GRILLED LAKE TROUT RECIPE (HOW TO COOK TROUT ON THE GRILL)
This grilled lake trout recipe is the EASIEST way to cook lake trout in less than 15 min. Cooking trout on the grill is as easy as seasoning + grilling!

Steps:
- Heat grill to medium-high heat.
- Place pats of butter on lake trout, flesh side up.
- Season as desired. Sprinkle lightly with old bay seasoning or minced garlic if using. Otherwise season with sea salt and black pepper to taste.
- Add filets to a fish grill pan or aluminum foil.
- Cook for about 3-5 minutes per side, until fish flakes easily. Thinner pieces will only take 3 minutes.
- Season with salt and pepper to taste.

SIMPLE LAKE TROUT

Steps:
- Preheat oven to 400°F.
- Line baking pan with aluminum foil or parchment paper.
- Wash fish fillet and pat dry.
- Finely mince shallots.
- Slice lemon.
- Pour olive oil over both sides of fillet. (i put the oil on the paper or foil and coat one side then the other.).
- Place lemon slices on top of oiled paper or foil. Top with shallots, herbs and half of cracked peppercorns and salt.
- Bake for 20 minutes.
BARBECUED STUFFED LAKE TROUT

Steps:
- Soak toothpicks in water for one hour.
- Heat 3 tablespoons of oil in skillet over medium heat. Add onions and sauté until soft. Transfer to large bowl and cool.
- Add egg and 2 tablespoons parsley, anchovy paste, rosemary and thyme. Mix in breadcrumbs until well combined. Season the stuffing with pepper to taste.
- Using a sharp knife, make 1/2 inch diagonal cuts through the skin on each side of fish.
- Season the cavities of each fish with salt and pepper. Spoon the stuffing in to the cavity of each fish being careful not to pack too tightly. Using soaked toothpicks, close cavity.
- Preheat grill to 375°F.
- Brush grill liberally with oil. Brush the trout all over with 1 tablespoons oil. Season the skin with salt. Place the whole trout on the grill and cook for 5-7 minutes per side.
- Using metal spatula, transfer fish to platter. Remove toothpicks, and sprinkle with parsley.

- Tie trout up in cheesecloth and lower into salted, simmering water; cook for 30 minutes.
- Lift out carefully, remove cheesecloth, dress fish with melted butter and parsley.
- For the horseradish sauce: Combine first four ingredients and chill. Just before serving, whip cream and fold in horseradish mixture.

- Salt both sides of the trout liberally. Use the whole 1/2 cup for a fish that, when it was alive, weighed between 5 and 12 pounds. Scale the salt up or down if your fish is larger or smaller, but don't get all hung up on it -- this is an approximation. Sprinkle the chopped spruce tips all over the meat side of the trout. Fold the trout over on itself so it's "back to normal." Put the fish in a closed container and set in the fridge for as many hours as the butterflied fish weighs.
- Rinse off the cure under cold water and pat the fish dry with paper towels. Let it sit out in a cool, breezy place for a few hours, or you can set the trout on a cooling rack in the fridge for up to a day. This dries the fish out enough to form a pellicle; if you skip this step the smoke will not adhere to it as well.
- Smoke the trout over whatever wood you want. We used diamond willow in Manitoba, but alder is my wood of choice for fish. Fruit woods and oak are other good choices. Smoke over low heat -- no higher than 225°F and ideally closer to 180°F -- until the fish has been cooked through, which can take as little as 90 minutes or as long as 4 hours, depending on how thick your trout is and how hot your fire is. Either eat the trout on the spot or let it cool and eat it cold. It should keep for a solid week to 10 days if kept cool.

- In a shallow bowl (I like to use a pie dish)whisk together the Parmesan cheese, crackers, garlic salt, cornmeal, and black pepper. In a medium size, bowl mixes together the eggs and milk until well combined.
- Pat fish dry with paper toweling, dip fish in the milk mixture and then roll them in the dry mixture pressing lightly to coat.
- Cook fish in a large skillet using the oil over medium-high heat until fish is nicely browned on both sides and separates easily with a fork (about 5-7 minutes per side).
