6 small boneless skinless chicken breasts (1-1/2 lb.)
1/2 tsp. ground black pepper
3/4 cup KRAFT Classic Ranch Dressing
1 Tbsp. hot pepper sauce
1-1/2 tsp. lime juice
8 cups loosely packed torn romaine lettuce
1-1/2 cups chopped red peppers
1 can (15 oz.) black beans, rinsed
1-1/2 cups peeled jicama strips
3/4 cup frozen corn, thawed
1 cup KRAFT Shredded Colby & Monterey Jack Cheeses

Steps:

  • Heat grill to medium heat.
  • Sprinkle both sides of chicken with black pepper; grill 6 to 8 min. on each side or until done (165ºF).
  • Meanwhile, mix dressing, hot sauce and lime juice until blended; refrigerate until ready to use.
  • Place lettuce on serving plate. Top with red peppers, beans, jicama and corn.
  • Slice chicken; add to salad. Sprinkle with cheese. Drizzle with dressing mixture just before serving.

2/3 cup buttermilk
3 tablespoons hot sauce, such as Frank's
2 tablespoons honey
1 teaspoon ground cumin
1 teaspoon granulated garlic
Juice of 1 lime
Kosher salt and freshly ground pepper
8 boneless, skinless chicken thighs (1 1/2 pounds)
1 tablespoon canola oil
1/4 pound pepper jack cheese, thinly sliced
4 soft club rolls
8 leaves Bibb lettuce
Cajun Ranch Dressing, recipe follows
1 cup good mayonnaise
1/4 cup buttermilk, shaken
3 tablespoons hot sauce, such as Frank's
1 tablespoon freshly squeezed lemon juice
1 tablespoon blackening seasoning
1 teaspoon Dijon mustard
1 teaspoon kosher salt
1/4 teaspoon cayenne powder
2 scallions, thinly sliced
1 celery stalk, finely diced
1 red bell pepper, finely diced
1 clove garlic, minced

Steps:

  • In a small bowl, whisk the buttermilk, hot sauce, honey, cumin, garlic, lime juice and sprinkle with salt and pepper. Place the chicken into a re-sealable bag and pour the buttermilk marinade over. Marinate in the fridge, at least 2 hours and up to overnight.
  • Heat a grill or grill pan to medium-high heat. Remove the chicken from the marinade and sprinkle with salt and pepper. Grill the chicken until cooked through and 165 degrees F, about 5 minutes. Remove from the heat.
  • Place the cheese on the bottom of each roll, then top with 2 chicken thighs, lettuce and a dollop of Cajun Ranch Dressing.
  • In a medium bowl, combine the mayonnaise, buttermilk, hot sauce, lemon juice, blackening seasoning, mustard, salt and cayenne. Fold in the scallions, celery, red peppers and garlic with the mayonnaise mixture.

1 tsp rapeseed oil
½ tsp dried oregano
½ tsp dried thyme
1 tsp smoked or regular paprika
¼ tsp cayenne pepper
1 garlic clove , finely chopped
4 skinless, boneless chicken breasts (each weighing 140g)
200g black-eyed bean from a can, drained (or butter or cannellini beans)
2 tomatoes , deseeded and diced
85g sweetcorn from a can, drained
2 spring onions , trimmed and finely chopped
25g semi-dried tomato in oil from a jar, roughly chopped
zest and juice 1 lime
small handful coriander , finely chopped
1 avocado , stoned and peeled
¼ red chilli , deseeded and finely chopped
½ tbsp olive oil
juice 1 lime
small handful coriander , finely chopped

Steps:

  • Mix together the oil, herbs, spices and garlic in a large sealable bag. Put the chicken breasts in the bag and mix thoroughly to cover. Bash the chicken with a rolling pin to flatten it a little, then set aside to marinate for at least 15 mins.
  • In a large bowl, mix all the ingredients for the bean salad. Stir well and set aside.
  • For the guacamole, scoop the flesh from the avocado and put it in a medium bowl, chopping it roughly with the side of the spoon. Add the rest of the ingredients and mix well. If you prefer your guacamole to be smoother, mash the avocado well with the olive oil and lime juice until it's at your preferred consistency before stirring in the other ingredients.
  • Heat the grill. Line a grill pan with foil, place the chicken breasts on it and grill for 5 mins, checking occasionally. Once golden brown, turn and grill for a further 5-7 mins. Check the middle of the breasts after 5 mins and, if cooked through, remove from the heat.
  • Set aside 2 chicken breasts and 2 tbsp guacamole for Open rye sandwich (see 'goes well with', right). Place 1 warm chicken breast on each plate, with some bean salad and a dollop of guacamole on the side.

FOR SEASONING:
2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp ground black pepper
1/2 tsp paprika
1/2 tsp cayenne pepper
FOR SALAD DRESSING:
1 3/4 c buttermilk
1/2 c mayonnaise
2 Tbsp chopped green onion
2 Tbsp chopped fresh parsely
1 Tbsp apple cider vinegar
1 garlic clove, minced
1/2 tsp grated lemon peel
1 1/2 lb skinless boneless chicken breast halves
5 oz mixed baby greens
1/2 c pecans, toasted
1/4 c raisins

Steps:

  • 1. Make seasoning: Mix all ingredients in small bowl to blend.
  • 2. Make salad dressing: Whisk 3/4cup buttermilk, mayonnaise, chopped green onion, chopped fresh parsley, apple cider vinegar, garlic, lemon peel, and 1 1/2 teaspoons seasoning mixture in medium bowl until well blended. Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Store remaining seasoning at room temperature. Cover and refrigerate dressing.)
  • 3. Rub remaining seasoning mixture onto chicken. Place chicken in medium bowl. Pour remaining 1 cup buttermilk over chicken, turning to coat. Refrigerate at least 30 minutes and up to 3 hours, turning occasionally.
  • 4. Prepare barbecue (medium-high heat). Remove chicken breasts from buttermilk, shaking off excess. Grill chicken until just cooked through, about 5 minutes per side. Transfer chicken to cutting board and let rest 5 minutes.
  • 5. Combine mixed greens, pecans, and raisins in large bowl. Toss with enough dressing to coat. Season salad with salt and pepper.
  • 6. Divide salad among 4 plates. Cut chicken on sharp diagonal into 1/2-inch-thick slices. Arrange atop salads and serve.

  • Prepare the creamy Cajun salad dressing by processing all of the dressing ingredients together in a blender or food processor until completely combined. I would recommend starting with 1 teaspoon of Cajun seasoning and increasing the amount until you reach your desired level of heat. Refrigerate for 20 minutes before serving.
  • Heat grill to medium-high heat. Place the chicken breasts on a baking sheet or large dish and pat dry. Drizzle lightly with olive oil and rub the chicken to coat evenly. Sprinkle 1/2 teaspoon of the Cajun seasoning over the top of each chicken breast, turn the chicken over and sprinkle each chicken breast with another 1/2 teaspoon of Cajun seasoning so the chicken is evenly coated on both sides.
