"Ever since my husband's grandmother gave me this special recipe, I haven't made another oatmeal cookie recipe. The pudding mix makes them chewy," relates Donna Trumbauer of Coopersburg, Pennsylvania.

2 cups butter, softened
1-1/2 cups packed brown sugar
1/2 cup sugar
4 eggs
7 cups quick-cooking oats
2-1/2 cups all-purpose flour
1 package (5.1 ounces) instant vanilla pudding mix
2 teaspoons baking soda

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the oats, flour, dry pudding mix and baking soda; gradually add to the cream mixture and mix well. , Drop by heaping tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 375° for 12-14 minutes or until golden brown. Remove to wire racks to cool.

1-1/2 cups shortening
2 cups sugar
4 large eggs, room temperature
4 teaspoons water
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
4 cups quick-cooking oats
2 cups chopped raisins
1 cup chopped walnuts
Additional sugar or colored sugar

Steps:

  • Preheat oven to 350°. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in water. In another bowl, whisk together flour, baking soda, cinnamon and salt; add to creamed mixture, and mix well. Stir in oats, raisins and walnuts. , On a surface sprinkled with additional sugar, roll dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. cookie cutter in desired shapes. Place 2 in. apart on greased baking sheets. Bake until set, 12-15 minutes. Remove to wire racks to cool.

1 c butter, room temperature
1 c white sugar
1 c brown sugar, firmly packed
2 large eggs, well-beaten
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 1/2 c all-purpose flour
3 c quick oatmeal
2 c coconut (or you choice of nuts, raisins, date, chocolate chips, etc.)

Steps:

  • 1. Cream together butter, white sugar, and brown sugar in a large bowl.
  • 2. Add beaten eggs and vanilla.
  • 3. In a separate bowl mix together salt, baking soda, flour, oatmeal, and coconut.
  • 4. Add the dry ingredients to the butter mixture and mix until combined.
  • 5. At this time you can fold in the optional nuts, chocolate chips, raisins, or dates.
  • 6. Use a cookie scoop, drop dough onto a baking sheet (making sure not to overcrowd the pan) and bake immediately. Or, form the dough into 2" rolls in plastic and refrigerate until chilled then slice.
  • 7. Bake at 375 for 10-12 minutes.

This is my Grandma's recipe. I learned it from Mom. Grandma used to make these for me and my brother and sister when we went to her house. Both my kids, my sister and brother, and my neice make me make them whenever I visit. They are best eaten warm with a glass of milk! Peanut butter can be substituted for the cocoa. Or add raisins or nuts (pecans or walnuts are good).

2 1/2 cups old fashioned oats
2 cups sugar
2 tablespoons cocoa
1/2 cup butter
1/2 cup milk

Steps:

  • Place sugar, cocoa, milk, and butter in a saucepan, mix and bring to a boil.
  • Boil for exactly 3 minutes.
  • Remove from heat and mix in oats. If the mixture appears a little runny, mix in some extra oats.
  • Spoon mixture onto wax paper and allow to harden.

There will be none for anyone else and I am left with "cookie eaters remorse" for DAYS afterwards. This is my favorite *instant gratification* treat. You won't be disappointed... 1 cup shortening
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda, dissolved in
1 teaspoon hot water
1 1/2 cups flour
1 teaspoon salt
2 cups oatmeal
1 (12 ounce) bag milk chocolate chips

Steps:

  • Heat oven to 375 degrees.
  • Mix together shortening, brown sugar, granulated sugar, eggs and vanilla extract.
  • Add the baking soda that has been dissolved in hot water.
  • Mix together the flour and salt in a separate bowl, then add to the first mixture.
  • Add the oatmeal and chocolate chips.
  • Drop the dough by teaspoon on to an ungreased baking pan, 2 inches apart.
  • Bake for 8-10 minutes.
  • Remove from baking sheet and allow to cool.
  • ENJOY!

1 cup unbleached flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
14 tablespoons unsalted butter (1 3/4 sticks at room temp)
1 cup granulated sugar
1/4 cup light brown sugar (packed)
1 large egg
1 teaspoon vanilla
2 1/2 cups old fashioned oats (old fashioned type no instant stuff)

Steps:

  • Heat oven to 350°F - you will need 3 baking sheets lined with parchment paper (again the parchment keeps the cookie from burning and makes clean up faster).
  • Whisk together flour, baking powder, soda and salt.
  • Beat together with mixer at low speed - butter and sugar until the sugar granules are not visible. Increase speed and beat 1 minute longer, scrape sides as needed and add egg, beat another 30 seconds. Add flour mixture 1/3 at a time and incorporate well over med speed until mixture is smooth. Add oatmeal and stir into the dough using your rubber spatula.
  • Divide into 24 equal portions and bake for 13 to 16 minutes placing only one cookie sheet in the oven at a time and rotating the cookie sheet half way through your cooking time -- these are the best and the thinnest cookies and very crispy.
