LOW-CARB HAM AND CHEESE PINWHEELS
A delicious appetizer for the holidays and a family favorite that has been passed down for several generations. A mixture of horseradish and cream cheese spread over ham and cheese slices gives an interesting kick to any gathering.

Steps:
- Combine cream cheese, horseradish, and chives in a small bowl.
- Pat each ham slice dry with a paper towel and spread a thin layer of the cream cheese mixture on top. Place 1 slice American cheese over each; you may need more than 1 slice to cover the ham. Spread another thin layer of cream cheese mixture on top; roll into a pinwheel.
- Cover pinwheels with plastic wrap and chill in the refrigerator until firm, 1 hour to overnight. Trim off ends with a sharp knife and slice each roll into 1/2-inch slices.

Steps:
- Preheat oven to 350 degrees
- In a large microwave safe bowl combine the mozzarella cheese and cream cheese. Heat in 30 second increments until cheese is completely melted.
- Stir the cheese so they are combined.
- In a second smaller bowl combine the almond flour and baking powder. Mix until the melted cheeses.
- When the almond flour and cheese are nearly combined add in a beaten egg white and stir well
- Using your hands work the dough to make sure the egg white is completely worked into the dough (no streaks of egg whites visible) If the dough seems too wet just add 1 tablespoon of almond flour at a time until it feels right.
- Lay the dough on a silicone baking sheet. Place a second silicone baking sheet on top and spread the dough into a thin rectangle.
- Layer the deli ham slices and shredded cheese over the dough and tightly roll.
- Slice into 13 rolls (not too thin)
- Combine all of the speical sauce ingredients in a bowl and crush over the ham and cheese rolls.
- Bake 15-17 minutes until golden brown.

- Preheat the oven to 350 degrees F. Coat a 9x13-inch pan with cooking spray.
- Unroll the pizza dough onto a non-stick surface and roll it into a large rectangle, roughly 13x8-inch in size.
- Layer the ham on top of the pizza dough to cover it completely, then layer the cheese in the same fashion.
- Starting at one of the long ends, tightly roll up the dough, jelly-roll style, pinching the end to seal.
- Cut the loaf crosswise into 12 equal-sized pieces, then arrange in the prepared pan.
- Whisk together the butter, brown sugar, Dijon mustard, and poppy seeds, then pour evenly over the rolls.
