2 cups cooled mashed potatoes
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Chive & Onion Cream Cheese Spread
1/4 tsp. pepper
36 won ton wrappers
1 egg white, lightly beaten
3 Tbsp. butter, divided
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Bring large saucepan of water to boil. Meanwhile, mix potatoes, cream cheese spread and pepper.
  • Cut won ton wrappers into circles with 3-inch biscuit cutter; brush edges with egg white. Spoon 1 Tbsp. potato mixture onto center of each wrapper; fold in half. Press edges together to seal. Add, in batches of 12, to boiling water in large saucepan; cook 2 to 3 min. or until pierogies float to surface. Drain in colander. Rinse with cold water; drain well.
  • Melt 1 Tbsp. butter in large nonstick skillet on medium-high heat. Add 12 pierogies; cook 2 to 3 min. on each side or until golden brown on both sides. Remove from skillet; cover to keep warm. Repeat with remaining butter and pierogies. Serve with sour cream.

2 teaspoons butter
4 slices bacon, chopped
2 tablespoons bacon drippings
½ yellow onion, diced
5 medium Yukon Gold potatoes, peeled and halved
salt and ground black pepper to taste
1 pinch cayenne pepper
1 large egg
1 ½ cups farmer's cheese, or any cheese blend
1 large egg
1 tablespoon water
50 wonton wrappers, or as needed
1 cup sour cream
¼ cup chopped fresh chives

Steps:

  • Melt butter in a large skillet over medium heat. Add chopped bacon and onions; cook and stir until the bacon is crisp and the onions are browned, 6 to 8 minutes. Remove bacon and onions to a small dish, reserving about 2 tablespoons of the bacon fat for frying the pierogi.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and mash until smooth. Allow to cool for 10 minutes. Season with salt, black pepper, and cayenne pepper. Stir in 1 egg and farmer's cheese. Cover and refrigerate until chilled, about 30 minutes.
  • Beat 1 egg with 1 tablespoon water in a bowl for the egg wash.
  • Place 2 to 3 wonton wrappers at a time on a lightly floured work surface. Brush the edges lightly with the egg wash. Place about 2 tablespoons of filling in the center of each wrapper. Fold each pierogi in half and lightly press the edges together to seal.
  • Bring a pot of salted water to a boil and cook pierogi in the boiling water until they float, 2 to 3 minutes. Drain.
  • Transfer pierogi to the skillet with reserved bacon drippings in batches and cook over medium heat until lightly browned, about 2 minutes per side. Transfer to a bowl, toss with the bacon and onions, and serve garnished with sour cream and chives.

3 heaping cups flour
3 eggs, beaten
Salt
1 stick butter
1 large onion, 1/4-inch dice
32-ounce canned or fresh kapusta (sauerkraut), rinsed well to remove brine
Salt and pepper
Cheese filling (note: a traditional recipe would call for farmer's cheese, but we find it too dry)
1 pound ricotta
2 eggs
Salt
1 tablespoon sugar

Steps:

  • Make a well from the flour. Add eggs and about 1/2 cup of water. The amount of water will vary according to the weather. You want to make a stiff dough. Divide it into 3 equal portions and knead until silky smooth.
  • Fillings: We usually make cheese and kapusta (sauerkraut), but you can use meat, potatoes, or even fruit.
  • Saute onion in butter until just soft. Add kapusta and brown. Season with salt and pepper to taste. Allow time for the filling to cool before assembling pierogi, otherwise they will fall apart when cooked. If making more than one filling, this one can cool while you prepare the others.
  • Mix well.
  • To assemble and cook pierogi: Roll out a portion (or half portion, if space is limited) of the dough on a floured surface as thinly as possible -- somewhere between a wonton and a thin pizza. Put about a tablespoon of filling on the dough and use a large plastic cup (a big gulp-type cup works really well) to cut a circle around the filling. Dampen half of the circumference of the circle with a bit of water on your finger and fold into a dumpling. Boil the dumplings a dozen at a time in a big pot of salted water until they float -- no more than 3 minutes. At this point you can freeze them in bags for later use. To prepare for serving, brown the pierogi in a skillet using a bit of butter. If you want to be really traditional you can use bacon grease. Alternately, you can bake them in a casserole, spraying both the casserole and the pierogi with a butter flavored spray, and putting a few pats of butter on top of the dumplings.

