APPLE CUSTARD PIE WITH CINNAMON STREUSEL

I'll admit it guys: I don't love apple pie. It's kinda boring. But I LOVE this Apple Custard Pie! Fruit pies are just better with a creamy custard layer, what can I say. The flaky crust and cinnamon streusel don't hurt either. My new favorite fall dessert!

1 pie crust (9 inch)
5 large apples (**)
1/2 lemon
4 tablespoons butter (1/2 stick )
1/2 cup white sugar
1 tablespoon pumpkin pie spice
1 & 1/3 cup sour cream (+ 1 tablespoon)
5 large egg yolks (not the whites)
1 & 1/2 teaspoons vanilla
1 & 1/2 cups white sugar
6 tablespoons flour
1/2 cup flour
1 tablespoon pumpkin pie spice
1/4 cup white sugar
4 tablespoons butter (cold, cut into chunks)

Steps:

  • Preheat oven to 400 degrees F.
  • Prepare the pie crust and arrange in a DEEP pie plate, crimping edges. Set aside.
  • Peel and core the apples. Slice them very thin (think 1/8 inch or so--I used a mandolin but a sharp knife works too).
  • Put them in a bowl and squeeze lemon juice on them after every apple you slice, tossing to coat. This is to add flavor and also to keep the apples from browning.
  • In a large skillet, heat 4 tablespoons butter over medium heat. Add 1/2 cup sugar and 1 tablespoon pumpkin pie spice.
  • Add the apples. If you used a lot of lemon juice, don't add all of it. Add 1 teaspoon maximum.
  • Cook over medium heat for about 3 minutes. Turn the heat up to high and cook for another 2-3 minutes, until the liquid is bubbling and has reduced somewhat. (See photo above).
  • Pour the apples into the unbaked crust and set aside.
  • Make the custard. In a medium bowl, whisk together sour cream, egg yolks, and vanilla.
  • Add the sugar and whisk well.
  • Gradually add the flour while whisking. Whisk out any lumps.
  • Pour the custard over the apples, but be careful not to overfill! See photo above. How much you need depends on the size of your pie pan. I used all but about 1/3 cup of the custard.
  • Place the pie pan on a baking sheet in case it spills over the edge.
  • Bake at 400 degrees F for 20 minutes. The custard should be starting to set and be golden on top when you take it out of the oven. Decrease the oven temperature to 375 degrees F.
  • Meanwhile, make the streusel. In a medium bowl, whisk together 1/2 cup flour, 1 tablespoon pumpkin pie spice, and 1/4 cup sugar. Use a fork or pastry cutter to cut in 4 tablespoons cold butter. Cut until you have pea-sized chunks of butter. Keep refrigerated until you are ready to add it to the pie.
  • Once the pie has baked 20 minutes, remove the pie from the oven and add the streusel topping.
  • ( Don't forget to LOWER the oven temperature to 375.)
  • Use a pie crust cover*** to cover the crust so it doesn't burn.
  • Bake an additional 20 to 25 minutes at 375, or until a toothpick comes out clean.
  • Let sit at room temperature for at least an hour or 2 before cutting into it. I can never wait this long so I always put it in the freezer for 45 minutes or so. Serve with ice cream and caramel sauce! (Recipe below)

There may never be an answer to what a true Dutch apple pie is. Some recipes add cream to the filling. Some call for making a deep-dish pie with a lattice top, and others top it with streusel. After a visit to a Pennsylvania Dutch diner, we decided to go with the streusel for a sweet and crunchy topping.

2 1/2 cups all-purpose flour, plus more for the work surface
4 teaspoons granulated sugar
1/4 teaspoon fine salt
14 tablespoons cold unsalted butter, diced
1 large egg, lightly beaten with 2 tablespoons cold water
2 tablespoons fresh lemon juice
3 pounds baking apples, such as Golden Delicious, Cortland or Mutsu
2/3 cup granulated sugar
4 tablespoons unsalted butter
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Generous pinch freshly grated nutmeg
1 cup all-purpose flour
1/2 cup light brown sugar
1/4 teaspoon fine salt
6 tablespoons unsalted butter, at room temperature
1/2 cup chopped walnuts

