⅓ cup vegetable oil
2 tablespoons lime juice
½ teaspoon grated lime zest
2 cloves crushed garlic
1 ½ teaspoons fresh oregano
¼ teaspoon red pepper flakes

6 skinless, boneless chicken breast halves

Steps:

  • In a shallow glass dish, mix the oil, lime juice, lime zest, garlic, oregano, red pepper flakes, salt, and black pepper. Add chicken, and turn to coat. Cover, and marinate in the refrigerator for 1 hour, turning occasionally.
  • Preheat grill for medium-high heat.
  • Lightly oil the grill grate. Drain and discard marinade. Grill chicken for 6 to 8 minutes each side, or until juices run clear.

Simply Grilled Chicken Breasts image

1/4 cup vegetable oil
2 cloves garlic, smashed
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breast halves
Roasted Tomato and Onion Dipping Sauce, recipe follows, optional
5 Roma tomatoes, halved (about 1 pound)*
1 yellow or white onion, quartered
3 cloves garlic, unpeeled
1/4 cup extra-virgin olive oil
2 teaspoons dried thyme
1 to 2 tablespoons water
Kosher salt and freshly ground black pepper

Steps:

  • In a small bowl, mix the vegetable oil with the smashed garlic, using a fork to help release the garlic flavor into the oil. Season the garlic mixture with salt, and pepper, to taste. Let sit for at least 15 minutes.
  • Meanwhile, prep the chicken breasts. Rinse and dry the chicken thoroughly. Find the ridge along the side of the chicken breast, and carefully pull off the tender. Take each breast and pound gently to an even thickness. Do not pound too thin; the breast will not be completely uniform. If there is a skinny little triangular tip, go ahead and cut off and discard. Prep the tenders by slicing off any jagged edges. Liberally salt and pepper the chicken and allow to sit at room temperature for at least 15 minutes.
  • Preheat the grill to hot.
  • Once the chicken has rested, brush liberally with the garlic-infused vegetable oil. Place the chicken breasts on the hot grill, with the thicker portion facing the hotter part of your grill (usually the back). Allow the chicken breasts to cook undisturbed until char marks are made, about 4 minutes. Flip the chicken, keeping the thick part of the chicken toward the hot part of the flame, and cook until an instant-read thermometer inserted in the chicken reads 155 degrees F, about 3 more minutes. Place the chicken tenders on the grill and cook for 3 to 4 minutes total, turning halfway through. Allow the grilled chicken to rest for 5 minutes, covered, before serving.
  • Serve with Roasted Onion Tomato and Onion Dipping Sauce, if using.
  • Preheat the oven to 275 degrees F.
  • Place the halved tomatoes, onions, and garlic cloves on a baking sheet. Drizzle with half the olive oil and sprinkle with thyme, salt and pepper. Toss to coat well. Place the tomatoes cut-side down, and cook for 2 hours turning the tomatoes after 1 hour. After the second hour, remove the baking sheet, and set aside the unpeeled garlic. Place the rest of the vegetables and the pan juices in a food processor or blender. Add a tablespoon or two of water to the pan to scrape up any bits of flavor stuck onto the baking sheet and add to the food processor. Squeeze out the soft flesh of the roasted garlic into the food processor and add the remaining olive oil. Pulse the mixture until chunky, or puree until smooth, depending on desired consistency. Taste the sauce and season with salt, and pepper, if necessary.
  • Yield: about 1 1/4 cups
  • *Cook's Note: The tomatoes do not have to be "good" tomatoes.

2 cups peach preserves or jam
3 tablespoons olive oil, plus more for brushing
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon finely chopped garlic
1 small jalapeno, finely chopped

8 frenched chicken breasts
4 ripe peaches, cut in half and pitted

Steps:

  • Combine the peach preserves, olive oil, soy sauce, mustard, garlic and jalapeno in a medium bowl and season with salt and pepper. Reserve 1/2 cup.
  • Preheat the grill. Brush the chicken with olive oil and season with salt and pepper. Place the chicken skin-side down and cook until golden brown, 6 to 7 minutes. Turn over and continue cooking for 5 to 6 minutes. Brush both sides with the peach glaze and continue cooking until done, an additional 4 to 5 minutes.
  • Place the peach halves cut side down on the grill and grill for 2 minutes. Turn over, brush with the reserved 1/2 cup of peach glaze and grill until the peaches are soft, 3 to 4 more minutes.

Brown sugar gives these grilled chicken breasts a glistening glaze and caramel-like sweetness, while mustard powder and cayenne add an earthy kick. If you don't want to bother making a mustard sauce for dipping, just serve these with dollops of good, strong Dijon mustard on the side. A crisp salad and some grilled corn completes the meal. And if you prefer dark meat, this recipe will also work with boneless, skinless thighs, though you might have to add a minute or so to the cooking time. Or use a combination of breasts and thighs for maximum crowd appeal.

