Spicy Guacamole is the ultimate party appetizer and it always disappears fast. We've dialed in the correct ratios of avocados to onions and lime juice to give this authentic flavor.

3 large avocados
3 Tbsp lime juice (freshly squeezed from 1 1/2 limes)
1 medium tomatoes (seeded and diced)
1/2 white onion (finely chopped)
1/2 cup cilantro (from 1/2 bunch)
2 serrano peppers (finely chopped (or use jalapenos for milder guac))
2 cloves garlic (pressed)
1/2 tsp sea salt (or to taste)
1/4 tsp ground black pepper (or to taste)
1/2 tsp ground cumin

Steps:

  • Cut avocados in half, remove the seeds and scrape them out into a flat bottomed bowl. Smash with a potato masher or a fork. Squeeze lime juice directly over avocados.
  • Chop onion and add it to the bowl. Remove seeds from jalapenos, finely dice and add to the bowl.
  • Cut the tomato in half parallel with the top and remove seeds. Dice your tomatoes and add them to your bowl.
  • Press garlic and chop your cilantro than add them to the bowl.
  • Add 1/2 tsp dry cumin powder, 1/4 tsp freshly ground black pepper, 1/2 tsp salt and serve right away.

1 pound sliced bacon
1 cup packed light brown sugar
1/2 teaspoon ancho chile powder
1/4 teaspoon coarsely ground black pepper
1/4 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 325 degrees F. Line two rimmed baking sheets with parchment.
  • Pat the bacon dry. Mix the brown sugar, chile powder, black pepper and cayenne together and spread out on a large plate. Press both sides of each bacon strip into the sugar mixture until coated and then arrange on the prepared baking sheets. Sprinkle with any remaining sugar mixture.
  • Bake until the bacon is golden and glazed, turning once, 20 to 25 minutes. Transfer to a wire rack to cool.

2 ripe avocados

1/2 teaspoon ground cumin

1/2 small red onion, finely chopped, about 1/4 cup
2 to 4 tablespoons drained jarred pickled jalapeño slices, chopped, plus 2 teaspoons brine
1 plum tomato, seeded and chopped
tortilla chips, for serving

Steps:

  • Place the bacon in a large skillet and set over medium heat. Cook, turning, until crispy, 8 to 10 minutes. Transfer to a paper-towel-lined-plate to drain. Meanwhile, halve and pit the avocados. Scoop the avocado into a medium bowl and add the lime juice, cumin, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Mash with a fork until combined but still a bit chunky. Add the red onions, pickled jalapeños, brine and tomatoes, reserving a few pieces of tomato for garnish. Crumble the bacon into the bowl, saving a spoonful for garnish, and stir together to combine. Garnish with the reserved tomato and bacon and the additional pickled jalapeños. Serve with tortilla chips.

  • Preheat oven to 450 degrees. Slice off the top of the garlic head and place it in the center of a piece of foil. Drizzle with oil and wrap the foil around it. Roast for about 45 - 60 minutes, until the garlic is soft and squishy when you squeeze it gently through the foil. Remove from the oven, unwrap and let cool.
  • While the garlic is roasting, start cooking the bacon on the stove. When the bacon is almost done, add the onion and cook over medium heat for about 2-3 minutes, until it is tender. Remove from the heat and set aside.
  • Place the avocados in a bowl with the roasted garlic cloves (they should easily squeeze out of the head of garlic) and mash the mixture with a fork or potato masher. Add the lime juice and the cayenne and mash the mixture until it is the consistency you like. I preferred it with some small chunks still remaining.
  • Stir in the onion and the bacon. Taste and add salt as needed, 1/4 teaspoon worked for me. Enjoy!
