SUNNY'S EASY CHICKEN PARM DOG
Steps:
- Prepare a grill for medium-high heat. Put the hot dogs on the direct heat of the grill and cook until desired doneness.
- In a pan on medium heat, add the olive oil, breadcrumbs, a pinch of salt and few grinds of pepper. Toast, stirring, until the breadcrumbs soak up the oil and become golden, a few minutes. Toss in the parsley and basil off heat.
- Open each bun and stuff with equal amounts of mozzarella. Wrap in aluminum foil and place over the indirect heat of the grill (or in a warm oven, about 300 degrees F). Remove when a check inside reveals melted mozzarella. Spray the tops of each lightly with butter spray, sprinkle the breadcrumbs over the top of the buns, return to the grill or oven and cook until the tops are a bit crusty and stiff, a few more minutes.
- Put the hot dogs over the melted mozzarella in the buns. Top with pizza sauce and grated Parmesan.
SUNNY'S EASY SMOTHERED CHICKEN
Steps:
- Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms and thyme and more olive oil if needed and saute until lightly browned and tender, 5 to 10 minutes. Add the onion and season with salt and pepper. Let cook until the onions are softened, 5 to 7 minutes. Mix in the flour and mustard and cook for about 2 minutes. Whisk in the beef stock and bring to a simmer. Cook until thickened, 3 to 4 minutes. Add the grilled chicken breasts, then cover the skillet and turn down the heat to medium-low. Let simmer for about 10 minutes.
- Prepare the rice according to the package directions. Remove the rice to a large bowl and stir in 2 tablespoons parsley. Place rice on a platter, then top with the chicken and mushroom sauce. Garnish with the remaining fresh parsley.
SUNNY'S EASY CHICKEN TORTILLA SOUP

- For the tortilla strips: Heat the oil in a medium Dutch oven over medium-high heat. When the oil begins to shimmer, add the tortilla strips and cook, stirring, until they are crispy, about 3 minutes. Transfer to a paper towel-lined plate and sprinkle lightly with salt. Set aside.
- For the soup: In the same pot, add the cumin, paprika, jalapeños, onion and salt and pepper to taste. Cook until the veggies are soft and tender, about 8 minutes. Add the stock and diced tomatoes and green chiles. Bring to a simmer. Add the chicken and simmer until the chicken is warmed through.
- For serving: Serve in bowls with a pile of the fried tortilla strips and some yogurt and hot sauce, if desired, on the side.

- Coat bottom of casserole with some of the spaghetti sauce.
- Arrange chicken breasts in casserole dish.
- Pour spaghetti sauce over the chicken sprinkle with garlic powder.
- Top with shredded mozzarella, followed by shredded parmesan cheeses.
- Bake 25-30 minutes.
- Serve with cooked pasta to use up all that sauce.

- Preheat oven to 350°F.
- Place bread crumbs in a wide, shallow bowl. Whisk together egg and milk In another wide, shallow bowl. Dredge chicken breasts one at a time in the egg mixture first and then in the bread crumbs. Place coated breasts side-by-side in a baking dish.
- Dividing evenly, top each breast with 3/4 cup mozzarella and then follow with 1/3 cup parmesan.
- Divide spaghetti sauce evenly and spoon over each breast.
- Top each breast with remaining mozzarella and parmesan in the same order as above.
- Bake for 30 minutes or until juices from chicken breasts run clear and cheese topping is lightly browned.
- During last 15 minutes of chicken's cooking time, prepare spaghetti per package instructions.

This has been a family favorite for years. My sons loved it as they were growing up, asking for it often. Now, as adults, they are making it for their wives! It is not only easy, but lower fat than most versions! Many times I simply cook this in a skillet with a little Pam. The results are just as good!

Steps:
- Pour a small amount of spaghetti sauce on the bottom of a baking dish. You only need enough to cover the bottom of the dish.
- Place the chicken breasts (flattened to ¼") on top of the sauce. Cover with the remaining sauce.
- Bake chicken and sauce for 20 minutes.
- Sprinkle the mozzarella cheese over chicken and return to over. Bake for 10 minutes.
- Remove from oven and sprinkle with parmesan cheese.
- Serve with cooked pasta.