  • Coat both sides of chicken breasts in Frank's Red Hot.
  • Sprinkle both sides generously with garlic powder.

1 tablespoon canola oil, plus more for grilling
1 teaspoon crushed red pepper flakes

1 tablespoon chopped fresh thyme leaves
2 lemons, zested and juiced, juice reserved for Brown Rice and Mushroom Salad
1 cup chicken broth
Kosher salt
2 cups brown rice
1/2 red onion, chopped
2 stalks celery, chopped
1 carrot, shredded
1/2 (8-ounce) package sliced mushrooms, chopped
Reserved lemon juice from Spicy Grilled Lemon Chicken
1 tablespoon brown mustard
1 tablespoon canola oil
Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves
1 teaspoon chopped fresh thyme leaves

Steps:

  • For the chicken: Remove the skin from the chicken breasts and take the breasts off the bone separating out the tenders. Cut the breasts in half lengthwise. Put the breasts between 2 pieces of plastic wrap and pound them thin with a rolling pin or small skillet.
  • Put the chicken breasts in a resealable plastic bag, pour the oil into the bag, and add the red pepper flakes, salt and pepper, parsley, thyme, and lemon zest. Mix it all together, seal the bag, put it in a bowl, and refrigerate for at least 2 hours or overnight. Refrigerate the tenders separately.
  • Preheat a grill or grill pan over medium heat.
  • Oil the grill to prevent the chicken from sticking. When you are ready to cook, remove the chicken from the refrigerator. Put the chicken breasts and tenders on the grill and cook until cooked through, 3 to 4 minutes per side (reserve the chicken tenders for the online Round 2 Recipe Grilled Chicken and Apple Wraps).
  • For the salad: In a saucepan with a lid, heat 2 cups water, chicken broth, and 1 teaspoon salt over medium-high heat. Stir in the rice and bring to a boil. Reduce the heat to low, cover, and simmer until the rice is tender, 40 to 45 minutes. Fluff the rice with a fork and spread it out onto a sheet pan to cool.
  • In a large bowl, combine the cooled rice, onions, celery, carrots, and mushrooms.
  • In a medium bowl, whisk together the lemon juice, brown mustard, canola oil, salt and pepper, to taste, parsley, and thyme. Whisk until well combined. Pour the dressing over the salad and gently toss everything together. (Reserve 2 cups for the Round 2 Recipe Stuffed Peppers.) Cover and refrigerate if not serving right away.
  • Serve the breasts while hot with the Brown Rice and Mushroom Salad.

SPICY GLAZED CHICKEN BREASTS

This one-skillet chicken has a spicy, pleasantly tart and punchy glaze that's built on frying a little tomato paste in garlic- and almond-infused oil, then deglazing with lemon juice. It tastes like you sun-dried lots of tomatoes for weeks. (But you don't need to do that.) The final flourish is the crunchy fried almonds and garlic. You could skip them, but they add a special touch that belies how fast the dish comes together. Besides chicken, the dish also can be made with any other ingredient that browns well, like tofu or even broccoli.

4 boneless, skinless chicken breasts (1½ to 2 pounds total)
1/4 cup extra-virgin olive oil
1/4 cup sliced almonds
3 garlic cloves, thinly sliced
Kosher salt
2 tablespoons tomato paste (preferably double concentrate)
1/2 teaspoon red-pepper flakes
1 tablespoon lemon juice

Steps:

  • Pat chicken dry and pound to an even ½-inch thickness with a heavy skillet or meat pounder.
  • In a large (12-inch) skillet, combine the oil, almonds and garlic. Season with salt, then set over high heat. Once the mixture starts to sizzle, reduce heat to medium and cook, swirling occasionally, until light golden, 3 to 5 minutes. Turn off the heat and use a slotted spoon to transfer the almonds and garlic to a paper towel-lined plate. (Keep the oil in the skillet.)
  • Set the skillet over medium-high. Season the chicken all over with 1 teaspoon salt, then add to the skillet and cook until browned underneath and opaque halfway up the sides, 3 to 5 minutes. Reduce the heat to low and transfer the chicken to a plate, seared side up.
  • With the skillet still over low heat, add the tomato paste and red-pepper flakes and cook, stirring constantly and scraping up browned bits, until the paste is a shade darker and starts to stick to the skillet, 1 to 2 minutes. Return the chicken, as well as any accumulated juices, seared side up to the skillet, cover, and cook until the chicken is cooked through, 4 to 6 minutes. (The moisture from the chicken will keep the tomato paste from burning, but if you're concerned, add a teaspoon of water as a preventative measure.)
  • Uncover, add the lemon juice, then flip and drag the chicken through the tomato-lemon glaze to coat all sides. Transfer to plates, spoon over any remaining glaze and sprinkle with the fried almonds and garlic.

