SPICY THAI NOODLES WITH GINGER PEANUT DRESSING



Spicy Thai Noodles with Ginger Peanut Dressing image

Kosher salt
1 pound udon noodles or linguine pasta
2 teaspoons sesame oil
1/4 cup light soy sauce
2 teaspoons grated fresh ginger
2 cloves garlic, minced
4 Thai chiles, halved lengthwise, and seeds removed
4 chicken breasts, cut into bite-size cubes
1/2 cup creamy peanut butter
1 tablespoon grated fresh ginger
2 cloves garlic, minced
3 tablespoons sugar
1/4 cup rice vinegar
3 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon chile oil
2 tablespoons grapeseed oil
1 orange, rind removed, flesh segmented
2 Thai chiles diced, seeds removed
1 small bunch fresh cilantro, chopped
1 bunch spring onions, thinly sliced

Steps:

  • Bring a large pot of salted water to a boil. Cook the noodles according to the package directions for al dente. Drain the noodles, then transfer to a large bowl and toss with the sesame oil. Set the noodles aside.
  • In a medium mixing bowl, whisk together the soy sauce, ginger, garlic, and chiles. Add the cubed chicken to the marinade, toss gently to coat the chicken. Cover the bowl and refrigerate for 30 minutes.
  • For the dressing: In a small saucepan, whisk together the peanut butter, ginger, garlic, sugar, rice vinegar, soy sauce, sesame oil, and chile oil, and bring to a simmer over medium-low heat.
  • Pour the warm dressing over the cooked noodles, and toss to coat evenly. Set the noodles aside until ready to serve.
  • In a heavy skillet, heat the grapeseed oil over medium-high heat, when the skillet just begins to smoke, add the chicken cubes and sear on all sides until they are browned. Saute the chicken cubes over medium heat until they are fully cooked, about 5 minutes.
  • Thread the chicken pieces and orange segments alternately on the skewers.
  • To serve the skewers, toss the noodles with the diced chile peppers and chopped cilantro. Sprinkle the chicken skewers with the sliced green onions. Serve the noodles with the chicken skewers and enjoy hot or cold!

3 ½ ounces uncooked linguine pasta
9 ounces fresh green beans, trimmed and cut on the diagonal
¼ cup lime juice
3 tablespoons canola oil
3 tablespoons soy sauce
2 tablespoons brown sugar
1 tablespoon Asian (toasted) sesame oil
1 tablespoon minced garlic
1 tablespoon grated orange zest
2 small serrano chile peppers, chopped
2 cups carrots, cut into matchsticks
1 cup thinly sliced green onions
salt and black pepper to taste

Steps:

  • Fill a saucepan with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink, and rinse with cold water until the pasta is cool.
  • Bring a saucepan of lightly salted water to a boil, stir in the green beans, and cook, stirring occasionally, until the beans are bright green and slightly tender, 5 to 8 minutes. Drain the beans, and rinse with cold water to chill.
  • In a large salad bowl, combine lime juice, canola oil, soy sauce, brown sugar, sesame oil, garlic, orange zest, and serrano peppers, stirring until the sugar has dissolved. Allow the dressing to stand for 30 minutes. Lightly toss in the carrots, green onions, linguini and green beans, and season to taste with salt and pepper. Cover and chill before serving.

Steps:

  • Prepare noodles according to packet directions (most just require soaking in hot water). Drain, rinse and set aside to cool.
  • Dressing - Mix together Dressing ingredients, using water only if needed to loosen so it can be tossed through salad. If you reduce Sriracha, might need to add smidge more lime.
  • Beans - Steam or boil green greens until just cooked, tender but still crisp. Drain under running water to cool.
  • Toss - Place salad ingredients in a big bowl, toss with dressing.
  • Garnish with sesame seeds then serve at room temp. Keeps 4 days in the fridge.

