1 (15-ounce) can pear halves, drained and sliced, reserve 2 tablespoons juice
2 tablespoons olive oil and vinegar dressing
Salt and freshly ground black pepper
2 cups baby arugala
4 tablespoons Gorgonzola, crumbled
4 tablespoons glazed pecans

Steps:

  • In a large bowl, whisk together 2 tablespoons reserved pear juice and olive oil and vinegar dressing. Season, to taste, with salt and pepper. Add arugula and toss to coat.
  • Divide dressed arugula among 4 chilled salad plates. Top each salad with 4 pear slices, Gorgonzola, and pecans. Serve immediately.

¼ cup extra-virgin olive oil
2 tablespoons honey or maple syrup
2 tablespoons white wine vinegar or rice vinegar
1 tablespoon fresh lemon juice
½ teaspoon fine sea salt
5 ounces prewashed arugula greens
⅓ cup thinly sliced red onion
1 green or red pear (cored and sliced into 1/4" half-moons)
⅓ cup toasted walnuts*
2 ounces soft goat cheese (crumbled)
2 ounces blue cheese (crumbled)
½ cup mixed microsprouts (optional)
Freshly ground black pepper to taste

Steps:

  • Combine all ingredients in a blender or mini food processor until very smooth.
  • Put the greens in a large bowl or on a platter. Top with the remaining ingredients.
  • Drizzle with 2 or 3 tablespoons of the dressing and toss gently to coat. Serve the salad with additional dressing to taste on the side.

1/2 teaspoon freshly ground black pepper
Four 3/4-inch-thick slices country-style sourdough bread
1/4 cup extra-virgin olive oil
1/4 cup extra-virgin olive oil
2 tablespoons dry white wine, such as pinot grigio
2 tablespoons honey
Two 8-ounce heads radicchio, halved and chopped into 1-inch pieces
3 cups baby arugula
2 ripe but firm Asian or Bosc pears, cored, halved and cut lengthwise into 1/4-inch-thick slices
3/4 cup chopped walnuts, toasted* see Cook's Note
One 2-ounce chunk Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • For the croutons: Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the bread on each side with olive oil. Grill until grill-marked and golden, 1 to 2 minutes each side. Cool slightly and cut into 3/4-inch cubes. For the dressing: In a small bowl, whisk together the oil, wine, honey, mustard, salt and pepper until smooth.
  • For the salad: Place the raddichio, arugula, pear slices, walnuts and croutons in a large bowl. Add the dressing and toss until coated. Using a vegetable peeler, shave the Parmesan on top and serve.

Steps:

  • Add the arugula leaves to a medium bowl. Core and slice the pear into 1/8-inch thick slices and add to arugula.

2/3 pound (about 4 cups) baby arugula leaves
6 ounces cooked ham (rind removed and discarded, meat thinly sliced and cut into strips)
1 large ripe Bartlett pear (peeled, cored, and thinly sliced)
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
1 1/2 teaspoons honey
1/2 teaspoon Dijon mustard
3 tablespoons toasted walnut oil ((or, in a pinch, olive oil))

Steps:

  • Sprinkle the walnuts around a dry skillet set over medium-low heat. Leave them alone a couple minutes, then stir well and continue cooking, stirring occasionally, just until splotchy brown and fragrant. Pour them out onto a cutting board, cool for a few minutes, then chop into little bits.
  • Mix the arugula, ham, and pear pieces in a large bowl.
  • Whisk the lemon juice, vinegar, honey, and mustard in a small bowl, then whisk in the oil in a slow, steady stream until you've got a creamy, somewhat thick dressing.

2 teaspoons lemon juice
3 tablespoons hazelnut oil or 3 tablespoons walnut oil

Steps:

  • Peel and core the pears and slice thickly. Moisten with lemon juice to keep the flesh white.
  • Combine the nut oil with the pears. Add the arugula leaves and toss.
  • Turn the salad out onto four small plates with shaving of Parmesan cheese. Season with freshly ground pepper and serve with bread.
  • You can sub the parmesan cheese for bleu cheese and add walnuts, if desired.

This is a unique and interesting combination of pears and avocados that I ran across while looking for salad recipes in my cookbook collection. I made it and was surprised by the resulting tangy sweet salad that blended flavors very well.

4 small bartlett pears
2 teaspoons lemon juice
2 ripe avocados
8 ounces watercress
2 ounces arugula
2 teaspoons pecans or 2 teaspoons almonds
4 ounces Roquefort cheese
3 teaspoons balsamic vinegar
2 tablespoons extra virgin olive oil
2 tablespoons walnut oil or 2 tablespoons almond oil
1 teaspoon Dijon mustard or 1 teaspoon brown mustard
1/2 teaspoon light brown sugar
1 tablespoon fresh parsley, chopped finely
salt and pepper

Steps:

  • Halve and core the pears.
  • Slice them thinly and brush with lemon juice to stop discoloration.
  • Cut the avocados in half, remove the pits and peel them.
  • Carefully cut each half into five slices.
  • Also brush with lemon juice to prevent discoloration.
  • Place watercress and arugala on plates to be served and arrange pears and avocados on top.
  • Sprinkle chopped nuts on top.
  • For the dressing combine all dressing ingredients in a jar and shake.
  • Spoon dressing on top and crumble the cheese on top of it all.
  • Serve immediately.

½ cup chopped hazelnuts, divided

Steps:

  • Combine vinegar and honey in a glass jar; whisk to combine. Add lemon juice, oil, thyme, sea salt, and pepper; cover and shake until emulsified.
  • Reserve 1/2 of a pear. Slice remaining pears thinly with a sharp knife or mandolin.
  • Place arugula in a mixing bowl. Add sliced pears. Pour dressing over top, add 1/2 of the hazelnuts, and season with more salt and pepper. Toss gently until well coated. Taste and adjust seasonings according to taste.
  • Slice reserved pear half thinly and arrange it in a fan pattern on the salad platter you are using. Arrange the salad on top. Garnish with remaining hazelnuts and thyme leaves. Serve immediately.

4 cups baby arugula
4 slices prosciutto, chopped, or more to taste
½ cup crumbled blue cheese (such as Point Reyes®)

Steps:

  • Coarsely chop chives and put in a food processor. Add olive oil and purée for 1 minute. Transfer to a squeeze bottle dispenser and set aside.