Steps:

  • For the dough: Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter, and pulse until the mixture resembles yellow cornmeal mixed with pea-sized bits of butter. Add the egg, and pulse until the dough just comes together. (If the dough is very dry, add up to 1 tablespoon cold water.) Remove the dough, gently pat it into a round, wrap it in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour and up to 2 days.
  • For the filling: Meanwhile, put the lemon juice in a medium bowl. Peel and core the apples; cut each in half, and cut each half into 4 wedges. Add the apples and granulated sugar to the bowl with the lemon juice, and toss.
  • Melt the butter over medium-high heat in a large skillet. Add the sugared apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to extract as much liquid as possible. Return the juice to the skillet, and simmer over medium heat until it has thickened and lightly caramelized, about 10 minutes.
  • Toss the apples with the thickened juice, cinnamon, allspice and nutmeg in a medium bowl. Set aside to cool completely. (The cooled filling can be refrigerated for up to 2 days or frozen for up to 6 months.)
  • For the streusel topping: Whisk the flour, sugar and salt together in a medium bowl. Add the butter, and rub it into the flour mixture with your fingers until it has been absorbed. Mix in the walnuts.
  • To assemble and bake the pie: Position a rack in the lower third of the oven, place a baking sheet on it and preheat the oven to 375 degrees F. On a lightly floured work surface, roll the dough disk into a 12-inch circle. Layer it between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
  • Ease the dough round into a 9-inch pie pan. Fold and crimp the edges as desired. Add the filling, and spread it out to make an even layer. Squeeze handfuls of the streusel topping, and drop clumps of it on top of the filling to completely cover it.
  • Bake the pie on the preheated baking sheet until the crust and streusel are golden brown, 50 to 60 minutes. Let it cool on a cooling rack for at least 3 hours before serving. (The pie keeps well, covered, at room temperature for 24 hours or refrigerated for up to 4 days.)

9 apple - peeled, cored and sliced

500g pack shortcrust pastry , thawed if frozen
1kg rhubarb , trimmed, or 750g/1lb 10oz ready trimmed
3rounded tbsp plain flour
85g caster sugar
85g plain flour
1 tsp ground cinnamon
50g demerara sugar
50g hazelnut , roughly chopped
50g butter
single cream or vanilla ice cream, to serve

Steps:

  • Roll out the pastry and use to line a deep 23cm/9in flan tin. Chop the rhubarb into 3cm/1in lengths and tip into a large bowl with the flour and sugar. Mix well, then tip into the pastry case, spreading the rhubarb to level it.
  • To make the topping, mix together the flour, cinnamon, sugar and nuts. Add the butter, cut into small pieces, and rub in with your fingertips until the mixture resembles coarse breadcrumbs. Sprinkle evenly over the top of the rhubarb. Set aside until ready to bake, up to 6 hours.
  • Preheat the oven to 190C/Gas 5/fan oven 170C. Bake the pie for 40-45 minutes until the topping is crisp and golden and the rhubarb is tender - test by spearing a piece of fruit through the topping with a knife. Serve warm or cold with single cream or vanilla ice cream.

100g butter , plus 1 tbsp
175g light brown muscovado sugar , plus 1 tbsp
2 dessert apples , peeled and cut into 1.5cm pieces
2 eggs
1 tsp vanilla extract
200g plain flour
1 tsp baking powder
½ tsp ground cinnamon
100ml milk
25g flour
85g demerara sugar , plus 1 tbsp
½ tsp ground cinnamon
50g cold butter
3 tbsp toasted, chopped hazelnuts

Steps:

  • Heat 1 tbsp butter and 1 tbsp sugar in a large frying pan over medium heat until the sugar starts to melt. Add apples, then cook for about 5 mins, until nicely browned and the sauce is a rich caramel. Leave to cool.
  • While the apples cool, make the topping. In a food processor or using the tips of your fingers, rub together flour, 85g sugar, cinnamon and cold butter until the mixture is crumbly and only pea-size pieces of butter remain. Stir in 2 tbsp of hazelnuts. Set aside in a cool place.
  • Heat oven to 180C/160C fan/gas 4. To make the cake, place the remaining butter and sugar in a bowl or food mixer and beat until light and creamy. Add the eggs one at a time, followed by the vanilla extract. Add the flour, baking powder, cinnamon and milk in two goes, alternating between dry and wet ingredients. When the mixture is well combined, stir through the apples.
  • Grease a 20cm cake tin with removable base and line the base with a circle of baking paper. Spoon in the cake mixture, smooth over the top with a spoon, then sprinkle over the streusel topping. Scatter with the remaining 1 tbsp demerara sugar and hazelnuts. Cook in the oven for 50 mins-1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.