1 1/2 tablespoons low-sodium soy sauce
1 1/2 teaspoons toasted sesame oil, plus more as needed

Rind of 1/2 orange, peeled into 2- to 3-inch strips

Steps:

  • In a medium heatproof bowl, stir together the red-pepper flakes, soy sauce and sesame oil. Set next to the stovetop.
  • Bring a large pot of salted water to boil. Meanwhile, in a large (12-inch) skillet over medium heat, cook the 1/2 cup oil, peanuts and orange rind, shaking the pan occasionally, until the peanuts are golden and bubbling, 3 to 5 minutes. Immediately pour the contents of the skillet over the red-pepper mixture (be careful of splattering!) and set aside.
  • Meanwhile, in the same skillet, heat the remaining tablespoon oil over medium-high. Add the chicken and press it down with a wooden spoon into a thin layer. Season with salt and a generous amount of black pepper and cook, without stirring, occasionally pressing the layer of chicken down, until the bottom is browned, 5 to 7 minutes. Break the chicken up into small pieces and cook, stirring occasionally, until cooked through, 1 to 2 minutes more.
  • While the chicken cooks, cook the noodles according to package directions, until chewy but not soft. Drain and toss with a bit of sesame oil.
  • Remove and discard the orange rind from the chile oil. Off the heat, add enough chile oil to coat the chicken and stir, scraping up any browned bits from the pan. Add the noodles and toss, adding more chile oil to fully coat the noodles and chicken. (If you don't use all of the chile oil, you can store it in the refrigerator for 2 weeks in an airtight container.) Top with chives and serve at once.

1 tablespoon plus 1 teaspoon sesame oil
Sea salt
1 clove garlic, finely chopped

1/2 head Napa cabbage, cored and thinly sliced
6 spring onions, thinly sliced
9 ounces udon noodles, cooked and cooled

Steps:

  • Heat a medium skillet over medium-high heat. Rub the steak with 1 tablespoon of the sesame oil and sprinkle generously with salt. Cook the steak until browned and medium-rare, 3 to 4 minutes per side. Remove to a plate, cover with foil and let rest for 5 minutes.
  • Meanwhile, whisk together the garlic, soy sauce, vinegar, gochujang and the remaining 1 teaspoon sesame oil in a small bowl.
  • Arrange the cabbage, spring onions, noodles and peanuts in two serving bowls.
  • Thinly slice the steak against the grain and divide between the bowls. Pour the sesame dressing over the top and garnish with cilantro leaves.

Steps:

1 lb linguine, cooked until al dente and drained
1/4 cup toasted sesame oil
2 tablespoons vegetable oil
2 garlic cloves, minced
2 teaspoons fresh ginger, peeled and grated
1/4 cup soy sauce
1/4 cup creamy peanut butter (don't use natural)
1/4 cup rice vinegar
2 teaspoons light brown sugar
1 cup snow peas, strings removed
6 scallions, white parts, thinly sliced on the diagonal
4 carrots, cut into matchsticks (2 cups)
1/4 cup peanuts, dry-roasted, chopped
2 tablespoons sesame seeds, toasted

Steps:

  • Cook and drain pasta, toss with 1 T. of the sesame oil. **Do-Ahead Tip: cover and refrigerate for up to 8 hours.
  • In a blender or food processor, process together the remaining 1 T. sesame oil, vegetable oil, garlic, ginger, soy sauce, peanut butter, vinegar, and brown sugar until smooth. Taste for soy and sugar. **Do-Ahead Tip: refrigerate up to 3 days. Let come to room temperature and whisk before using.
  • Microwave the snow peas on High or plunge into boiling water for 1 minute. Shock in ice water, pat dry, and cut in half on the diagonal. **Can omit this step if they are young and tender.
  • Add the snow peas, scallions, carrots, 2 T. of the peanuts, and 1 T. of the sesame seeds to the linguine. Pour half of the dressing over the salad and toss to coat. **Do-Ahead Tip: cover and refrigerate up to 24 hours.
  • One hour before serving, remove the salad from the refrigerator and toss with more dressing if needed. Garnish with the remaining 2 T. of peanuts and 1 T. of sesame seeds.
  • Note from contributor - I omit the 2 T. vegetable oil and use water in it's place. The dressing is a bit thinner, but healthier. Additions I enjoy: 1/4 cup chopped cilantro, several radishes - slivered, red pepper flakes for some "heat", and chopped red pepper for their vitamins and a splash of color.

