Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
- In skillet over medium heat, brown the sausage with the onions, garlic and 1/2 the parsley; drain excess fat. Add tomato paste, tomato sauce, water, Italian seasoning, oregano, and basil; mix well. Simmer, covered, for 5 minutes; stirring occasionally.
- In a bowl, combine remaining parsley and ricotta, spinach, Parmesan, eggs, garlic salt, and pepper; mix well.
- Spread 2 cups sauce in the bottom of the prepared baking dish. Begin layering with 4 noodles, 1/2 cheese mix, 1/3 remaining sauce, and 1 cup mozzarella. Repeat this layer again; the last layer will be noodles, sauce and mozzarella cheese. Cover pan with aluminum foil.
- Bake in the preheated oven for 45 minutes. Remove the foil; bake, uncovered, an additional 10 minutes, or until cheese is bubbly and starting to brown. Let cool 10 minutes before serving.

THE ULTIMATE LASAGNA

- Preheat oven to 350 degrees F.
- Cook the lasagna noodles in plenty of boiling salted water until pliable and barely tender, about 10 minutes. Stir with a wooden spoon to prevent sticking. Drain the noodles thoroughly and coat with olive oil to keep them moist and easy to work with.
- Coat a large skillet with olive oil, add beef and sausage and brown until no longer pink, about 10 minutes. Season with salt and pepper. In a food processor, combine the onion, carrots, celery, garlic, basil, parsley, an oregano. Process until pureed, add to the pan with the ground meat and stir to combine. Stir in the flour. Add the wine and cook until it has reduced by half. Stir in the tomatoes and add the heavy cream and the cinnamon.
- In a mixing bowl, combine ricotta and the parmesan. Stir in the eggs and season with salt and pepper.
- To assemble the lasagna: Coat the bottom of a deep 13 by 9-inch pan with olive oil. Arrange 4 noodles lengthwise in a slightly overlapping layer on the sauce. Then, line each end of the pan with a lasagna noodle. This forms a collar that holds in the corners. Dollop 1/2 of the ricotta mixture over the pasta, spread to the edges with a spatula. Spread 1/2 of the meat mixture over the ricotta. Sprinkle 1/2 of the mozzarella on top of the ricotta. Top with a ladle full of sauce, spread evenly. Repeat with the next layer of noodles, ricotta, sauce, and cheeses. Top last layer with noodles, sauce, shredded mozzarella and Parmesan. Tap the pan to force out air bubbles. Bake for 1 hour. Remove from oven. Let lasagna rest for 30 minutes so the noodles will settle and cut easily. Cut into 2-inch squares and serve.
EASY LAZY LASAGNA
This incorporates all the flavors of lasagna, but it's easier because the ingredients are simply mixed together and baked.

- Preheat the oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. - Set a wire rack inside a baking sheet.
- Cut the chilled lasagna into 12 equal pieces, then cut the pieces into 4 triangles, for a total of 48 pieces. Set the triangles on the wire rack and cover with plastic wrap. Freeze for at least 4 hours, until solid.
- Heat the vegetable oil in a large heavy-bottomed pot fitted with a deep fry thermometer over medium heat until it reaches 350°F (180°C).
- Add the flour, eggs, and bread crumbs to 3 separate shallow bowls.
- Remove the lasagna triangles from the freezer and dredge in the flour, then the eggs, then the bread crumbs.
- Working in batches, fry the lasagna triangles in the hot oil for approximately 1 minute, until golden brown. Transfer to a paper towel-lined baking sheet to drain and let cool for about 10 minutes.
- Serve the lasagna bites warm with marinara sauce alongside.

DEEP-DISH MEDITERRANEAN-STYLE LASAGNA

- Heat grill to medium heat.
- Trim and discard ends of zucchini and eggplant. Cut trimmed vegetables into thin lengthwise slices; place in large bowl. Add oil and pepper; toss until vegetables are evenly coated with oil mixture.
- Grill 2 to 4 min. on each side or until vegetables are tender. Set aside.
- Heat oven to 350º F.
- Blend ketchup, onions, water, tomato paste, olives, herbs, capers and garlic in blender until smooth; pour into medium bowl. Stir in Parmesan.
- Break each lasagna noodle into thirds.
- Spread 1/4 cup ketchup mixture onto bottom of 9x5-inch loaf pan sprayed with cooking spray. Top with 3 noodle pieces, thin layer of remaining ketchup mixture, and half each of the zucchini and eggplant slices. Repeat layers; cover with remaining noodles. Spread with remaining ketchup mixture; sprinkle with mozzarella. Cover.
- Bake 45 min. or until heated through, uncovering for the last 15 min. Let stand 5 min. before cutting to serve.

