1 1/8 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (6 ounce) container frozen avocado dip, thawed
shredded cheese
chopped tomato
sliced green onion
sliced ripe olives
tortilla chips

Steps:

  • In a large skillet, brown meat; pour off fat.
  • Add chilies and bouillon; cook and stir until bouillon dissolves.
  • Cool.
  • In small bowl, combine sour cream and taco seasoning mix; set aside.
  • In 7 or 8" springform pan (I prefer the use of the springform pan for a dramatic presentation) or on large plate, spread beans.
  • Top with meat mixture, sour cream and avocado dip.
  • (**seenote).
  • Cover and chill for several hours.
  • Just before serving, garnish with cheese, tomatoes, onions and olives.
  • Serve with tortilla chips.
  • Refrigerate leftovers, if there are any!
  • **Note-I find it works best to chill between layers of sour cream and avocado dip for spreadability.
  • The finished product and beauty of the layers is much more pronounced this way.
