This dessert wraps all the flavors of a traditional strawberry shortcake into one bite-size treat. Fresh strawberries, shortbread cookie crumbles and whipped cream come together in these delectable morsels.

- Combine the sugar and 1/2 cup water in a small saucepan and bring to a rolling boil over medium heat. Add the sliced strawberries and continue to cook until the syrup thickens slightly and forms small foamy bubbles, about 5 minutes. Let cool to room temperature, about 30 minutes.
- Whisk the heavy cream in a medium mixing bowl until it forms soft peaks. Add 1 tablespoon of the strawberry syrup and whisk to firm peaks. Remove the sliced strawberries from the syrup and discard or save for another use.
- Process the shortbread cookies in a blender or food processor or crush by hand to make fine crumbs. Transfer the crumbs to a plate.
- Holding one of the strawberries by the stem, dip it into the syrup, let the excess drain off and then dip it into the cookie crumbs. You may need to pat on the crumbs a bit to make sure they adhere to the strawberry. Place the strawberry on a plate. Repeat with the remaining strawberries.
- Spoon the whipped cream into a piping bag fitted with a small star tip. Pipe a small rosette of whipped cream in the middle of each strawberry. Serve within an hour.

- For the shortcakes: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Whisk the heavy cream, sour cream and vanilla in a small bowl; refrigerate until ready to use. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. Add the butter; pulse until the mixture looks like fine meal. Pour in the chilled heavy cream mixture and pulse until just combined.
- Lightly flour a work surface and dump the dough onto it. Pat out the dough 1/2-inch thick. Cut out as many biscuits as you can with a 2 1/2-inch biscuit cutter. Then pat the remaining dough out to 1/2-inch thick again. Cut more biscuits; you should get 12.
- Put 6 of the biscuits on the prepared baking sheet. Brush the tops generously with cream, then top each cream-brushed biscuit with one of the remaining biscuit rounds. (This makes it easier to split once they are baked.) Brush the top of each biscuit stack with more heavy cream and sprinkle 1 teaspoon granulated sugar on each biscuit.
- Bake the biscuits until golden and puffed, about 30 minutes. Let cool for 5 minutes, then transfer to a wire rack and cool completely.
- Meanwhile, for the topping: Toss the strawberries and 2 tablespoons of the brown sugar in a medium bowl.
- Just before serving, beat the heavy cream, sour cream, the remaining 2 tablespoons brown sugar and vanilla in a large bowl with a mixer on medium-high speed until soft peaks form, about 2 minutes.
- Split the shortcakes in half. Spoon half the cream on the bottom of the biscuits, top evenly with the strawberries and top with the remaining cream. Put each biscuit top on and serve.

- 1. Heat oven to 350^. Butter bottom only of 9x13-inch pan. Pour strawberry pie filling in bottom of pan and spread out evenly.
- 2. Sprinkle whole box of cake mix dry over berry filling. Drizzle melted butter over cake mix. Bake in oven for 30-35 minutes.
- 3. Bake in oven for 30-35 minutes.
- 4. While cake is baking: In a mixer bowl combine instant pudding and coconut milk, beat until blended, add softened cream cheese (PLEASE MAKE SURE CREAM CHEESE IS VERY SOFT) and beat until very smooth. Refrigerate until cake is done and cake is completely cooled. Spread on completely cooled cake.
- 5. Add SOFTENED cream cheese to whipped cream and mix together until soft. Add over pudding and refrigerate for about an hour or 2.. Cut and enjoy!! NOTE I myself left it over night!

- Heat oven to 350ºF. Grease sides of two 8-in. round cake pans with butter, than dust sides with cocoa powder (tap out excess). Line bottoms with parchment.
- Make cake: In large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In large measuring cup or bowl, mix together oil, sour cream, coffee, eggs, and vanilla. Add wet ingredients to flour mixture and whisk to combine.
- Divide mixture evenly between prepared pans and bake until wooden pick inserted into center of cakes comes out clean, 50 to 55 minutes. Cool cakes in pans 5 minutes, then transfer to wire rack to cool completely.
- Make buttercream: Roughly chop strawberries. Add to blender or food processor and puree until smooth. Set aside. using electric mixer, beat butter to soften. Sift in half of confectioners' sugar and slowly mix to combine. Sift in remaining sugar, add strawberry puree, and mix to combine. Increase speed and beat until light and fluffy, about 30 seconds.
- Trim cakes to level if needed. Slice each cake in half horizontally to make 4 layers. Sandwich all 4 layers together, dividing roughly half of buttercream and spreading between each pair. Next, spread scant layer of buttercream over top and sides of cake. Refrigerate 20 minutes. Transfer cake to stand or board.
- Frost cake with remaining buttercream. Refrigerate 20 minutes. Meanwhile make glaze: Melt chocolate and butter in heatproof bowl set over pan of barely simmering water, stirring until melted and smooth. Cool 5 minutes.
- Pour glaze over chilled iced cake, encouraging it to drip down sides. Allow to set 15 minutes before decorating with whole strawberries.