1 cup flour
1 cup old fashioned oats
2 teaspoons cinnamon

Steps:

  • Peel and core the apples. Use a sharp knife or mandolin to slice the apples into very thin, uniform pieces.
  • Preheat the oven to 375 degrees F. Grease a 9x13 inch pan.
  • Add the sliced apples to the pan.
  • In a medium bowl, combine brown sugar, flour, oats, cinnamon, and nutmeg. Use a fork or pastry cutter to stir in the softened butter.

9-inch store-bought frozen deep-dish pie crust

Crumb Topping
2 tablespoons softened butter
1/3 cup flour
1/3 cup well packed brown sugar
Good sprinkling of cinnamon

Flour & Sugar Mixture
1/2 cup granulated sugar
1/4 cup well packed brown sugar
1/4 cup flour
1/2 teaspoon ground cinnamon (spread it around)
1/2 teaspoon ground nutmeg
Dash of salt

8 cups peeled and cored apples each cut into 6 slices (6-8 small apples)
2 tablespoons softened butter

Steps:

  • Transfer the pie crust from the tinfoil pan to the CENTER of a 10-inch glass pie dish. Set aside to thaw.
  • Make the crumb topping: In a bowl, mash butter, flour, brown sugar and cinnamon together to resemble crumbs and then set aside.
  • Make flour & sugar mix: In a bowl, stir ingredients together until all one color (beige) and set aside.
  • Prepare the apples: Into a bowl, peel, core and slice a few apple slices, stir and cover well with the flour & sugar mixture as you go. Once all are cut and covered, set the apple bowl aside.
  • Making the pie: Squoosh the pie crust thinly to fit the pan (you can use your fingers to do this), and then put the crust in the freezer for exactly 5 minutes. Meanwhile, heat oven to 425F degrees.
  • Put 2 tablespoons softened butter into a large skillet over medium heat. When butter melts, empty the bowl of sugared apples on top of the butter, and cook for exactly 5 minutes, stirring occasionally. Take pie crust from the freezer and put in the hot oven for the same 5 minutes you are cooking the apples.
  • When timer rings for the 5-minutes of the pie crust in the oven, remove pie crust from oven and pour apples from the skillet into the pie crust. Make sure apples form a flat surface as a base for the crumb topping. Pour crumb topping onto apples, making sure to cover all the apples, otherwise apples may burn.
  • Return the pie to the oven, and set the timer for EXACTLY 30 minutes.

This came from a request on our Request a Recipe board. My experiment incorporated KimmieOH's (recipe #45567) and Sharon123's (recipe #48766) recipes and I'd like to thank both of them. The recipe looks more complicated than it is. There are quite a few steps, but each one is simple and not as time consuming as it appears and most can be done ahead of time. If you prefer a sweeter pretzel you can try a different type of apple (I liked the tartness of the Granny Smith's). Also, I added the pecans as my personal preference, but they can be omitted. I think the results came out great. Hope you do, too.

2 1/2 teaspoons yeast
1 tablespoon sugar
1 cup warm water
1 1/2 cups all-purpose flour
1 1/2 cups bread flour
1/2 teaspoon salt
2 tablespoons vegetable oil
3 small granny smith apples
1 tablespoon butter
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1 pinch ground cloves
1/2 cup flour
1/2 cup brown sugar
1/4 teaspoon cinnamon
4 tablespoons butter
1/2 cup finely chopped pecans
1/3 cup baking soda
2 cups water
1 egg white

Steps:

