SPICY BANANA CURRY
This recipe finds its harmony in the way the bold, bursting flavor of curry interacts with the soft sweetness of bananas and smooth yogurt. Steps:
- Heat the sunflower oil in a large saucepan over medium heat. Stir in the onions, and cook until the onions have softened and turned translucent, about 5 minutes. Sprinkle in the curry powder, cumin, turmeric, salt, sugar, ginger, chili powder, cinnamon, and black pepper. Cook and stir until fragrant, about 1 minute.
- Stir in the curry paste and pressed garlic. Cook for about 1 minute. Pour in the tomato sauce and yogurt, and bring to a simmer. Stir in the diced banana, and simmer gently for 3 minutes. Mix in chopped tomatoes, and continuing to simmer 1 minute more. Stir in the coconut flakes just before serving.

- Sizzle the oil with chopped onion, sliced ginger, crushed garlic, curry powder, allspice, and thyme for a few minutes until fragrant.
- Next, add sliced chillies, chopped tomatoes, coconut milk, and a bit of water. Simmer the curry for 10 minutes.
- Add the bananas sliced into chips to the curry and cook for 5 minutes.
- Tip in the prawns and lime juice, then cook the curry for a further 5 minutes. Serve with steamed rice and garnish with thyme.

SPICY BANANA & MANGO CHUTNEY
Spicy Banana & Mango Chutney - the perfect accompaniment to any curry or cheeseboard.

Steps:
- Dry fry the cumin seeds in the base of a preserving pan, stirring constantly for about a minute until golden.
- Add the vinegar and water plus all the other ingredients except the lime juice and zest.
- Cook over a low heat, stirring, to dissolve the sugar.
- Bring slowly to the boil.
- Lower heat to a simmer, keep stirring, (you don't want it to stick) and cook for 45 minutes or until there's just a single layer of liquid on the surface.
- Add lime juice and zest and simmer, still stirring, for another 5 minutes.
- Ladle into hot sterilized jars and seal immediately, labelling when cool. (I used 3 x 500 ml jars with a little spare).
- Store in a cool, dark place for 6 - 8 weeks before using.
- Refrigerate after opening.
SPICY BANANA SOUP
Bananas with a kick to it. I had this at a friends house it was really quite tasty. Very easy and quick to make.

Steps:
- Peel and dice onion.
- Clean and dice the chili pepper.
- Heat 1 Tbsp oil in a meium sauce pan and sauté onion and pepper until soft but don't brown.
- Add orange juice, zest, and 2 cups vegetable broth.
- Stir in the ketchup.
- Cover pot bring to boil, low heat to medium and cook for 5 minutes.
- Add two of the bananas to the soup and puree.
- In a dry frying pan roast the grated coconut, until lightly browned, then let cool slightly on a plate.
- Peel and slice the last banana, coat with the coconut by pressing the banana slices slightly and turning then pressing again.
- In a frying pan heat 1 tbsp oil, then fry the coated banana slices on both sides.
- To serve laddle the soup into bowls then float the fried banana slices on top, sprinkle any left over coconut on top. Can garnish with finely sliced chili pepper rings and fine herbs.
- Enjoy.