MINI STRAWBERRY PRINCESS CAKES
These are mini versions of the classic Swedish Princess Cake. I grew up eating these at IKEA and have always been in love with the colorful chewy marzipan shells!

- For the princess cakes: Place an oven rack in the middle position. Preheat the oven to 350 degrees F. Grease a quarter-sheet pan and line with parchment paper. Set aside.
- In a medium bowl, whisk together the flours, salt, baking powder and baking soda.
- In a separate large bowl, use an electric or stand mixer to beat the butter with the granulated sugar until light and fluffy, 3 to 5 minutes. Add the egg, vanilla and almond extract and beat well. Add a third of the dry ingredients to the butter mixture and mix until just combined. Add a third of the buttermilk. Repeat with another third of each, and then the final third, mixing until just combined.
- Spread the batter out evenly in the quarter-sheet pan and bake until a toothpick inserted in the center comes out clean. Begin checking for doneness at 18 minutes.
- Let the cake cool fully in the pan (the cake can be made in advance and frozen).
- For the whipped cream: In a large bowl or the bowl of a stand mixer, combine the heavy cream, powdered sugar and salt. Beat to stiff peaks. Spoon the whipped cream into a large pastry bag fitted with a large round tip. Refrigerate until ready to use.
- Use a 2-inch biscuit cutter to cut the cake into 15 circles. Spread the top of each cake circle with a thin layer of jam. Top each with a small mound of whipped cream.
- Freeze the cakes for 1 hour while you prepare the marzipan.
- For the marzipan: Separate the marzipan into a 12-ounce ball and two 3-ounce balls.
- Knead purple food coloring into the 12-ounce ball until the desired color is reached. Wrap in plastic to keep from drying out.
- Knead dusty rose food coloring into a 3-ounce ball until the desired color is reached. Wrap in plastic. Knead the cypress or moss food coloring into the final 3-ounce ball until the desired color is reached. Again, wrap in plastic until ready to use.
- In a small mixing bowl, mix together the strawberry jam and 1 tablespoon
- water until thoroughly combined. Set aside.
- Roll the purple marzipan out to 1/8-inch thick, dusting with powdered sugar as necessary to prevent sticking. Cut out fifteen 4-inch circles, stacking them with a piece of parchment paper between each one to keep from sticking. Wrap in plastic while you make the roses and leaves.
- To make the pink roses: Pinch off a small piece of dusty rose marzipan and make little flat snakes. Then coil them to form a rose. Repeat to make 15 roses.
- To make the leaves: Pinch off a small piece of green marzipan and form into an oval leaf. Repeat to make 30 leaves. Adhere two leaves to each rose using the thinned jam as glue.
- To assemble the cakes: Remove the cakes from the freezer. Using a pastry brush, lightly brush each purple circle with the thinned jam. Place the circle, jam-side-down, over a cake to cover and gently press all around until the cake is completely covered. Set aside and repeat with the remaining circles until all the cakes are covered. Top each cake with a rose.
- Serve immediately or refrigerate for up to a day or two until serving. Enjoy!

- Preheat the oven to 350 degrees F.
- Butter the bottom of two 8-inch cake pans. Then line them with parchment paper and butter and flour the lined pans.
- Cream the butter and sugar on high speed in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. On medium speed, add the eggs, 1 at a time, then the sour cream, zests, and vanilla, scraping down the bowl as needed. Mix well. Sift together the flour, cornstarch, salt, and baking soda. On low speed, slowly add the flour mixture to the butter mixture and combine just until smooth.
- Pour the batter evenly into the pans, smooth the tops, and bake in the center of the oven for 40 to 45 minutes, until a toothpick comes out clean. Let cool in the pans for 30 minutes, then remove to wire racks and let cool to room temperature. If using 1 cake, wrap the second well and freeze.
- To make the filling for one cake, whip the cream, sugar, and vanilla in a mixer fitted with the whisk attachment until firm. Slice one of the cakes in half with a long, sharp knife. Place the bottom slice of the cake on a serving platter, spread with 1/2 the whipped cream and scatter with sliced strawberries. Cover with the top slice of the cake and spread with the remaining cream. Decorate with strawberries.
