4-1/2 pounds pork loin ribs
1 1/2 teaspoons salt
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon pepper
1/2 cup water
1/4 cup balsamic vinegar
1 cup organic no sugar added ketchup
1 tablespoon organic Worcestershire sauce
1 teaspoon maple extract
1/4 teaspoon cumin
1/4 teaspoon salt
1 tablespoon unsweetened cocoa powder
1/2 teaspoon pure stevia extract

Steps:

  • Lay the baby back ribs on baking sheets. Set aside.
  • Stir together the salt, paprika, onion powder, garlic powder, cumin and pepper in a small bowl.
  • Spread this dry rub onto both sides of the ribs. Set aside.
  • Add the water, vinegar, ketchup, Worcestershire sauce, and maple extract into the crock pot and stir until combined.
  • In a small bowl stir together the salt, cocoa powder and stevia.
  • Whisk this into the crock pot then add the ribs on top of the sauce.
  • Cover and cook on low 10-12 hours or until meat is falling off the bones. During the last 2 hours of cooking coat the ribs with some of the sauce.
  • Coat the ribs with the rest of the barbecue sauce before serving.

2 baby back rib racks
For the dry rub
1 Tbsp paprika
1 Tbsp smoked paprika
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp dry thyme
1 tsp dry oregano
1 tsp dried basil
1 tsp ground black pepper
1 tsp cayenne pepper
salt to taste
Other ingredients
1 cup chicken stock ((water works too))
1 Tbsp apple cider vinegar
1 tsp liquid smoke ((optional))
¼ cup BBQ sauce of choice ((use sugar free if you want the ribs to be keto, paleo or whole 30))

Steps:

  • If the butcher hasn't removed the membrane on the underside of the ribs, you have to do it on your own. You need to insert a small knife under the membrane until it starts to peel off. Then pull it with your fingers. You can also use a paper towel to help you pull the membrane and to prevent slipping.
  • Mix all the dry ingredients for the rub in a small bowl/jar. Place the ribs on a large baking sheet and rub them with the dry spices. Make sure you have covered both sides of the rib racks. Salt them well.
  • Add the stock the vinegar and the liquid smoke in bowl and stir. Pour the mixture at the bottom of the baking sheet.
  • Cover the ribs tightly with aluminum foil.
  • Preheat a grill or oven to 250F. I usually make them on a gas grill. I start one burner on the lowest possible setting and place the ribs away form that burner.
  • Cook the ribs at 250F for at least 4 hours. Do not remove the foil.
  • After 4 hours remove the ribs from the oven or grill. Preheat a grill or a griddle cast iron pan to high. Carefully remove the foil. It will be steamy. Glaze the ribs with the BBQ sauce and place them on the grill (or heated pan). Cook 3-4 minutes per side.
  • Serve them while they are still warm.

2 full racks baby back ribs
2 tbsp olive oil, divided
2 tbsp BBQ Dry Rub for Chicken and Pork ((or your favorite))
salt and pepper
1/2 cup Keto BBQ Sauce ((or your favorite))

Steps:

  • Remove the skin off the back (bone side) of each rack of ribs: Using a thin paring knife (or flathead screwdriver), slide it under the clear membrane over one of the bones. Lift up to separate and pull-off with your fingers or with a paper towel. It comes off in sheets and takes a little time. Be patient.
  • Line a large sheet pan with aluminum foil. Preheat oven to 275 F and move rack to middle position.
  • Dry the ribs with paper towels and rub olive oil on both sides of ribs, 1/2 tbsp per side. Season the back of the ribs with salt and pepper, then apply 1/2 tbsp of the dry rub and massage into the ribs. Flip the racks over and repeat on the meat side.
  • Cover the ribs with foil, sealing around the outside rim of the baking sheet, and cook 2 - 2 1/2 hours or until the tines of a fork slide easily between the ribs.
  • Remove the foil cover and place the ribs on a rack fitted into the sheet pan. Sprinkle more salt and pepper and dry rub over the ribs and cook an additional 20-30 minutes uncovered.
  • Turn the broiler to high and place the oven rack to the closest position. Remove the foil cover and flip the ribs bone side up. Slather the back of the ribs with bbq sauce, approximately 2 tbsp each. Place the ribs under the broiler for 3-5 minutes or until the sauce begins to darken in spots. The time will depend on your oven broiler. Remove the ribs from the oven, flip them over and repeat.
  • Serve 4 ribs per person. Net Carbs per 4 ribs with ingredient amounts stated: 2.79g net carbs

12 ounces diet cola
2 slices of thick bacon, chopped fine
1/2 cup chopped onion
1 garlic clove, minced
6 ounces tomato paste
12 ounces diet cola (sugar-free , Splenda-sweetened preferred)
1/4 cup low-carb ketchup (sugar-free or see note)
3 tablespoons mustard
1 tablespoon Worcestershire sauce
1 pinch ground cloves
hot sauce

Steps:

  • Sprinkle the ribs with salt, pepper, garlic powder, and chili powder. Pat the spices in, and put ribs in the refrigerator for at least an hour.
  • Wrap the ribs loosely in heavy-duty foil, sealing the sides. (If you are using the slow cooker/crock pot, skip this step.) Pour half a can of diet cola into the packet (or crock pot). (If you don't like any sweetness in your ribs, or if you just prefer not to use soda, white wine works well, or even white wine with a few drops of sweetener.).
  • Put the ribs in a covered grill with low heat (either charcoal or gas), or on a baking sheet in the oven. Cook at 250 F for 2 to 2 1/2 hours or at 350 F for 1 1/2 hours. In the crockpot, cook for 8 hours low. Check every 45-60 minutes, add liquid if necessary (it probably won't be, but the amount of juice in the ribs does vary), and turn the ribs over.
  • Open the foil, and brush the ribs with sugar-free BBQ sauce. Grill on medium to medium-high heat for 10 minutes on each side. Serve with sauce to dunk ribs inches.
  • Sugar Free BBQ Sauce.
  • Note: If you can't find low carb catsup, leave it out, but add about a tablespoon of vinegar and some sweetener, to taste.
  • Fry the bacon in a saucepan - a 2 qt pan works well.
  • Add the onion and cook over medium until soft - 3-5 minutes. Add garlic at this point if you're using fresh and stir it for half a minute or so.
  • Add the rest of the ingredients, plus about half a cup of water. Stir well.
  • Simmer for 20-30 minutes. It will cook down a bit and flavors will combine.
  • Adjust the seasonings so you have the balance you want - you can add vinegar, artificial sweetener (liquid preferred), or hot sauce. (If it's too hot, adding more sweetener will tone it down.).
  • The recipe makes approximately 10 servings of 1/4 cup each. Each serving has about 3.5 grams of carbohydrate plus 1 gram of fiber.
