3 cups fresh or frozen pitted tart cherries, thawed
1 large sweet onion, finely chopped
1 small green pepper, chopped
1 small sweet red pepper, chopped
1/3 cup packed brown sugar
1/4 cup balsamic vinegar
2 teaspoons minced fresh gingerroot
1-1/2 teaspoons grated orange zest
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground allspice

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes or until vegetables are tender and mixture achieves desired thickness, stirring occasionally. Serve warm or chilled. Refrigerate leftovers.,

4 green apples
2 tablespoons vegetable oil
1 tablespoon mustard seeds
1 onion, diced
1 red bell pepper, cored and diced
1 teaspoon salt
2 teaspoons pureed garlic
1 to 2 serrano chiles, diced with seeds
1 teaspoon ground ginger
1 teaspoon ground allspice
1/4 cup raisins
1 cup packed brown sugar
3/4 cup red wine vinegar
1 cup water

Steps:

  • Peel apples and cut into quarters. Remove cores, roughly chop, and reserve.
  • Heat oil in a large saucepan over high heat. Add mustard seeds, cover and cook until popping stops. Reduce heat and add onion, red bell pepper, and salt. Cook, uncovered, stirring occasionally, until onions are translucent. Stir in garlic, serrano chile, ginger, and allspice, and cook an additional minute.
  • Add remaining ingredients, including reserved apples. Cook, uncovered, over moderate heat, until mixture is soft and aromatic, about 40 minutes. Chill before serving.

1 tablespoon extra-virgin olive oil
2 medium onions, chopped
2 Fresno chile peppers, seeded and finely chopped
1 (1-inch) piece fresh ginger, grated or minced
6 medium Braeburn or Gala apples, peeled and chopped
2 tablespoons dark brown sugar
1 tablespoon chopped fresh thyme
1/4 cup dark amber maple syrup
1/4 cup cider vinegar
1 tablespoon fresh lemon juice
Kosher salt
Freshly grated nutmeg

Steps:

  • Heat the extra-virgin olive oil in a saucepot over medium to medium-high heat. Add the onions, chiles and ginger to the pan and cook to soften, 10 to 12 minutes. Add the apples, dark brown sugar, thyme, maple syrup, cider vinegar, lemon juice, a little salt and nutmeg. Cover and cook, stirring occasionally, until a thick sauce forms, 15 to 20 minutes. Adjust the seasoning and transfer to a serving dish.

1 cup chopped yellow onion
2 tablespoons minced fresh ginger
1 cup freshly squeezed orange juice (2 oranges)
3/4 cup good cider vinegar
1 cup light brown sugar, lightly packed
1 teaspoon whole dried mustard seeds
1/4 teaspoon hot red pepper flakes
1 1/2 teaspoons kosher salt
3/4 cup raisins

Steps:

  • Combine the apples, onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, pepper flakes and salt and in a large saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally. Reduce the heat to simmer and continue cooking, stirring occasionally, for 50 minutes to 1 hour, until most of the liquid has evaporated. Take off the heat and add the raisins.
  • Set aside to cool and store covered in the refrigerator for up to 2 weeks.

1 onion, finely chopped
2 cloves garlic, chopped
2 to 4 small red chilies, crumbled
Large pinch coriander seeds, pounded
2 cloves, pounded
1/2 teaspoon nutmeg, pounded
Small pinch cumin, pounded
Olive oil
4 anchovy fillets
3 ounces ripe red cherry tomatoes, washed, whole
1 pound 4 ounces brown sugar
8 good lugs vinegar (preferably red wine)
Salt and freshly ground black pepper

Steps:

  • Slowly fry the onions, garlic and spices in a little olive oil soft and translucent. Add the anchovies and cherry tomatoes (which you can blanch and remove the skins first if you like.) Shake around and add the sugar, vinegar and salt and pepper at this point. Bring to the boil, stir and simmer gently for 30 minutes before seasoning well to taste and transfer to a few small, sterilized airtight jars, rather than a large one, and seal. If unopened, the chutney will improve in flavor and last up to a year in your cupboard. Once opened, keep in your refrigerator for 1 to 2 months.;

1 navel orange
3 cups fresh or frozen pitted tart cherries (about 2 pints fresh, picked over)
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/3 cup packed brown sugar
1/4 cup balsamic vinegar
2 teaspoons minced peeled fresh gingerroot
1/4 teaspoon dried hot red pepper flakes
1/2 teaspoon ground cardamom
1/2 teaspoon dried mint, crumbled
1/4 teaspoon ground allspice
1/2 teaspoon salt

Steps:

  • With a vegetable peeler remove two 2-inch strips orange zest and cut into fine julienne strips, reserving orange for another use. In a heavy saucepan stir together all ingredients and bring to a boil. Simmer mixture, stirring occasionally (stir more frequently toward end of cooking), about 50 minutes, or until thickened and syrupy. Cool chutney. Chutney keeps, covered and chilled, 3 weeks.