  • To prepare dough:.
  • Proof yeast and the 1 TBS sugar in the 1 cup of warm water and allow to rest for 5 minutes until foamy.
  • Mix the flours with 1/2 teaspoons salt and 2 TBS oil in bowl and then add proofed yeast mixture.
  • Stir to form a shaggy dough.
  • Place onto lightly floured surface and knead for 2-3 minutes until a smooth, but slightly sticky dough is formed.
  • Place into a greased bowl, covered with plastic wrap, and let sit until doubled (45-60 minutes).
  • While waiting for the dough to rise prepare filling and streusel.
  • To prepare filling:.
  • Peel, core, and thinly (1/4" thick) slice the apples and then cut each slice into 8 pieces (I used my peeler/corer/slicer all in one contraption).
  • Saute the apple pieces with 1/2 of the TBS of butter, the 1/2 teaspoon cinnamon, and the pinch of cloves until the apples are tender, but not mushy.
  • Remove from heat and stir in the additional 1/2 TBS of butter.
  • To prepare streusel:.
  • Mix the flour, sugar, and cinnamon together.
  • With fork cut in the 4 TBS of butter to a crumb consistency.
  • Stir in the chopped pecans.
  • When dough has risen, punch down, place on lightly floured board, and cut into 8 equal pieces.
  • With hands, roll each piece into a 15" long cylinder.
  • Flatten the cylinder down with a rolling pin to measure 3" wide by 17" long.
  • Place 1 1/2 TBS of the filling mixture along the length of each piece and fold the long edge over to meet the other side.
  • Pinch along the seam to thoroughly enclose the filling.
  • Roll the dough with your hands to form an even cylinder and fully encapsulate the filling.
  • Take the two ends of each filled cylinder and form into a circle that is overlapped by a couple of inches of dough on either side, twist the ends and lay over the opposite side to form a pretzel shape and press to seal.
  • Play with the shape a bit to get the right form and then place each one on a parchment or Silpat lined cookie sheet.
  • Repeat for all 8 pieces.
  • Allow to rise on cookie sheet for 15 minutes.
  • While they are rising, boil 2 cups of water and add 1/3 cup of baking soda.
  • Preheat oven to 425 degrees Fahrenheit.
  • Beat 1 egg white with 1 TBS water and lay it on a flat plate.
  • Lay the streusel topping on a flat plate, too.
  • When the pretzels have fully risen, drop one at a time into the boiling water and count to 10.
  • Remove with a large slotted spatula/spoon to slightly drain and then drop onto the egg white, turn to coat, then drop into the streusel and turn to coat.
  • Lay each completed pretzel back on the lined cookie sheet.
  • Repeat this procedure until all pretzels are done.
  • Place into the preheated oven and bake for 15 minutes (check on them at 12 minutes).
  • Immediately remove from cookie sheets and place on racks to cool.
  • *Note:I haven't including the rising time in the"Time To Make" category, but there are two rises for this dough.
  • The first is 45-60 minutes and the second is 15 minutes.
  • The recipe is written to make use of the rising times for preparing the filling and streusel.

  • For streusel topping: Combine nuts, brown sugar, cornmeal, flour, cinnamon, and nutmeg in food processor and pulse on/off until nuts are finely chopped. Add butter and process until small moist clumps form. (Can be prepared 1 day ahead. Cover and refrigerate.).
  • For filling: Position rack in center of oven and preheat to 375 degrees. Toss apples with sour cream in large bowl to coat. Mix sugar, flour, cinnamon, nutmeg, and cloves in a small bowl. Sprinkle mixture over apples and toss to coat.
  • Transfer filling to prepared crust. Sprinkle streusel topping over apples, covering completely. Bake pie until apples are tender and streusel is golden, tenting pie if streusel browns too quickly, about 1 hour. Transfer pie to rack and cool slightly.
  • Serve pie slightly warm or at room temperature (and definitely with some vanilla ice cream!).

