This is a really simple side dish featuring peas and cheese. I double the recipe and take it to many family gatherings.

1 (15 ounce) can peas, drained
4 ounces Cheddar cheese, cubed
2 tablespoons finely chopped sweet onion
1 tablespoon sugar
¼ cup creamy salad dressing, e.g. Miracle Whip ™

Steps:

  • In a medium serving bowl, mix together the peas, Cheddar cheese and onion. Stir in the sugar and creamy salad dressing. Chill for at least 1 hour before serving.

3 ounces cheddar cheese, diced in cubes, about 3/4 cup
1/2 cup diced ham
1/2 cup chopped red onion
2 -3 hard-boiled eggs, chopped
3/4 cup mayonnaise, use less more to taste
1 tablespoon vinegar
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
paprika (optional)

Steps:

  • In a large bowl, mix together peas, cheese, ham, onion, and egg.
  • In a small bowl, whisk together mayo, vinegar, sugar, salt and pepper; pour over the salad combo and toss to coat well.
  • Place in a serving bowl and sprinkle w/ paprika for garnish.

This creamy pea salad makes a lovely side dish to grilled meats, or add chopped cooked chicken or boiled egg for an easy and complete meal.

1/3 c frozen peas, thawed or leftover cooked peas
1 Tbs mayonnaise (or less if you prefer)
1 tsp nutritional yeast (add more if you like, it boosts the protein content)
2-3 shakes of Bragg's Liquid Aminos
For a spicy kick, add 1/4 tsp or more of My Favorite Creole Seasoning
1/2 ounce of extra sharp cheddar cheese, cubed
1 tsp diced, fresh onion
1 tsp capers (optional - I LOVE capers but not everyone does)
leftover cooked and cubed chicken meat (optional)
tuna (optional)
turkey pepperoni (optional)
chopped hard cooked eggs (optional)
cooked, cooled, and chopped salmon (optional)

Steps:

  • For frozen peas put them in a cup of hot water to thaw, then drain very well.
  • In a small bowl combine mayo, nutritional yeast, liquid aminos, and Creole seasoning (if desired) and mix well.
  • Add peas, onions, and cubed cheese (and any optional protein) and mix well.

1/2 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt (I used Seasoning Salt)
1/4 teaspoon sugar (I added a little extra)
1 cup quartered cherry tomatoes (I used roma tomatoes)
1 cup diagonally cut green onion (about 4 green onions)
1/2 cup finely chopped fresh parsley
1/2 teaspoon chopped of fresh mint (I omit the mint, but that's up to you)
1 (15 7/8 ounce) can black-eyed peas (rinsed and drained)
2 garlic cloves, minced

Steps:

  • Prepare dressing by mixing together first 5 ingredients in a small bowl, stirring with a whisk until well blended.
  • Place all of salad ingredients in a large bowl, drizzle dressing over the top and toss well.
  • Cover and chill.