DEEP DISH MEAT LASAGNA

- Preheat oven to 375°F. Coat a 13x9-inch baking dish with non-stick cooking spray.
- For the sauce, in a large skillet, brown beef over medium-high heat. Drain and return to pan, adding diced tomatoes with their juice, tomato paste, brown sugar, basil, salt and oregano. Bring to a boil and then turn down to low, simmering for 30 minutes.
- For the cheese filling, in a medium bowl, whisk eggs, ricotta, Parmesan, basil and salt.
- To assemble, spread 1 cup of meat sauce in the prepared dish. Top with 4 noodles, 1/2 of the ricotta mixture, 11/2 cups mozzarella and 1 cup meat sauce. Top with 4 more noodles, remaining ricotta and remaining mozzarella. Place 4 remaining noodles on top, cover with remaining meat sauce and sprinkle with Parmesan cheese. Bake uncovered for 35 minutes.

- FOR THE LASAGNA: Prepare lasagna according to package directions.
- Drain and set aside. NOTE: You can use Barella No Boil Noodles, but be sure during the assembly of the layers that the noodles do not stick out.
- Cook Italian sausage either in a skillet or by boiling in a pot of water, thinly slice crosswise and set aside.
- Brown the ground beef and ground pork in a skillet, drain off and discard fat.
- Add onion and garlic to the ground meat, stir and cook another 5 minutes.
- Add the sugar, salt, basil, fennel seeds, pepper and the Marinara sauce and simmer for 20 minutes.
- While the above mixture is simmering, combine in a large bowl the eggs, Ricotta cheese, and parsley.
- Preheat oven to 375 degrees.
- Take a 13 by 9 inch baking dish and spray the bottom with a non-stick spray, such as Pam.
- In the baking dish, spoon in a layer of 1/3 of the meat sauce.
- Then layer 1/3 of the lasagna pasta (overlapping each strip of pasta with the other).
- Then layer 1/3 of the Ricotta mixture.
- Then layer 1/3 of the sliced olives and 1/3 of the sliced Italian sausage.
- Then layer 1/3 of the sliced mushrooms.
- Then layer 1/3 of the Mozzarella and 1/3 of the Parmesan.
- Then continue to repeat the layering until all of the ingredients are layered.
- When the layering is completed, cover with aluminum foil, making certain that the foil is not touching the top of the lasagna, and bake for 25 minutes.
- Remove foil and bake, uncovered, another 25 minutes.
- Remove from oven and allow to sit and rest 10 minutes before cutting.
- FOR THE MARINARA SAUCE (by Alan Leonetti): Empty Hunts chunky crushed tomatoes and Hunts tomato paste into the pot.
- Add the extra-virgin olive oil to the pot.
- Slice the cloves of garlic crosswise into either halves or thirds or pieces, and dump them into the pot.
- Dice the shallot, and dump that into the pot.
- Add the rest of the ingredients, and stir to mix well with a large long handled wooden spoon.
- Do not strain, as the pulp adds to make this a thick and wonderful sauce.
- Cover and cook on medium heat, stirring every 10 minutes for about an hour or until it bubbles and is completely heated throughout.
- Reduce heat to simmer, and continue to simmer, stirring every 10 or 15 minutes to keep from burning or sticking to the bottom of the pot for 1 or 2 hours.
- Remove from heat and give it one last stir.
- Serve over spaghetti, ravioli, pasta or use for chicken parmesan, veal parmesan, or anything that calls for a Marinara sauce.
- NOTE: Use only Hunts Chunky Crushed Tomatoes and Hunts Tomato Paste.

I call this the 10 lb. lasagna because the ingredients total about 10 lbs. I have been practicing my lasagna recipe for years and this is what I have finally come up with. Note: This lasagna can be made the day before and baked the next day. Or you can make this lasagna and freeze to bake at a later time. (If you freeze, please remember to allow extra baking time.)

- Tomato Sauce:.
- Heat a deep-sided skillet or stock pot and add about 1 teaspoon of olive oil. Add sausage and cook until just browned (3-4 minutes). Remove the meat from the skillet or pot and set aside. Adding at least another teaspoon of olive oil to the skillet or pot, sauté the 1 large diced onion and fresh minced or chopped garlic for a few minutes. Add the canned chopped tomatoes and tomato sauce to the skillet. Add browned Sausage to Tomatoes. Let tomato sauce come to a slight bubbling and turn heat down to simmer. Add at least 1 teaspoon (or more to taste) each of Italian seasoning, basil and sugar to the tomato sauce. Add several dashes of red or white wine for flavoring. Allow tomato sauce to simmer on medium to low heat, stirring occasionally, until tomato sauce is cooked down to about half the amount (about 30-45 minutes).
- Ricotta Cheese Mixture:.
- In a separate bowl mix together, ricotta cheese, 8 ounces mozzarella cheese, 1 cup parmesan cheese, 1 pkg. cream cheese, 1 med-large minced onion, 1 teaspoon basil. Set aside until ready to use.
- Layering:.
- Using a large deep-sided baking dish or lasagna pan, layer 1/3 tomato sauce, lasagna noodles, ½ ricotta cheese mixture, continue layering until you have ended with tomato sauce.
- Sprinkle remaining mozzarella cheese and parmesan cheese on the top. Cover with foil and bake at 350 degrees until heated thoroughly and bubbling about 1 hour and 45 minutes. Take foil off and bake for another 15 minutes allowing cheese to lightly brown around the edges.
