STRAWBERRY SOUR CREAM STREUSEL CAKE

Strawberry Sour Cream Streusel Cake image

This strawberry streusel cake is the perfect end to a summer meal. But here's the interesting thing: Eat it slightly warm and it's dessert; let it get cold, and it makes a great coffee cake for breakfast the next day. The cake is slightly tricky to assemble, and at some point it may look like a mess. But everything comes together in the pan as it bakes, resulting in a tender, fragrant cake. This isn't a recipe to embark on at the end of a long workday. Save it for the weekend.

Categories     dinner, dessert

Time 1h

Yield One 9-inch cake

Number Of Ingredients 14

8 ounces strawberries
3 tablespoons strawberry jam
2 teaspoons cornstarch
2 teaspoons vanilla extract
Vegetable oil, for pan
3/4 cup sugar
2 cups plus 2 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon baking soda
12 tablespoons (1 1/2 sticks) cold butter, cut into 1/2-inch cubes
1 cup sour cream
1 large egg
1 tablespoon vanilla extract
2 teaspoons Demerara or turbinado sugar

Steps:

  • Prepare strawberry purée: In a blender, combine strawberries and jam. Make a paste of cornstarch and vanilla, and add to blender. Purée until smooth.Set aside.
  • Prepare cake: Heat oven to 375 degrees. Oil a 9-inch springform pan and set aside. In a large bowl, combine sugar, flour, baking powder and baking soda. Sprinkle in butter cubes and rub them in by hand until mixture resembles large coarse crumbs. Remove 1/2 cup and set it aside. To large bowl, add sour cream, egg and vanilla. Mix well.
  • Using a little over half the cake batter, drop dollops of batter into pan. Pat batter across bottom of pan and about 1 inch up sides; mixture will be very sticky and somewhat uneven. Add strawberry purée, making an even layer across bottom of pan and leaving a rim of dough above it. Cover with remaining cake mixture.
  • Prepare crumble topping: In a medium bowl, combine reserved 1/2 cup dough and Demerara sugar. Stir with a fork to mix. Sprinkle evenly over cake.
  • Bake cake until lightly golden, about 45 minutes. Cool completely before serving.

STRAWBERRY-SOUR CREAM CREPES

Strawberry-Sour Cream Crepes image

This is a great recipe that came from a paper back cookbook called "Wonderful Ways to Prepare Crepes & Pancakes" by Jo Ann Shirley. I just wanted to post it here for safekeeping and to share with friends across the world! I like to use a non-fat plain yogurt instead of the sour cream for a slightly more healthy version.

Once strawberry-picking time arrives here each summer, my husband and I look forward to this bread. Since only fresh strawberries will do, I have been thinking of trying a different kind of berry so we can enjoy it more often. Baking is great fun for me. STRAWBERRY SOUR CREAM SHORTCAKE

Strawberry Sour Cream Shortcake image

Provided by R. W. Apple Jr.

Categories     dessert

Time 1h

Yield 6 servings

Number Of Ingredients 11

2 cups sifted all-purpose flour
3 teaspoons baking powder
1/4 cup sugar, plus additional for sweetening berries and sour cream
3/4 teaspoon salt
3 ounce package cream cheese
2 tablespoons chilled butter
1 large egg
About 1/2 cup milk
1 tablespoon butter, melted
1 quart fresh strawberries, hulled and thinly sliced
1 cup sour cream

Steps:

  • Preheat oven to 450 degrees. Into a large mixing bowl, sift together the flour, baking powder, 1/4 cup of the sugar, and the salt. Add the cream cheese and 2 tablespoons chilled butter. Using a pastry blender or two knives, cut the cream cheese and butter into the mixture until it resembles coarse cornmeal.
  • Break the egg into a measuring cup, and beat lightly with a fork. Add enough milk to make 3/4 cup. Pour the egg mixture into the flour mixture, and stir. Knead the dough inside the bowl just until it is blended and cohesive, about 20 seconds.
  • Shape half of the dough into a flattened ball, and place in a greased 8 round cake pan. Pat the dough flat to the edges of the pan. Brush the top of the dough with the melted butter. Shape the remaining dough into a flattened ball, and place in the pan on the buttered dough, patting flat to the edges. Bake until golden brown, about 17 to 20 minutes. Remove from heat and allow to cool.
  • Place the sliced strawberries in a mixing bowl, add sugar to taste, and mix well. Place the sour cream in a small bowl, and add sugar to taste, mixing to blend well. To serve, remove the cake from the pan, and use a knife to help pry the layers apart; they should split naturally where the dough had been buttered. Place the bottom layer on a serving plate, and top with sweetened strawberries. Place the second layer over the strawberries, and top with sweetened sour cream. Serve immediately.

STRAWBERRY SOUR CREAM SCONES

Strawberry Sour Cream Scones image

Soft, almost cake-like strawberry scones with a touch of lemon cream cheese frosting. My husband says these are the best scones he has ever eaten! I found a recipe online, but modified it to the ingedients I had on hand and thought might taste the best.

Provided by 1029111

Categories     Scones

Time 50m

Yield 8 scones, 8 serving(s)

Number Of Ingredients 12

2 cups flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup cold butter
1 cup chopped strawberry
3/4 cup sour cream (or yogurt)
3 tablespoons butter
1 tablespoon cream cheese
2 tablespoons lemon juice
1 cup confectioners' sugar

Steps:

  • Preheat oven to 400°F.
  • Combine and mix together flour, baking powder, baking soda, salt and sugar in bowl.
  • Use a pastry blender or fork to cut cold butter into flour mixture until well combined and it looks like coarse crumbs.
  • Gently mix in sour cream (or yogurt, flavored or plain) and chopped strawberries until combined.
  • Knead slightly on work surface if needed.
  • Divide dough in half and shape into two balls. Flatten ball and cut into four sections making triangles.
  • Place on prepared baking sheet.
  • Bake 18-22 minutes until scones are brown and don't give too much when touched.
  • Let cool on wire rack.
  • While cooling, cream together softened butter, cream cheese, and confectioners sugar. Add lemon juice to make a soft but still firm frosting.
  • Use the corner of a zip top bag to make a pastry bag, cutting off a very tiny piece of the corner to "pipe" frosting onto cooled scones.
  • Enjoy!
