ROUND STEAK SUPREME
This is a delicious meal. Tender round steak with vegetables, simmered in tomato soup. Then served over rice or mashed potatoes. My Stepfather found this recipe in the daily paper over 30 years ago.I have been making it ever since.

Steps:
- Cut up Round steak and brown with Margarine in large pan.
- Add celery, onion, green pepper and mushrooms (drained), cover and cook on medium until tender,about 45 minutes, stirring every 15 minutes.
- Add tomato soup,water,sliced black olives,juice from mushrooms,pepper. stir well.
- simmer uncovered for 2 hours, stirring occasionally.
- Serve over rice or mashed potatoes.

SUNNY'S GRILLED STEAK SUPREME

- For the steak: Prepare a grill for medium-high heat.
- Season the steak generously on all sides with salt, pepper and either olive oil or canola oil. Add the steak to the grill and cook until it releases from the grill, about 5 minutes. Flip and cook until desired doneness, another 3 to 4 minutes for 120 to 125 degrees F. Remove to a plate, sprinkle evenly with the Parmesan and cover loosely with aluminum foil. Rest for 10 minutes before slicing.
- For the topping: In a large pan on medium heat, add 2 tablespoons olive oil and the bacon. Cook, stirring, until the bacon is crisp, about 5 minutes. Remove with a slotted spoon to a paper towel-lined plate. Add the mushrooms to the pan and cook until wilted and tender, 3 to 5 minutes. Season the mushrooms with salt and pepper, remove with a slotted spoon to a large bowl and add the reserved bacon to the bowl. If more oil is needed in the pan, add a tablespoon, then add the onions. Cook, without stirring, until the onions begin to char. Stir the onions and continue to cook until tender, 5 to 8 minutes. Remove to the bowl. Add a little oil to the pan, then add the bell peppers and Italian seasoning and stir to combine. Cook until slightly tender, 3 to 5 minutes, then remove to the bowl. Add the tomatoes and red chile flakes to the pan and cook until the tomatoes begin to burst, 5 to 8 minutes. Transfer to the bowl as well. Toss the mixture together with the basil and serve on top of the sliced steak.

- Melt 1/2 stick butter in large heavy skillet at low heat.
- Brown onion, adding ground venison and pin nuts.
- Tenderize steak with meat tenderizer using directions on bottle.
- Lay steak on floured board.
- Spread ground meat mixture on round steak and roll up as a jelly roll.
- Tie with butcher string.
- Melt remaining butter and brown steak on all sides.
- Add water and burgundy.
- Cover and steam for two hours or until tender.
STUFFED MINUTE STEAK SUPREME
Another winner in our house, one of our boys favorites. I think I got this recipe from Stove Top Stuffing years ago. I've used both cubed and minute steaks in the past, cubed steak can be a tad chewy and stringy for this, but more meatier than minute steaks.

- Mix honey and soy sauce, set aside.
- Combine stuffing, hot water, butter and red or green pepper.
- Spoon 1/2 cup stuffing on each steak.
- Roll steaks, secure with toothpicks.
- Place steaks in baking pan.
- Spoon honey mixture over steaks.
- Bake 375 degrees for 20 minutes.

- Place the potatoes in a slow cooker.
- Cut beef into four pieces; place over potatoes.

SPOON TENDER ROUND STEAK
I call this spoon tender because its so tender you can cut it with a spoon. This makes great tomato gravy while it cooks and is great served over rice. Sometimes I will add carrots, bell pepper, and fresh mushrooms to the pot.

- Salt and pepper the steak, coat with flour, and then brown in skillet in olive oil on both sides.
- After all the steak is browned, put in a medium size pot with lid.
- Pour in the tomatoes you have crushed with the juice. Add all other ingredients, mix well. Add about 1/2 cup water and mix again.
- Bring to a boil and stir. Reduce heat and simmer for 1 to 11/2 hours until tender.
- Serve with rice.

- Cut steak into 3"-square pieces. Dredge in flour.
- Beat eggs and milk in a pie plate. In a second pie plate, combine cracker crumbs, Parmesan cheese, pepper, parsley flakes, garlic powder, onion powder and salt.
- Dip steak pieces in egg mixture, then in flavored cracker crumbs to coat evenly.
- Heat oil in a large frying pan. Fry coated steak in oil until just browned. Place pieces in an 8-cup baking dish. Top with tomato slices.
- Deglaze pan with water. When boiling, add water to baking dish. Cover with foil and bake at 300F for 90 min or until tender.
