- In a large bowl, cream the butter, peanut butter and sugars until light and fluffy. Add egg white; beat until blended. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Shape into an 8-in. roll; wrap in plastic. Freeze for 2 hours or until firm., Unwrap and cut into slices, just over 1/4 in. thick. Place 2 in. apart on baking sheets coated with cooking spray; press with a fork to make crisscross pattern. - In a large bowl, combine the peanut butter and cream cheese. Beat with an electric mixer on medium speed until smooth. Gradually beat in the milk and lemon juice. Gently fold in the whipped topping. Spoon into the pie crust and smooth the top.
- Over a double boiler, heat the chocolate then add the cream. Mix together and cook for a minute to make sure the chocolate and cream are well mixed. Pour the chocolate mixture over the top of the pie.
- Cover and refrigerate for at least 4 hours.

This pie is so delicious - that it's hard to believe it's low cal - and even low fat compared with most peanut butter pies. I received the recipe from a friend, but made a few changes to it. - After it is at temperature, whip it with a mixer until it appears fluffed.
- Combine PB2, confectioners' sugar, and water in a separate bowl. Mix until thoroughly combined.

- First, make the Oreo cookie crust: Crush the Oreos into a fine crumb using a food processor or blender. Using a rubber spatula or wooden spoon, mix the crushed Oreo crumbs and melted butter together. It may look like there is not enough butter, but it will come together.
- Place into a 9 or 10 inch pie pan, pressing the crumbs onto the bottom and up the sides as much as it will fit. Try to make the crust 1/8 inch thick all around. It does not have to be perfect. Set in the freezer as you make the filling.