1 recipe Spicy Asian Marinade
2 tablespoons virgin olive oil (for oiling the grill)

Steps:

  • First: Prepare the Spicy Asian Marinade as directed in the recipe. Put the chicken breasts in a bowl, pour in the Spicy Asian Marinade, and toss lightly to coat. Cover with plastic wrap and refrigerate for an hour, or longer if possible.
  • Second: Prepare a medium-hot fire for grilling or preheat a gas grill or the broiler. If grilling, brush the rack with olive oil and place the meat 3 inches from the source of the heat. Grill, covered, 5 to 7 minutes per side, or until the chicken is opaque all the way through. Alternatively, you can heat a nonstick skillet until very hot over high heat and sear the chicken until done, about 8 to 10 minutes, turning once. Remove from the heat and cool slightly. Cut the chicken meat across the grain into thin slices. Serve with a vegetable and rice or noodles. or use in salads or stir-fried dishes.

GARLIC-SOY GRILLED CHICKEN BREASTS

This recipe recently appeared in our local newspaper. We tried it and loved it! It's a great tasting and easy recipe to make, especially for camping. The hot chili paste gives it a nice bite but, of course, we added more than the one teaspoon called for in the original recipe. We served it with grilled vegetables and garlic bread.

This marinade is adapted from a recipe found in Chile Pepper magazine. Although I found it delicious, I did not find it "spicy", so if you are not a fan of spicy food, don't let the name scare you away. Next time I make it, I will probably add some crushed red pepper to the marinade. Prep time includes 1 hour to marinate, but you will probably want to marinate the breasts longer than that.

2 pounds yellow bell peppers (about 8)
1 1/4 teaspoons chili powder
2 teaspoons Dijon mustard
1 tablespoon olive oil
2 skinless boneless whole chicken breasts (1 1/2 pounds total), halved
2 red bell peppers, cut into 1/4-inch-thick strips
2 orange bell peppers, cut into 1/4-inch-thick strips
1/4 cup chopped fresh coriander sprigs (wash and dry before chopping) if desired
Accompaniment:Coriander Rice

Steps:

  • Lightly coat rack of a broiler pan or a baking sheet with cooking spray. Preheat broiler.
  • Quarter yellow peppers, discarding stems, seeds, and ribs. Put quartered peppers, skin sides down, on broiler rack or baking sheet and broil about 2 inches from heat until just tender and edges are dark brown, about 10 minutes. In a bowl let peppers steam, covered, 10 minutes. In a blender purée roasted peppers (unpeeled) with 1/2 teaspoon chili powder and pour through a sieve into a small saucepan.
  • In a small bowl whisk together mustard, remaining 3/4 teaspoon chili powder, and 2 teaspoons olive oil.
  • Prepare grill.
  • Pat chicken dry and season with salt and pepper. Brush tops with mustard mixture and grill, coated sides down, on an oiled rack set 5 to 6 inches over glowing coals about 6 minutes. Turn chicken and grill 6 minutes more, or until cooked through. (Alternatively, chicken may be grilled in 2 batches in a hot well-seasoned ridged grill pan over moderate heat, turning once, 6 minutes and then baked in a preheated 450° F. oven 5 to 10 minutes, or until cooked through.)
  • While chicken is grilling, in a large non-stick skillet heat remaining teaspoon olive oil over moderately high heat until hot but not smoking and sauté pepper strips with salt and pepper to taste, stirring, until golden brown and tender, about 5 minutes. While pepper strips are sautéing, heat roasted pepper purée over low heat until hot.
  • Arrange pepper strips on 4 plates and top with chicken. Drizzle chicken with some sauce and sprinkle with coriander. Serve chicken with rice if desired and remaining sauce on side.

4 oz. (1/2 8 oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup KRAFT Shredded Pepper Jack Cheese
1/4 cup canned diced green chiles
2 Tbsp. canned jalapeño peppers, diced
1 cup diced fresh tomatoes
1/4 cup pickled jalapeño peppers

Steps:

  • Heat grill to medium high heat
  • Cut lengthwise slit in thickest side of each chicken breast, being careful to not cut through to opposite side.
  • Place the chicken in a zipper bag, and pour the Italian dressing over the chicken. Marinate for 20-30 minutes.
  • In a medium bowl, mix together the cream cheese, pepper jack, green chilies, and jalapeños. Remove the chicken from the marinade. Discard bag and marinade. Spoon the cheese mixture into each of the chicken breasts, being careful not to overfill; secure with wooden toothpicks.
  • Grill the chicken 8-10 minutes per side, or until done(165°F).

  • Preheat an indoor or outdoor grill to high.
  • In a large baggie, combine the grill seasoning, chili powder, paprika and brown sugar. Place the chicken breasts in the baggie and give them a good shimmy shake.
