TOFU VEGETABLE SOUP WITH BEAN THREAD NOODLES



Tofu Vegetable Soup with Bean Thread Noodles image

This Asian-style soup is ideal when you're in a hurry. It can be on the table in about twenty minutes.

Yield 4 to 6 servings

Number Of Ingredients 10

One 3- to 4-ounce package bean thread (cellophane) noodles
One 32-ounce carton low-sodium vegetable broth
1 cup snow peas, cut in half
1/2 medium red or orange bell pepper, cut into thin strips
4 to 6 ounces baby spinach or arugula
One 16-ounce tub firm tofu, cut into 1/2-inch dice
2 teaspoons minced fresh or jarred ginger
1 teaspoon dark sesame oil
2 tablespoons reduced-sodium soy sauce, or to taste
Freshly ground pepper

Steps:

  • In a heatproof container, combine the noodles with enough boiling water to cover. Let stand, covered, for 15 to 20 minutes, or until al dente. Drain well, then place on a cutting board and chop in several directions to shorten the noodles.
  • Meanwhile, combine the broth with 2 cups water in a soup pot. Bring to a simmer, then add the snow peas, bell pepper, spinach, tofu, ginger, and sesame oil. Cook briefly, just until the spinach is wilted and the soup is heated through.
  • Remove from the heat, stir in the noodles, and season with soy sauce and pepper to taste. Serve at once.
  • This pairs nicely with Bok Choy, Edamame, Cashew, and Orange Rice (page 83). A platter of sliced bell peppers, daikon radish or turnip, and grape tomatoes or sliced tomatoes completes the meal.
  • For a lighter meal, serve with store-bought vegan spring rolls and Bok Choy, Red Cabbage, and Carrot Salad (page 176).

SESAME NOODLES WITH TOFU

Give tofu a go with this low-fat, filling recipe with an Asian influence

Number Of Ingredients 8

250g pack firm tofu , drained (we used Cauldron)
2 tbsp reduced-salt soy sauce , plus extra to serve (optional)
300g green veg (we used mange tout and halved bok choi)
1 garlic clove , sliced
small knob of ginger , peeled and shredded
300g pack straight-to-wok egg noodle (or use 2 sheets medium dried egg noodles and follow pack instructions)
1 tbsp sesame seed
1 tbsp sesame oil , plus extra to serve (optional)

Steps:

  • Cut the tofu into 12 pieces and mix with 1 tbsp of soy sauce and 1 tsp of sesame oil. Heat the remaining oil in a wok, then stir-fry the vegetables, garlic and ginger for 2 mins until the vegetables are starting to wilt. Drizzle with 2 tbsp water, then stir-fry for another min.
  • Add the noodles, sesame seeds and soy sauce from the marinated tofu, then stir-fry for 2 mins. Now add the tofu, splash over the remaining soy sauce, then cover with a lid or baking sheet. Leave for 1 min so that the tofu heats through, then gently mix into the rest of the stir-fry.
  • Lift the noodles and tofu into bowls and splash over a little more soy sauce and sesame oil to serve, if you like.

This is a savory vegan soup with udon noodles, tofu and delicious Asian vegetables like bok choy and shiitake mushrooms.

½ (16 ounce) package tofu
6 ounces fresh udon noodles
1 tablespoon oil, or as needed
1 serrano pepper, minced, or to taste
1 teaspoon minced fresh ginger root
32 ounces vegetable broth
3 carrots, chopped
¼ cup chopped green onions
½ cup chopped bok choy
5 ounces shiitake mushrooms, chopped
1 teaspoon sesame oil
1 teaspoon soy sauce

Steps:

  • Wrap tofu in paper towels and place heavy books on top for 30 minutes to dry out tofu.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Chop pressed tofu into 1-inch cubes and place on the prepared baking sheet.
  • Bake in the preheated oven for 10 minutes. Turn tofu and bake an additional 10 minutes until crispy.
  • While tofu bakes, bring a large pot of lightly salted water to a boil. Cook udon in boiling water according to package directions, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Drain.
  • Heat oil in a large pot over medium heat. Cook serrano pepper and ginger until softened, 2 to 3 minutes. Add vegetable broth, carrots, green onions, bok choy, shiitake mushrooms, sesame oil, soy sauce, and baked tofu. Bring to a boil, reduce heat, and simmer for 15 minutes, stirring occasionally. Add cooked udon noodles and simmer 5 more minutes.

