1 tablespoon canola oil
1 small yellow onion, diced
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder
1/4 teaspoon cayenne pepper
One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

2 tablespoons olive oil
1 (4-ounce) dry-cured chorizo sausage, chopped
1/2 onion, finely chopped
3 cloves garlic, finely chopped
1/2 jalapeno, seeded and diced
3 (15-ounce) cans black beans, drained and rinsed
1 canned chipotle chile plus 1 tablespoon adobo sauce
4 cups chicken broth
Sliced green onions, for serving
1/2 cup lowfat sour cream
1 teaspoon ground cumin
Juice of 1/2 a lime
Kosher salt and freshly ground black pepper

Steps:

  • For the soup: Heat the olive oil in a Dutch oven over medium-high heat. Add the chorizo, onions, garlic and jalapeno and saute until tender, about 4 minutes. Add the black beans, chipotle pepper, adobo sauce and broth and simmer for 25 minutes so all the flavors can marry together.
  • Blend half of the soup, using either a blender or an immersion blender, leaving some whole beans for texture.
  • For the sour cream: Mix all the ingredients in a bowl.
  • Taste for seasoning and plate topped with cumin lime sour cream and sliced green onions.

1 tablespoon olive oil
1 tablespoon butter
2 medium chopped onions
4 minced garlic cloves
2 teaspoons minced crumbled dried thyme
5 cups cooked black beans, with one cup of cooking liquid reserved (or use canned beans)
4 cups chicken broth
2 cups diced tomatoes (I use canned)
2 teaspoons ground cumin
2 teaspoons Tabasco sauce

Steps:

  • Melt butter and oil in a soup pot over medium heat. Add the onion and cook until the onion is soft and translucent.
  • Add the garlic and thyme and cook for an additional three minutes.
  • Add the remaining ingredients and bring to a boil. Reduce heat to medium low, cover, and simmer for 20-30 minutes, stirring occasionally.
  • Remove three cups of the soup from the pot and process until smooth, adding the puree back to the soup after it is pureed. (Do this in batches to avoid having hot black bean soup all over your ceiling!)
  • Reheat until the soup is thoroughly warmed again.

1 small red onion, diced
2 celery ribs, diced
1 red bell pepper, diced
1 chipotle pepper in adobo sauce, minced
1 tablespoon chili powder
1 teaspoon ground cumin
3 cups low-sodium vegetable broth
Two 15-ounce cans black beans
One 15-ounce can diced tomatoes
2 limes, zested and juiced
Salt and pepper, to taste
4 large eggs
Chopped fresh cilantro, for garnish

Steps:

  • Heat the oil in a large high-sided skillet or Dutch oven over medium-high heat. Add the onion, celery and bell pepper and cook, stirring, until they begin to soften, 4 to 5 minutes. Add the chipotle pepper, chili powder and ground cumin and cook, stirring, for an additional 30 seconds. Add the vegetable broth, black beans and diced tomatoes. Bring the mixture to a simmer, reduce the heat to medium and cook for about 15 minutes.
  • Add the lime zest and juice and season with salt and pepper to taste.
  • Use a spoon to create 4 small wells in the soup. Crack each egg into a small bowl and carefully drop one egg into each of the wells. Cover and cook until the eggs are set to your liking, about 5 minutes. Top with the fresh cilantro and scoop 1 egg into each of 4 bowls, then divide the rest of the soup among the bowls and serve.

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the garlic, onions, jalapenos and 1/2 teaspoon salt and cook, stirring occasionally, until softened, about 6 minutes. Add the cumin and coriander and cook, stirring, until fragrant, about 1 minute. Add the chicken broth and black beans with their liquid. Increase the heat to medium high and bring to a boil.   • Heat oil in large pan over a medium-high heat. Add onion, green chilies, garlic, jalapeno and cumin. Saute until onion is tender, about 5 minutes.
  • Add beans with juices and stock. Bring soup to boil. Reduce heat to medium-low; cover and simmer until flavours blend, about 15 minutes.

1 roasted red pepper, diced
1 jalapeno pepper, seeded and minced

1/2 teaspoon ground coriander

Steps:

  • Heat oil in soup pot on medium. Add onion and red pepper. Cook until onion is soft, 8-10 minutes.

This recipe is a spicy & hearty soup with a tex-mex taste. I was looking for a filling, good-enough-to-be-a-meal soup that was big on taste and light on fat/dairy. It is best when served with all the garnishes so that each bite has a slightly different mix of the fresh flavor. It can be easily modified to be vegetarian/vegan by using vegetable broth (or base) and soy cheese.

3 ham hocks
8 ounces chopped kielbasa (, or other sausage, if you love meat)
10 cups water (vegetable, chicken, or beef) or 10 cups stock (vegetable, chicken, or beef)
2 medium chopped onions
2 tablespoons minced garlic
1 (28 ounce) can Italian tomatoes
1 tablespoon crushed red pepper flakes
1/2 teaspoon cayenne pepper (optional)
1 -2 tablespoon freshly ground black pepper
2 tablespoons parsley or 2 tablespoons oregano (or any combination of those herbs)
freshly squeezed, lemon, juice of
salt

Steps:

  • If you've got time, cover beans with water and soak, covered, overnight.
  • Otherwise, cover beans with water and bring to a boil for a few minutes, then bring the heat down to low and simmer for 30 minutes or so.
  • Drain (this helps cut down on any, uh, gas issues).
  • Cover again with water, stock, or a combination.
  • Add ham hocks and bring heat back to medium.
  • Simmer for an hour or until beans are softened and meat is coming off the bones.
  • Add water or stock as needed throughout cooking process.
  • Remove ham hocks and set aside to cool.
  • Add onions, tomatoes (with juice), garlic, spice, salt and sausage (if desired).
  • Remove meat from ham hocks, shred into small pieces, and add to soup.
  • Continue to simmer until beans are very soft.
  • and tomatoes have broken down.
  • Add lemon juice.
  • Add salt and pepper to taste.
  • Serve with crusty, rustic bread and a green salad.

Spicy Black Bean Soup image

Easy, spicy, and healthy. This will fill you up, and warm you up as well. Serve it with fresh lime wedges for a citrus kick. You could also serve it over brown rice.

1 tablespoon vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1/4-1/2 teaspoon crushed red pepper flakes
2 (15 ounce) cans black beans, rinsed
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can vegetable broth
1 lime

Steps:

  • In a 3 quart sauce pan, heat oil over medium heat. Add onion and saute, stirring occasionally until tender. This takes about 5-7 minutes.
  • Stir in garlic and spices, cook for about a minute.
  • Stir in beans, broth, and can of tomatoes (including liquid from tomatoes). Add a pinch of salt, if you'd like.
  • Heat to high heat until soup is boiling. Reduce heat and simmer, uncovered, for about 15 minutes.
  • Spoon about 1/3 of mixture into a blender or food processor and pulse until smooth. You can do more or less, depending on how thick you want the soup or how many whole beans you want in it. Combine pureed mixture with rest of soup and serve with lime wedges.
