Puffed Oven Pancake or Dutch Baby is a tender oven baked pancake with strawberry topping. One pancake serves the whole family and it is perfect for breakfast, brunch or dinner.

Puffed Oven Pancake
2 Tbsp unsalted butter
4-5 sliced strawberries mixed with 1 tbsp white sugar (I like to muddle them a bit to get them juicy.)
1/2 tsp vanilla
3/4 cup milk
1/2 cup unbleached, all-purpose flour
4 large eggs
Pinch of salt
Yogurt Sauce:
1/4 cup plain yogurt or Greek yogurt
1/4 cup sour cream
1 1/2 Tbsp brown sugar

Steps:

  • Preheat oven to 400 degrees.
  • Place butter in an oven proof skillet and place in oven until melted.
  • Blend milk, flour, eggs, vanilla and salt in blender until well combined. (You can also mix by hand with a whisk; make sure there are no lumps.)
  • Remove skillet from oven and pour batter over melted butter. Do not stir.
  • Bake for 20 minutes, until the pancake is puffed and golden. It will have a cheesecake like texture.
  • While baking make yogurt sauce by stirring together the yogurt, sour cream and brown sugar.
  • Remove from oven and serve hot with yogurt sauce and turkey bacon.

1 cup packed light brown sugar
Small pinch of salt
2 cups all-purpose flour
3 tablespoons granulated sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups well-shaken buttermilk
2 large eggs
4 tablespoons unsalted butter, melted and cooled, plus more for greasing
Vegetable oil, for greasing
1 cup sliced strawberries

Steps:

  • Make the syrup: Add 3/4 cup water, the brown sugar and salt to a medium saucepan over medium heat. Bring the mixture to a simmer and stir until the sugar dissolves. Let simmer for 25 to 30 minutes, stirring occasionally. Let cool before serving.
  • Make the pancakes: Preheat the oven to 200 degrees F. Whisk the flour, granulated sugar, salt, baking powder and baking soda in a large bowl. Add the buttermilk, eggs and cooled melted butter to a second bowl and whisk to combine.
  • Make a well in the center of the dry ingredients and add the wet mixture. Stir with a rubber spatula until just combined. Do not over mix or you'll end up with tough and chewy pancakes!
  • Heat a large electric griddle or nonstick frying pan over medium heat. Add a few drops of vegetable oil and a pat of butter. Once the butter melts, wipe the skillet with a paper towel. Ladle about 1/4 cup batter onto the griddle for each pancake. Place a small handful of sliced strawberries on top of the pancakes. Cook until the bubbles begin to burst on the surface, about 3 minutes, then flip and cook until the second side is a nice golden brown, about 2 more minutes. Repeat with the remaining batter; put the finished pancakes on a sheet tray and keep warm in the oven as you finish.
  • Arrange the pancakes on individual plates and serve with the syrup.

Steps:

  • Preheat oven to 450°F. Stir strawberries and 2 tablespoons sugar in medium bowl. Let stand at room temperature while preparing pancake.

1/2 cup milk
2 eggs
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt

1/4 cup butter, melted, plus 3 tablespoons melted butter, for brushing the pan/griddle
1 pint strawberries, quartered
3 tablespoons sugar
1/2 cup chilled sparkling wine or cider

Steps:

  • For the pancake batter: Preheat the oven to 200 degrees F; place a dinner plate in the oven.
  • Whisk together the water, milk, eggs, flour, baking powder, salt, sugar and 1/4 cup melted butter in a large bowl until completely smooth. Do not overmix.
  • Brush the surface of a nonstick pan set over medium heat with some of the remaining melted butter. Spoon 1/3 cup of the batter into the pan and tilt the pan so the pancake is thin and about 6 inches in diameter. Flip once it looks crispy on the edges and air holes appear in the center. Steps:

  • For the pancake batter: Place the egg whites in a clean bowl and whip them until frothy; add the sugar and whip until soft peaks form then set aside.
  • In a medium mixing bowl, whisk together the egg yolks and milk/cream, then add the salt, vanilla, melted butter and flour, whisk until smooth.
  • Heat a 10-inch pan with heatproof handle over medium-low heat (an omelet pan or cast iron skillet works well).
  • Spray the pan with non-stick vegetable oil spray, or rub it with a bit of vegetable oil.