13 cups all-purpose flour
1/4 cup salt
4 eggs
3 tablespoons canola oil
4 cups cold water
8 ounces sour cream or cream cheese
Desired filling (mashed potato and cheddar cheese; mashed potato, mushroom and Swiss cheese; sauerkraut ? make sure that filling is not too watery)
3 tablespoons butter
Sauteed onions, for garnish
Sour cream, for garnish
Chives, for garnish

Steps:

  • Combine flour and salt in an electric mixer for 30 seconds. In a large bowl, combine eggs, oil, and 3 cups of water. Put electric mixer on a slow speed and add sour cream and egg mixture to the flour mixture. Mix for about 2 1/2 minutes. At this point check the dough and make sure it is creamy and pliable, if it is too sticky, add a bit of flour, if it is not pliable add more water. When dough reaches desired texture, remove from the mixer and let rest on a floured table, covered with plastic wrap, for about 30 minutes.
  • After 30 minutes, begin working the dough with a floured rolling pin. Roll dough out to a rectangular shape that is 1 to 1 1/2-inches thick. Cut this into quarters. Take 1 sheet and roll out to 1/4-inch thickness. If dough begins to stick, sprinkle it with a bit of flour. Using a 2 to 3-inch cookie cutter, cut dough into circles.
  • Once circles are cut, roll the circles to 1/8-inch. Place 1 tablespoon of the desired filling in the center of each circle. Lightly wet 1/2 of the edge of the circle with water, fold over and crimp together.
  • Gently place pierogi into hot salted water that is just under boiling point, about 190 degrees F, and cook for 3 minutes or until pierogi float. Drain.
  • Melt butter in a large frying pan. Add pierogis and cook until golden brown. Serve with Sauteed onions, a dollop of sour cream and chopped chives.

Homemade Pittsburgh Pierogies With Sour Cream image

This recipe is from a website about Pittsburgh. My husband made them for us and we will never eat store bought pierogies again. If not from the east coast or of Polish descent, pierogies are like ravioli stuffed with chees and mashed potatoes. How could you go wrong?

2 cups flour, plus extra for kneading and rolling dough
1/2 teaspoon salt
1 large egg
1/2 cup sour cream, plus extra to serve with the pierogi
1/4 cup butter, softened and cut into small pieces
5 large potatoes
1 large onion
8 ounces grated cheddar cheese

Steps:

  • To prepare the pierogi dough, mix together the flour and salt.
  • Beat the egg; add all at once to the flour mixture.
  • Add the 1/2 cup sour cream and the softened butter pieces and work until the dough loses most of its stickiness (about 5 to 7 minutes). You can use a food processor with a dough hook for this, but be careful not to overbeat.
  • Wrap the dough in plastic and refrigerate for 20 to 30 minutes or overnight; the dough can be kept in the refrigerator for up to 2 days.
  • Each batch of dough makes about 12 to 15 pierogies, depending on size.
  • Roll the pierogi dough on a floured board or countertop until 1/8" thick.
  • Cut circles of dough (2" for small pierogies and 3-3 1/2" for large pierogies) with a cookie cutter or drinking glass.
  • Place a small ball of filling (about a tablespoon) on each dough round and fold the dough over, forming a semi-circle.
  • Press the edges together with the tines of a fork.
  • Boil the perogies a few at a time in a large pot of water. They are done when they float to the top (about 8-10 minutes).
  • Rinse in cool water and let dry.
  • Saute chopped onions in butter in a large pan until onions are soft.
  • Add pierogies and pan fry until lightly crispy.
  • Serve with a side of sour cream for a true Pittsburgh pierogi meal.
  • Potato, Cheese & Onion Filling:
  • Peel and boil 5 large potatoes until soft. Red potatoes are especially good for this.
  • While the potatoes are boiling, finely chop 1 large onion and saute in butter until soft and translucent.
  • Mash the potatoes with the sauted onions and 4 to 8 oz of grated cheddar cheese (depending on how cheesy you want your pierogies), adding salt and pepper to taste.
  • You can also add some fresh parsley, bacon bits, chives, or other enhancements if you desire.
  • Let the potato mixture cool and then form into 1" balls.