6 firm crisp apples, washed, quartered, and cored but not peeled (like Jonathon or Macintosh)
1/2 cup granulated sugar
2 tablespoons all-purpose flour

1/2 cup unsifted all-purpose flour

Steps:

  • For the filling: coarsely grate the apples with their skins on.
  • Mix apples thoroughly with sugar, flour, lemon juice, cinnamon, and salt.
  • For the streusel topping: combine sugar, flour and salt; pressing out any lumps of sugar.
  • Then using your hands, rub in the butter until mixture is crumbly.
  • Spoon apple mixture into unbaked pie shell, then scatter streusel evenly over the top.
  • Bake in a preheated 400°F oven for 10 minutes, then reduce the temperature to 375°F and continue to bake for an additional 25-30 minutes until the filling is bubbly and the streusel topping is dappled with brown.
  • Remove pie from oven and let cool for 20-25 minutes before cutting.

DUTCH APPLE PIE

There may never be an answer to what a true Dutch apple pie is. Some recipes add cream to the filling. Some call for making a deep-dish pie with a lattice top, and others top it with streusel. After a visit to a Pennsylvania Dutch diner, we decided to go with the streusel for a sweet and crunchy topping.

2 ½ cups all-purpose flour, plus more for the work surface
4 tsp granulated sugar
¼ tsp fine salt
14 Tbsp cold unsalted butter, diced
1 large egg, lightly beaten with 2 tablespoons cold water
2 Tbsp fresh lemon juice
3 lbs baking apples, such as Golden Delicious, Cortland or Mutsu
⅔ cup granulated sugar
4 Tbsp unsalted butter
1 tsp ground cinnamon
¼ tsp ground allspice
Generous pinch freshly grated nutmeg
1 cup all-purpose flour
½ cup light brown sugar
¼ tsp fine salt
6 Tbsp unsalted butter, at room temperature
½ cup chopped walnuts

Steps:

  • Pulse the flour, granulated sugar and salt in a food processor until combined. Add the butter, and pulse until the mixture resembles yellow cornmeal mixed with pea-sized bits of butter. Add the egg, and pulse until the dough just comes together. (If the dough is very dry, add up to 1 tablespoon cold water.) Remove the dough, gently pat it into a round, wrap it in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour and up to 2 days.
  • Meanwhile, put the lemon juice in a medium bowl. Peel and core the apples; cut each in half, and cut each half into 4 wedges. Add the apples and granulated sugar to the bowl with the lemon juice, and toss.
  • Melt the butter over medium-high heat in a large skillet. Add the sugared apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce the heat to medium-low and cook until the apples soften and release most of their juices, about 7 minutes.
  • Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to extract as much liquid as possible. Return the juice to the skillet, and simmer over medium heat until it has thickened and lightly caramelized, about 10 minutes.
  • Toss the apples with the thickened juice, cinnamon, allspice and nutmeg in a medium bowl. Set aside to cool completely. (The cooled filling can be refrigerated for up to 2 days or frozen for up to 6 months.)
  • Whisk the flour, sugar and salt together in a medium bowl. Add the butter, and rub it into the flour mixture with your fingers until it has been absorbed. Mix in the walnuts.
  • To assemble and bake the pie: Position a rack in the lower third of the oven, place a baking sheet on it and preheat the oven to 375ºF. On a lightly floured work surface, roll the dough disk into a 12-inch circle. Layer it between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
  • Ease the dough round into a 9-inch pie pan. Fold and crimp the edges as desired. Add the filling, and spread it out to make an even layer. Squeeze handfuls of the streusel topping, and drop clumps of it on top of the filling to completely cover it.
  • Bake the pie on the preheated baking sheet until the crust and streusel are golden brown, 50 to 60 minutes. Let it cool on a cooling rack for at least 3 hours before serving. (The pie keeps well, covered, at room temperature for 24 hours or refrigerated for up to 4 days.)

1 1/2 cups all-purpose flour
3 teaspoons pure vanilla extract
1 1/2 cups seedless raisins
1 1/4 pounds granulated sugar
1 pound all-purpose flour

12 ounces unsalted butter
1/2-ounce pecan pieces

Steps:

  • Make the streusel topping and chill, core and slice the apples. In large pot, melt the butter and stir in the sugar and spices. Add all fruit and cook until soft. Stir in flour and vanilla, then cook until thick and pour into 4 (8 by 10-inch) baking dishes. Top with streusel and bake at 350 degrees F until crispy and fruit is bubbling (approx. 40 minutes). Serve warm.
  • Mix butter, sugar, and flour together, until crumbly and mealy looking. Add cinnamon, salt, and pecan pieces. Do not over mix. Store in refrigerator. Streusel topping may be doubled for a thicker coating.

