BASIC BARBECUE RUB



Basic Barbecue Rub image

Sprinkle this rub on pork, beef, chicken, and robust fish, like salmon. You can cook the meat at once or, for an even richer flavor, let it marinate for 2 to 4 hours first.

1/4 cup coarse salt ((sea salt or kosher))
1/4 cup packed brown sugar ((light or dark-your choice))
1/4 cup sweet paprika
2 to 4 tablespoons freshly ground black pepper
1 tablespoon garlic powder ((optional))
1 tablespoon onion powder ((optional))
1/2 teaspoon ground cayenne pepper ((optional))
1/2 teaspoon celery seeds ((optional))

Steps:

  • Combine all the ingredients in a bowl and stir or whisk to mix. Transfer to a jar, cover, and store away from heat and light. The rub will keep for several weeks.

1/4 cup firmly packed brown sugar
1/4 cup sweet paprika
3 tablespoons black pepper
3 tablespoons coarse salt
1 tablespoon hickory-smoked salt or more coarse salt
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoon celery seeds
1 teaspoon cayenne pepper

Steps:

  • Combine all the ingredients in a mixing bowl and stir to mix. (Actually, your hands work better for mixing than a spoon or whisk does. Use your fingers to break up any lump of brown sugar.) Store the rub in an airtight jar away from heat or light; it will keep for at least 6 months.

Steps:

  • For an all-purpose barbecue rub, mix salt, garlic powder, pepper, paprika, cumin, rosemary, thyme, and brown sugar together in a bowl until well combined.

2 tablespoons paprika
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon salt
1 teaspoon ground black pepper
2 teaspoons ground cumin
1 ½ tablespoons brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground cloves
⅛ teaspoon ground nutmeg
5 pounds pork spareribs
2 pounds hickory wood chips, soaked

Steps:

  • In a medium bowl, stir together paprika, cayenne pepper, garlic powder, onion powder, salt, ground black pepper, cumin, brown sugar, cinnamon, cloves, and nutmeg. Apply liberally to the ribs. Place ribs in a large roasting pan, cover, and refrigerate overnight. Remove ribs from the refrigerator 1 hour before smoking.
  • Prepare an outdoor smoker, bringing the temperature to 200 to 225 degrees F (95 to 110 degrees C).
  • Smoke ribs for 6 to 8 hours, adding wood chips to maintain a steady smoke (approximately one handful every 30 to 45 minutes). Ribs are done when crispy outside and tender inside. Remove from smoker, and set aside for 15 to 20 minutes before serving.
