Steps:
- Heat the milk in a small saucepan until scalding.
- Take off heat.
- In a saucepan, melt 4 tlbsps butter over moderately-low heat and saute the onion and garlic for 3-4 minutes. Add the flour and cook the roux, stirring, for 3 minutes more.
- Add the heated milk in a stream, whisking, and simmer it, stirring, for 5 minutes.
- Remove from heat and stir in the cheeses and season to taste.
- Keep stirring just until the cheeses are melted and incorporated into the sauce.
- In a well-buttered 14 inch gratin dish, combine the broccoli and ham and pour sauce over.
- Sprinkle breadcrumbs over top, dot with remaining 2 tblsps butter and bake in a preheated 375F (190C) oven for 30 minutes, or until it is browned and bubbly.
HAM, CHEDDAR, AND POTATO GRATIN
Steps:
- Preheat an oven to 375 degrees F (190 degrees C). Butter a shallow 3-quart (3-liter) baking dish.
- In a small saucepan, combine the broth, cream, garlic and sage. Bring to a boil, then reduce the heat to low and simmer, uncovered, for 15 minutes.
- Meanwhile, trim any fat from the ham steak, if using, and remove and discard the center bone. Cut the ham steak or baked ham into 1/2-inch (12-millimeter) dice. Arrange one-third of the potatoes in a layer on the bottom of the prepared dish. Top with half of the diced ham and one-third of the shredded cheese. Repeat the layers of potatoes, diced ham and shredded cheese. Top with the remaining potatoes and the remaining cheese.
- Remove the broth-cream mixture from the heat. Remove and discard the garlic cloves. Season the broth-cream mixture to taste with pepper and pour over the layered vegetables, distributing it as evenly as possible. Bake, uncovered, until the potatoes are tender when pierced and the top is brown, about 1 hour. Remove from the oven and let stand for about 5 minutes before serving.

- Melt margarine in 10-inch skillet over medium-high heat. Cook ham and onion in margarine, stirring frequently, about 5 minutes or until onion is tender. Stir in Potatoes, Sauce Mix, hot water and pepper.
- Heat to boiling, stirring occasionally; reduce heat. Cover and simmer 10 minutes, stirring occasionally. Stir in carrots. Cover and simmer about 10 minutes, stirring occasionally, until potatoes are tender.
- Stir in cheese and broccoli. Cover and simmer about 5 minutes longer, stirring occasionally, until cheese is melted and broccoli is hot.

Steps:
- Combine potatoes, ham and onion in a greased 1 qt casserole dish and set aside.
- Melt butter in a med saucepan over med heat.
- Stir in flour until smooth.
- Gradually add milk, stirring constantly until mixture thickens and bubbles.
- Add cheese, salt and pepper.
- Stir until cheese melts.
- Pour over potatoe mixture and stir gently to mix.
- Bake in a 350 degree oven for 35 to 40 minutes or until bubbly.

- Preheat oven to 350 degrees F.
- Butter a 8 x 8-inch baking dish.
- In a medium bowl combine the fettucine, broccoli, and chopped red bell peppers; spoon into the buttered dish.
- In the same bowl, beat the cream cheese, 3/4 cup grated Parmesan, eggs, garlic, salt, and pepper with an electric mixer on medium speed until combined; stir in the cream.
- Pour cream cheese mixture over fettucine mixture and top with remaining Parmesan cheese.
- Bake for 30 minutes until hot and bubbly.

BROCCOLI AU GRATIN (SIMPLE AND EASY!)
I think this one is also from Quick Cooking, not sure. Anyway, it is as easy as it is delicious. I do add salt and pepper, by the way. If you like, add 1 cup sliced fresh mushrooms cooked in 2 tbsp of butter. You can also add 1 cup cut up cooked ham. Instead of the broccoli you can use frozen asparagus, cut up and make ASPARGUS AU GRATIN instead. Same for coliflower.

- Fill a medium-sized pot half full with water, bring to a boil. Put broccoli and cauliflower pieces into the water and cook at a low boil until the vegetables are just beginning to get soft.
