BEEF & BOK CHOY STIR FRY
Steps:
- Combine beef, cornstarch, and soy sauce in a bowl. Set aside to marinate 20 minutes while you prepare the other ingredients.
- Combine all sauce ingredients in a small bowl.
- Heat 1 tablespoon oil to medium-high heat in a large skillet. Add half of the beef and cook just until browned, do not overcook. Remove from the skillet and set aside. Repeat with remaining beef, adding more oil if needed.
- Reduce heat to medium and add 1 tablespoon oil to the same pan. Add ginger, garlic, and the whites of the onions. Cook just until fragrant (about 1 minute). Add the whites of the bok choy and cook for 2-3 minutes.
- Stir in the sauce, bok choy greens, and beef. Cook over medium until hot and bubbly.
- Remove from heat and garnish with green onion tops and serve over rice.

BEEF, MANDARIN AND BOK CHOY STIR-FRY
Marinated beef strips stir-fried with mandarin juice and mandarin segments, bok choy and snow peas. Looks and tastes great. And being low in fat and cholesterol, it's very healthy! The preparation time does not include the time for marinading the meat: several hours or preferably overnight.

Steps:
- Slice the steak into thin strips and place in a bowl. Add the crushed garlic and season to taste with salt, freshly ground black pepper and grated fresh ginger. Cover the meat with soy sauce. Add the dry cooking sherry. Stir together, cover and place in the fridge, for several hours or preferably overnight. The longer the meat marinates the better.
- Heat a little of the oil in a non-stick wok or large non-stick sauté pan.
- Fry the onion, until it begins to soften, remove and set aside.
- Add the rest of the oil to the wok, and on a very high heat, keeping the beef strips moving constantly, fry the meat, so that it is browned on all sides and the juices are sealed inches.
- Slightly lower the heat and return the onion to the pan.
- Add the mandarin juice.
- Cook down for a few minutes until the liquid begins to reduces.
- Stirring constantly, slowly add the chicken stock, a little at a time, and continue to cook down to reduce the liquid.
- Once the liquid has reduced to almost nothing (no more than say a tablespoon), add the bok choy and the mandarin segments.
- Turn the heat down and, still stirring and tossing gently, cook until the vegetables are cooked as you like them. Remember: less is best!
- Still tossing gently, add the snow peas to the wok for the last 30 seconds.
- Remove from the heat.
- Serve in four serving bowls over steamed rice.

- Trim fat from beef; cut beef with grain into 2-inch strips.
- Cut strips across grain into 1/8-inch slices.
- Toss beef, 1 tablespoon vegetable oil, 1 teaspoon cornstarch, 1 teaspoon salt, the sugar, soy sauce and white pepper in glass or plastic bowl.
- Cover and refrigerate 30 minutes.
- Separate bok choy leaves from stems.
- Cut leaves into 2-inch pieces; cut stems diagonally into 1/4-inch slices (do not combine leaves and stems).
- Cut green onions into 2-inch pieces.
- Mix 2 tablespoons cornstarch and the water.
- Heat wok until 1 or 2 drops of water bubble and skitter when sprinkled in wok.
- Add 3 tablespoons vegetable oil; rotate wok to coat side.
- Add beef, gingerroot and garlic; stir-fry until beef is brown, about 3 minutes.
- Remove beef from wok.
- Add 3 tablespoons vegetable oil to wok; rotate to coat side.
- Add bok choy stems; stir-fry 1 minute.
- Stir in bok choy leaves and 1/8 teaspoon salt.
- Stir in chicken broth; heat to boiling.
- Stir in cornstarch mixture; cook and stir until thickened, about 15 seconds.
- Stir in beef and oyster sauce; heat to boiling.
- Garnish with green onions.

SIZZLING BEEF WITH SPRING ONIONS & BLACK BEAN SAUCE

- TO PREPARE YOUR STIR-FRY:.
- Bring a pan of salted water to the boil, add the rice and cook according to the packet instructions.
- Drain the rice in a sieve, run it under a cold tap to cool, then allow to dry out in the fridge.
- Trim any excess fat from your steak and slice the meat into finger sized strips.
- Peel and finely slice the ginger and garlic.
- Finely slice the chili.
- Cut the ends off your spring onions and finely slice.
- Pick the coriander leaves and put to one side, and finely chop the coriander stalks.
- Get yourself a big bowl and put in the ginger, garlic, chilli, spring onions, coriander stalks and steak strips.
- Add the sesame oil and mix everything together.
- TO COOK YOUR STIR-FRY:.
- Preheat a wok or large frying pan on a high heat and once it's very, very hot add a good splash of groundnut oil and swirl it around.
- Add all your chopped ingredients from the bowl.
- Give the pan a really good shake to mix everything around quickly.
- Stir-fry for 2 minutes, taking care to keep everything moving so it doesn't burn.
- Add the blackbean sauce, and stir in 1 tablespoon of soy sauce and the juice of half a lime.
- Keep tossing.
- Taste and season with black pepper and a little more soy sauce, if required.
- Remove the pan from the heat, transfer everything to a bowl and cover with tin foil.
- Give the pan a quick wipe with a ball of kitchen paper and put back on the heat.
- Add some groundnut oil and swirwl it around.
- Crack in your egg and add a tb soy sauce - the egg will cook very quickly so keep sstirring.
- Once it's scrambled, stir in your chilled rice, scraping the sides and the bottom of the pan as you go.
- Keep mixing for a few minutes until the rice is steaming hot, then taste and season with a little soy sauce if required.
- TO SERVE YOUR STIR-FRY:.
- Divide the rice between two bowls or plates.
- Spoon over the meat and black bean sauce and sprinkle over with coriander leaves.
- Serve with wedges of lime.2.
STIR-FRIED BEEF WITH MUSHROOMS AND ASPARAGUS
This recipe was my first "Mushroom Monday Challenge" dinner. I love stir-fries, and this one comes together in a snap. You can always use any vegetables that you may have on hand if you are short what's listed in the ingredients. Red or green peppers could be used if you don't have asparagus, even a little sliced carrot would be delicious.

- Cook the rice, as per package directions, while you prepare the stir-fry.
- Add 1 tbsp to a large deep frying pan. Heat oil over high heat, about 30 seconds. Add beef to pan and cook until medium, or 3-5 minutes. Remove beef from pan, and set it aside.
- Lower the heat to medium, and add the remaining 1 tbsp oil. Add onions, garlic, and ginger (if using). Stir and cook for 30 seconds, then add asparagus, mushrooms and bok choy, cook 3-4 minutes or until vegetables have softened.
- Return beef to pan. Add soy sauce, sugar (if using), and pepper, toss to coat everything in sauce. Add 1/4 water, and raise heat to high, cook until water has slightly reduced and sauce starts to thicken.
- Serve stir-fry over hot white rice.