APPLE AND PEAR STREUSEL PIE

You might think that a pastry chef would never recommend buying pie crusts but hey, its much better to make a pie with a pre-made crust than not to make a pie at all! For the best flavor, always look for the ones made with at least some butter, rather than all shortening. You can place the crust in a glass pie dish. That way you can check the bottom crust as it bakes and make sure it's getting nice and golden which to my mind is the most important step in pie-making. Nothing ruins a delicious pie like this classic combination of autumn fruits and warm spices faster than an undercooked, soggy bottom crust. You can mix the topping and keep it refrigerated for up to 7 days.

  • Make the topping: In a medium bowl, mix the flour, brown sugar, and cinnamon. Add the butter and, using your fingertips, pinch the ingredients together into a sandy, crumbly mixture. Do not over mix; as soon as the mixture is sandy, cover and refrigerate until ready to use.
  • Heat the oven to 375 degrees F. If using a refrigerated crust, use it to line a glass pie dish. If using a frozen crust, let thaw at room temperature and gently remove the crust from the aluminum liner. Transfer to a glass pie dish.
  • In a medium bowl, toss the apples, pears, sugar, cornstarch, cinnamon, and butter together. Place the filling in the pie crust. Sprinkle the streusel topping on top and place the pie on a sheet pan to catch any juices. Bake for 40 to 50 minutes, until the crust is golden brown and the juices are bubbling. If there is a better way to use freeze-dried apples, we haven't seen it. When ground, they infuse this sugar-cinnamon-nut mixture with the taste of fresh apples. (Try subbing freeze-dried peaches for the apples for a summery tasting streusel.) Be sure to pulse the nuts in short bursts or the released nut oil will make the mix wet, pasty and hard to sprinkle.

1/3 cup crumbled freeze-dried apples
1/4 cup dark brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees. Put the pecans on a rimmed baking sheet and toast, stirring occasionally, until lightly fragrant and a smidge darker, 8 to 10 minutes. Let cool completely.
  • Meanwhile, add the apples to a spice grinder and grind to a fine powder. Transfer to a small bowl.
  • Add the cooled pecans to the spice grinder and pulse until they are the texture of very coarse cornmeal. Be careful not to grind them into a paste.

  • Preheat oven to 400°F. Toss apples and pears with 1/2 cup of the brown sugar, tapioca and cinnamon in large bowl. Let stand 15 minutes. Mix flour and remaining 1/4 cup brown sugar in medium bowl. Cut in butter until mixture resembles coarse crumbs. Stir in walnuts; set aside.
  • Prepare pie crust in 9-inch pie plate as directed on package. Fill with fruit mixture; top with crumb mixture.
  • Bake 45 to 50 minutes or until juices form bubbles that burst slowly. Cool.

  • For crust:
  • Position rack in center of oven; preheat to 400°F. Place rimmed baking sheet in bottom of oven to catch spills. Place sheet of parchment paper on work surface; lightly flour parchment. Place dough disk on parchment; sprinkle very lightly with flour. Cover with another sheet of parchment; roll to 9-inch round. Remove top parchment; sprinkle oats evenly over crust. Cover again with top parchment; roll to 12-inch round, rolling oats into crust. Remove top parchment. Using bottom parchment as aid, invert crust, oat side down, into 9-inchdiameter glass pie dish. Remove parchment. Press crust gently into pie dish. Turn dough overhang under, forming high-standing rim 1/2 inch above sides of dish. Crimp edges.
  • For filling:
  • Toss all ingredients in large bowl. Let stand while preparing topping.
  • For topping:
  • Blend first 6 ingredients in processor. Add butter; using on/off turns, blend until moist dough forms (mixture will resemble wet sand). Add oats; using on/off turns, mix briefly, leaving half of oats whole. Stir filling; transfer to crust, mounding in center. Sprinkle topping evenly over.
  • Bake pie until topping is golden, about 40 minutes. Reduce oven temperature to 350°F. Bake until apples are tender when pierced with small sharp knife, covering pie loosely with foil if topping and crust are browning too quickly, about 1 hour longer. Cool pie on rack until slightly warm, at least 1 hour. Serve warm or at room temperature.