3-4 oz ramen noodles
1 TBSP sesame oil ((plus extra for drizzling))
2 cloves garlic ((peeled and minced))
1/2 tsp freshly grated ginger or 1 tsp ginger paste
1 TBSP brown sugar
2 TBSP low-sodium soy sauce
1 TBSP rice vinegar
2-3 tsp chili garlic sauce ((Sriracha works as well!))
1/4 cup thinly sliced green onions
1 TBSP toasted sesame seeds
optional crushed red pepper flakes (to taste (spicy))

Steps:

  • Cook ramen noodles according to package directions. (approx. 2-3 minutes)
  • While you wait for the water to boil, measure out all your ingredients. This recipe comes together fast!
  • Heat a large skillet over medium heat. Add 1 TBSP of sesame oil and, once hot, add garlic and ginger. Sauté for about a minute, until tender and fragrant.
  • Next stir in brown sugar, soy sauce, rice vinegar, and chili garlic sauce (start with 1 tsp and add extra to taste) and cook for an additional 30 seconds.
  • Drain noodles and add to the skillet. Mix well with a fork or tongs and add an extra drizzle of sesame oil and/or chili garlic sauce to taste. I added 3-4 tsp of chili sauce total since I like it spiiiicy!
  • Top with green onion and sesame seeds. For even more heat, add some optional crushed red pepper flakes. Enjoy hot.

2 tablespoons balsamic vinegar
1 1/2 tablespoons sugar
1 tablespoon hot chili oil (or more(to taste)
1 1/2 teaspoons salt
1 lb fresh Chinese egg noodles (about 1/16 inch in diameter) or 1 lb fresh angel hair pasta
12 green onions, thinly sliced (white and pale green parts only)
1/2 cup coarsely chopped roasted peanuts
1/4 cup thinly sliced fresh Thai basil

Steps:

  • Heat peanut oil in small skillet over medium heat.
  • Add ginger and garlic; sauté 1 minute.
  • Transfer to large bowl.
  • Add next 6 ingredients; whisk to blend.
  • Place noodles in sieve over sink.
  • Separate noodles with fingers and shake to remove excess starch.
  • Cook in large pot of boiling salted water until just tender, stirring occasionally.
  • Drain and rinse under cold water until cool.
  • Drain thoroughly and transfer to bowl with sauce.
  • Add sliced green onions and toss to coat noodles.
  • Let stand at room temperature until noodles have absorbed dressing, tossing occasionally, about 1 hour.
  • Stir in peanuts and Thai basil; toss again.
  • Season to taste with salt and pepper.
  • Serve at room temperature.
  • **Cook time does not include letting noodles absord the dressing for 1 hour.

1 (16 ounce) package linguine (may use spaghetti)
2 tablespoons sesame oil
1/4 cup creamy peanut butter or 1/4 cup tahini
1/4 cup soy sauce
2 tablespoons white wine vinegar
1 tablespoon fresh gingerroot, minced
3 drops chili oil
4 -6 green onions, cut into 2 inch pieces
toasted sesame seeds, for garnish (optional)

Steps:

  • Cook the linguine or spaghetti according to the package directions; drain well. Toss the linguine with sesame oil, and set it aside. Keep it warm.
  • Combine the peanut butter (or tahini), soy sauce, white wine vinegar, gingerroot, and chili oil. Add the peanut butter mixture to the linguine mixture and toss gently to combine. Add the green onions and toss gently to combine. Garnish with toasted sesame seeds, if desired. Serve immediately.

1 1/2 inches thick slice fresh ginger, peeled
7 tablespoons Chinese sesame paste (I prefer sesame paste) or 7 tablespoons smooth peanut butter, stirred well to blend (I prefer sesame paste)
5 tablespoons toasted sesame oil
5 tablespoons soy sauce
1/4 cup chinese rice wine or 1/4 cup sake
1 1/2 tablespoons chinese black vinegar or 1 1/2 tablespoons Worcestershire sauce
1 1/2 tablespoons sugar
6 tablespoons water

Steps:

  • In a food processor fitted with the metal blade, or in a blender, finely chop the garlic and ginger.
  • Add the remaining ingredients in the order listed and process to blend. The dressing should be the consistency of heavy cream. If it is too thin, add up to 2 tablespoons additional sesame paste.
  • Refrigerated, in a covered container, the dressing will keep for up to a week.