3 tbsp tamari or dark soy sauce
2 tbsp seasoned rice vinegar
1 tbsp mirin or 2 tsp caster sugar
200g firm tofu , drained, patted dry and cut into 8 cubes
cornflour , for coating
sunflower oil , for frying
1 bunch asparagus , base of stalks snapped off, cut diagonally into about 4 pieces
50g fresh or frozen edamame beans
50g frozen peas
small piece ginger , grated
400g pack straight-to-wok udon noodles
coriander leaves, to garnish
chilli oil, to serve

Steps:

  • Combine the tamari or soy sauce, vinegar and mirin or sugar in a shallow bowl and stir until dissolved. Place the tofu in the marinade and turn to coat. Leave to absorb the flavours for about 30 mins or more. (If marinating for several hours, keep in the fridge.)
  • When ready to cook, turn the oven on to warm. Scatter the cornflour over a plate. Remove the tofu from the marinade, reserving the marinade, and roll in the cornflour to coat all sides. Heat a wide frying pan over a medium-high and add enough sunflower oil to cover the base of the pan. Fry the tofu, using tongs to turn, until dark golden and crisp all over. Drain on kitchen paper, then keep warm in the oven.
  • Place 1 litre of water in a medium saucepan with the reserved marinade and bring to the boil. Add asparagus, edamame beans, peas, ginger and noodles and return to the boil. Simmer until the vegetables are just tender, about 3-4 mins. Divide between 4 bowls and place 2 tofu cubes in each. Top with coriander leaves and serve drizzled with a little of the chilli oil.

1 tablespoon canola oil
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes, optional
1/2 pound sliced fresh mushrooms
1 carton (32 ounces) reduced-sodium chicken broth
1/4 cup sherry or reduced-sodium chicken broth
1/4 cup reduced-sodium soy sauce
7 ounces firm tofu, drained and cut into 1/2-inch cubes
1 cup fresh snow peas, julienned
1 large carrot, shredded
2 green onions, thinly sliced
8 ounces uncooked Chinese egg noodles or uncooked spaghetti
Optional: Finely chopped peanuts and additional green onions

Steps:

  • In a large saucepan, heat oil over medium heat. Add ginger, garlic and, if desired, pepper flakes; cook and stir 1 minute or until fragrant., Add mushrooms, broth, sherry and soy sauce; bring to a boil. Cook, uncovered, 5 minutes. Add tofu, snow peas, carrot and green onions. Reduce heat; simmer, uncovered, 4-6 minutes longer or until vegetables are crisp-tender., Meanwhile, cook noodles according to package directions; drain and divide among 4 bowls. Pour soup over noodles. If desired, sprinkle with peanuts and green onions.

100g fine rice noodle
140g firm tofu
2 tbsp sunflower oil
3 spring onions , shredded
1 small chunk fresh root ginger , finely chopped
1 red pepper , thinly sliced
100g mangetout
100g beansprouts
1 tsp tikka masala paste
2 tsp reduced-salt soy sauce
1 tbsp sweet chilli sauce
roughly chopped coriander and lime wedges, to serve

Steps:

  • Put the noodles in a bowl and pour over boiling water to cover. Leave for 4 mins, then drain and rinse under running cold water until cold. Drain well, then snip into short lengths with scissors.
  • Rinse the tofu in cold water, then cut into small chunks. Pat dry with kitchen paper. Heat 1 tbsp of the oil in a wok or large frying pan, add the tofu, then stir-fry for 2-3 mins, stirring until lightly browned. Drain on kitchen paper.
  • Add the remaining oil to the wok and heat up. Add the spring onions, ginger, pepper and mangetout, then stir-fry for 1 min. Add the noodles and beansprouts, then stir to mix. Blend together the curry paste, soy, chilli sauce and 1 tbsp water, then add to the wok, stirring until everything is well coated in the sauce. Serve sprinkled with coriander, with lime wedges for squeezing over.