3 all-purpose apples, peeled and thinly sliced

1 (32 ounce) jar ready to use mincemeat (Regular or Brandy & Rum)
1/4 cup firmly packed light brown sugar

Steps:

  • In a large bowl, toss apples with 3 Tablespoons flour and the melted margarine; arrange in a pastry shell.
  • (To save time, you can use a frozen pastry shell, thawed).
  • Top apples with mincemeat.

Steps:

  • Preheat oven to 350°. Butter a 9x5 inch loaf pan or line the pan with waxed or parchment paper.
  • Streusel Topping:.
  • Stir together brown sugar, cinnamon, and flour. Add butter and blend with a fork until the mixture resembles course crumbs. Stir in nuts. Set aside.
  • Bread:.
  • Whisk together flour, baking soda, and salt in a bowl and set aside.

2 tablespoons granulated sugar
3/4 teaspoon salt
1 stick (1/2 cup) plus 2 tablespoons cold unsalted butter
4 to 6 tablespoons ice water
For topping:
2 tablespoons unsalted butter, softened
2 tablespoons firmly packed brown sugar
2 tablespoons all-purpose flour
1/4 cup chopped walnuts
For filling:
3 pounds Golden Delicious or Jonagold apples (about 6 medium)
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
3/4 teaspoon cinnamon
2 tablespoons milk
1 tablespoon granulated sugar
Accompaniment: Sour Cream Ice Cream
2 cups half-and-half
1 cup sugar
1 vanilla bean, split lengthwise
8 large egg yolks
2 cups (1 pint) sour cream

Steps:

  • To make pastry dough:
  • In a large bowl with a pastry blender or in a food processor blend or pulse together flour, sugar, salt, and butter until mixture resembles coarse meal. Add 2 tablespoons ice water and toss with a fork or pulse until incorporated. Add enough remaining ice water, 1 tablespoon at a time, tossing or pulsing to incorporate, until mixture begins to form a dough. On a work surface smear dough in 3 or 4 forward motions with heel of hand to slightly develop gluten in flour and make dough easier to work with. Form dough into a ball and flatten to form a 1-inch-thick disk. Wrap dough in plastic wrap and chill 30 minutes.
  • To make topping:
  • In a small bowl with your fingertips blend butter, brown sugar, and flour until smooth and blend in nuts. Chill topping, covered.
  • To make filling:
  • Peel and core apples. Cut apples into 1/2-inch wedges and in a bowl toss with remaining filling ingredients to coat.
  • Preheat oven to 350°F.
  • On a lightly floured surface roll out dough into a 15-inch round (about 1/8 inch thick) and fold into quarters for ease of handling. Unfold dough in a well-seasoned 10-inch cast-iron skillet or 10-inch deep-dish (1 1/2-quart) pie plate, easing to fit and letting dough overhang rim of skillet or pie plate. Spoon filling into shell and fold pastry overhang over filling, leaving center uncovered. Bake pie in middle of oven 1 hour (pie will not be completely cooked) and remove from oven.
  • Crumble topping over center of pie, breaking up any large chunks. Brush crust with milk and sprinkle with sugar. Bake pie in middle of oven 30 minutes more, or until crust is golden and filling is bubbling. Cool pie on a rack.
  • Serve pie warm or at room temperature with ice cream.
  • Make Sour Cream Ice Cream:
  • In a heavy saucepan combine half-and-half, 3/4 cup sugar, and vanilla bean and bring just to a boil. Remove pan from heat. In a bowl whisk together egg yolks and remaining 1/4 cup sugar and add hot half-and-half mixture in a stream, whisking. Return custard to pan and cook over moderately low heat, stirring, until 170°F. on a candy thermometer.
  • Remove pan form heat. Scrape seeds form vanilla bean into custard and discard pod. Stir sour cream into custard until combined well and strain through a fine sieve into a bowl. Chill custard until cold and feeze in an ice-cream maker. Makes about 1 quart.