SPICY PLUM & APPLE CHUTNEY

1 garlic bulb
thumb-size piece fresh root ginger
2 large onions
1kg Bramley apples
3 star anise
1 tsp cumin seed
1 cinnamon stick
500ml bottle cider vinegar
1 tbsp salt
1kg plums
450g golden caster sugar
4-5 sterilised jars

Steps:

  • To sterilise the jars: run them with the lids and any rubber seals through the hottest cycle of your dishwasher. If you don't have a dishwasher, give the jars a good wash, then heat them in the oven at 150C/130C fan/ gas 2 for 30 mins. Don't bake seals - boil them in a pan of water for 10 mins. If you don't have lids you can buy jam pot covers from cook shops which you can then cover with fabric.
  • Prepare the ingredients: first, peel the garlic cloves and cut them into slivers. Peel and thinly shred the ginger. Halve, peel and thinly slice the onions, then put them in a large, wide saucepan or a preserving pan with the garlic and ginger. Peel, core and chop the apples, then add to the pan with the spices, vinegar and salt.
  • Bring the pan to the boil over a gentle heat, give everything a good stir, then turn down the heat and cover the pan (if you don't have a lid use foil). Simmer for 30 mins until the apples are cooked and pulpy.
  • While the apples are simmering, stone and quarter the plums, then add them to the cooked apples with the sugar. Stir well and leave to bubble away, this time uncovered, for another 40 mins stirring regularly until the plums are cooked but still retain some of their shape. Ladle into the sterilised jars, seal and label. Use our downloadable Christmas labels if you like.
  • This chutney is best kept for about a month before eating as the vinegar needs a bit of time to mellow. If you don't want the flavour of the spices to develop any more, then take out the cinnamon and star anise before potting. It will keep for 1 year in a cool place but once opened store in the fridge and use within a month.

Number Of Ingredients 8

1/3 lb gingerroot (the original recipe called for wild ginger root)
1 1/2 cups currants
1 1/2 ounces garlic, peeled and halved
4 cups sugar
2 1/2 cups vinegar (use equal parts of cider vinegar and tarragon vinegar)
3 pints apples, peeled and diced
1 pint peach, peeled and diced
1/2 teaspoon salt

Steps:

  • Peel and mince ginger fine; wash and drain currants.
  • Cook sugar, salt and vinegar together in a large stockpot to a clear syrup; add the ginger root and let it cook in the syrup for 20 minutes.
  • Add the rest of the ingredients and let simmer for 5 hours over very low heat.
  • Stir occasionally.
  • The chutney should be the consistency of a thick marmalade.
  • Fill sterilized jars and seal.

1/4 teaspoon cayenne pepper
1 tablespoon salt
1 1/2 pints vinegar

Steps:

  • Peel and core apples and stew them gently in a very small quantity of water until tender.
  • Chop raisins and onions.
  • Skin the tomatoes.
  • Place all ingredients in a saucepan and simmer gently for 1½ hours.

We have a Satsuma plum tree in our backyard that produces loads of plums every year. I'm always trying to come up with new ways to preserve plums. You can mix dried blueberries, dried cherries and or raisins. This is also great to serve over plain or vanilla yogurt as shown in one of my photos as a light dessert or intermezzo.

3 lbs plums, cleaned, seeded and cut in half
1 apple, peeled, seeded and cut in 1/2 inch chunks
3/4 cup dried blueberries or 3/4 cup dried cherries
1 garlic clove, minced
1 hot green pepper, chopped (such as jalapeno, Korean, Hatch)
1 lemon, sliced thinly and cut in quarters
1 1/2 cups sugar
3/4 cup cider vinegar
1/2 teaspoon coriander, ground
1/2 teaspoon cinnamon, ground
1 teaspoon salt

Steps:

  • Add all ingredients in a large saucepan and bring the mixture to boil.
  • Turn down heat to simmer and cook for 1 hour. The mixture should be reduced to about half.
  • Sterilize the jar and lids.
  • Fill and seal jars and process in boiling water bath for 30 minutes.

1 cup cider vinegar
½ cup rice vinegar
1 large onion, chopped

1 teaspoon salt
¼ teaspoon ground nutmeg

Steps:
