FRESH MANGO BREAD
I make lots of these during mango season and give away to friends and family. It's great for breakfast or afternoon snack! Sometimes I even stick it in the toaster for a different texture.

- Combine all of the dry ingredients.
- Beat eggs with oil and add to flour mixture.

MAGIC MANGO BREAD
I never particularly cared for mangos until I tried this recipe. This recipe came from a friend in Hawaii and is the only bread I now make.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
- In a large bowl, sift together flour, baking soda, salt and cinnamon. In a large bowl, beat together the butter, oil and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. Blend this mixture into the flour mixture; just to combine. Fold in the mango, raisins, walnuts and coconut; mixing just enough to evenly combine.
- Let stand for 20 minutes then bake in preheated oven for 50 to 60 minutes or until a toothpick inserted into center of the loaf comes out clean.

- Grease and flour two 9x5 inch loaf pans.
- Sift the flour, baking soda, baking powder and cinnamon into a small bowl.

MANGO NUT BREAD
We live on the slopes of Haleakala, where carrots, potatoes, cabbage, bananas, litchis and mangoes are grown. This is my favorite recipe using mangoes.

MANGO MACADAMIA NUT BREAD

- Preheat oven to 350 degrees F. Grease and flour a loaf pan. In a bowl, cream the butter and sugar together. Add the eggs and mix well. Add the mango, orange juice, coconut, and macadamia nuts and combine. In another bowl, sift together the flour, baking soda, salt and cinnamon. Add the dry ingredients to the mango mixture. MANGO BREAD
INGREDIENTS 1/4 cup butter 3/4 cup sugar 2 medium very ripe, soft mangos, peeled and pitted (1 1/2 mangos pureed and 1/2 mango diced, or 1 cup mango puree and 1/2 cup mango diced) 1 large egg, slightly beaten 1 teaspoon pure vanilla extract 2 tablespoons lime juice 1 1/2 cup all purpose flour 1 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1 cup chopped walnuts To prepare batter, in a large mixing bowl cream the butter and sugar. Add the mango mixture to the flour mixture, stirring until the dry ingredients are just moistened. Stir in the walnuts and diced mango. To bake the mango bread, preheat the oven to 350°F. - Position rack in center of oven and preheat to 350°F. Butter and flour 9x5x3-inch metal loaf pan. Mix raisins and brandy in small bowl. Let stand 15 minutes.
- Puree mangoes in processor until smooth. Measure 1 cup puree for bread (reserve remainder for another use).
- Combine flour, baking soda, cinnamon, salt, ginger, and nutmeg in medium bowl; whisk to blend. Using electric mixer, beat sugar and butter in large bowl until fluffy. Beat in eggs, 1 at a time, then vanilla and 1 cup mango puree. Gradually add dry ingredients, beating just until blended. Fold in raisins and brandy. Pour batter into prepared pan.
- Bake bread until tester inserted into center comes out clean, about 1 hour 15 minutes. Cool 20 minutes in pan on rack. Turn bread out; cool completely. (Can be made 3 days ahead. Wrap bread in foil and store at room temperature.)
MANGO BREAD (WITH MANGO PUREE)
Steps:
- MANGO BREAD 2 eggs 1/2 c. sugar 1/2 c. vegetable oil 1/4 c. honey 2 c. mango puree Beat eggs until fluffy. Beat in sugar, then oil and gradually add honey. Add mango puree. In another bowl, combine flour with cinnamon, baking soda and salt. Beat into mixture gradually. Stir in vanilla, walnuts and raisins. Pour into 2 lightly greased and floured loaf pans and let stand at room temperature 20 minutes. Preheat oven to 350 degrees. Bake 50 to 60 minutes, or until bread tests done. Delicious sliced, toasted and served with sweet unsalted butter.

MANGO BREAD PUDDING
I have never been a huge fan of bread pudding, but for some reason this bread pudding takes the cake, no pun intended. It combines just the right elements of sweet, tart, creamy, and crispy. Everyone who tries it becomes a fan.

- 1. Preheat the oven to 350 degrees F. Butter a 9-by-11-inch ceramic baking dish.
- 2. In a medium saucepan combine the butter, milk, cream, sugar, vanilla, cardamom, and ginger and simmer over low heat, stirring occasionally, until the butter melts and the milk is hot. Remove from the heat and set aside to cool slightly for about 4 to 5 minutes.
- 3. In a small bowl, whisk the eggs and then whisk them steadily into the milk mixture. Continue whisking until blended.
- 4. Combine the mangoes and bread in a large bowl and mix well. Transfer to the baking dish and pour the milk mixture evenly over the top. Make sure all of the bread pieces are soaked with the mixture, and let sit for 5 minutes.
- 5. Bake for 45 to 50 minutes, until bubbly and brown. Serve warm but not hot, with whipped cream or vanilla ice cream.

This recipe was attached to my Tutu's refrigerator for decades. I first noticed it in the 1960s; mom said it was there since she was a child.

- Center a rack in the oven and preheat the oven to 350?F.
- Butter an 8 1/2 x 4 1/2-inch loaf pan, dust the inside with flour and tap out the excess. Put the pan on an insulated baking sheet or on two regular baking sheets stacked one on top of the other. (This extra insulation will keep the bottom of the bread from over baking.).
- Whisk the eggs and oil together.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, spices and salt. Rub the brown sugar between your palms into the bowl, breaking up any lumps, and then stir it inches Pour the wet ingredients over the dry, switch to a sturdy rubber spatula or wooden spoon and mix until blended-the batter will be very thick (really more like a dough than a batter) and not easily mixed, but persevere, it will soon come together. Stir in the mango, raisins and zest. Scrape the batter into the pan and smooth the top with a rubber spatula.
- Bake the bread for 1-1/2 hours, or until it is golden brown and a thin knife inserted into the center comes out clean. (If the bread looks as if it's getting too brown as it bakes, cover it loosely with a foil tent.) Transfer the pan to a rack and cool for 5 minutes before running a knife around the sides of the pan and unmolding. Invert and cool to room temperature right side up on the rack.