1 pound spaghetti
1/4 cup soy sauce
1 bunch green onions (cilantro would be an excellent substitution)
2 tablespoons sesame oil
1 teaspoon Better Than Bouillon (Chicken or Vegetarian Seasoning Base)
1-2 tablespoons chili sauce
1 teaspoon honey (one heaping teaspoon )
1/2 to 1 cup pasta water
1 teaspoon sesame seeds (optional for garnish.)

Steps:

  • Cook the pasta according to package directions to just al dente, drain well. Reserving one cup of pasta water.
  • While the pasta is cooking, thinly slice the green onions, both the greens and whites.
  • Gather the ingredients, measure and add them to a bowl. Add all of the ingredients except the onions and sesame seeds.
  • Pour the sauce into pasta mixing well with thongs. Add in half of the sliced onions and sesame seeds and about 1/2 cup of pasta water. Continue tossing and mixing the pasta will be glossy.
  • Top with remaining sliced onions and sesame seeds. Serve and enjoy!

4 scallions, green and white parts sliced
2/3 cup roasted almonds, roughly chopped

1/4 cup almond butter
5 tbsp water
1 tsp honey
2 tbsp toasted sesame oil, divided
5 tbsp soy sauce
1 lime, juiced
1 clove garlic, peeled and smashed
1/4 cup chili sauce, I like Sriracha
1/4 tsp Kosher salt

Steps:

  • Cook soba noodles according to package directions in salted water, usually about 5 minutes.
  • Drain and toss with 1 tbsp of the sesame oil to prevent them from sticking together while you prepare the dressing and assemble the salad.
  • For the dressing: combine all ingredients in a blender and blend until smooth.
  • To assemble: In a large bowl toss vegetables, half of the almonds, half of the scallions, and noodles with enough dressing to thoroughly coat it all.
  • Plate on a larger platter and scatter remaining scallions and almonds on top.
  • Serve room temperature or cold, it will keep for up to a week in the refrigerator!

1 9-ounce package fresh linguine
2 cups shredded peeled carrots

Steps:

  • Stir first 8 ingredients in medium bowl to blend. Season dressing with salt and pepper. Let stand 30 minutes to blend flavors.
  • Cook green beans in large pot of boiling salted water until crisp-tender, about 2 minutes. Using slotted spoon, transfer beans to cold water to cool. Drain well. Pat dry with paper towels.
  • Return water to boil. Add pasta and cook until just tender but still firm to bite, stirring often, about 2 minutes. Drain. Rinse pasta under cold water. Drain well.
  • Combine green beans, pasta, carrots, green onions and dressing in large bowl. Toss to coat. Season with salt and pepper. (Can be made 6 hours ahead. Cover; chill.)

1 English cucumber, halved lengthwise, seeded and cut into 1/2-inch pieces
1 shallot, thinly sliced lengthwise
Kosher salt
1 1/2 tablespoons creamy peanut butter
1 tablespoon soy sauce
1 tablespoon mirin
1 1/2 teaspoons rice vinegar
1 teaspoon toasted sesame oil
1 teaspoon Sriracha
1/2 teaspoon packed light brown sugar
1/2 teaspoon fresh lemon juice
1/2 clove garlic, finely grated
10 to 12 fresh mint leaves, thinly sliced
8 basil leaves, thinly sliced
1 teaspoon toasted sesame seeds

Steps:

  • Use a vegetable peeler to shave the carrots into thin wide ribbons; discard the last thick strip. Transfer the carrot ribbons to a large bowl, fill with ice water and let stand 10 minutes.
  • Meanwhile, combine the cucumber and shallot in a colander, sprinkle with salt and let drain, 10 minutes. Whisk the peanut butter, soy sauce, mirin, rice vinegar, sesame oil, Sriracha, brown sugar, lemon juice and garlic in a small bowl.
  • Drain the carrots, blot dry with paper towels and transfer to a serving bowl. Press the cucumber and shallot in the colander with your hands to remove any excess liquid; pat dry with paper towels and add to the carrots. Add the mint and basil and toss to combine. Drizzle the peanut dressing over the salad and sprinkle with the sesame seeds.
