Canola oil (for frying; about 5-7 cups)
1 1/2 cups all-purpose flour
1 1/4 cups sugar, divided
1 teaspoon ground cinnamon, divided
Kosher salt
1 1/2 cups cold beer (preferably lager or pilsner)

  • Whisk pepper, cardamom, 1/8 tsp. salt, and remaining 3/4 cup sugar and 1/4 tsp. cinnamon in a medium bowl.

SPICED THANKSGIVING SUGAR COOKIES

Spiced Thanksgiving Sugar Cookies image

The dough for these spiced autumn cookies is easily made in a food processor, much like pie dough, but with softened butter. We pulse the sugar first to finely grind it, which gives the cookies their tender and crunchy texture. Have fun with decorating-make fall leaves or turkeys using halved candy corns or pecans for the tail feathers.

Provided by Food Network Kitchen

Categories     dessert

Time 2h30m

Yield About 2 1/2 dozen cookies and 2 cups icing

Number Of Ingredients 12

1 cup granulated sugar
2 1/2 cups all-purpose flour
1 teaspoon pumpkin pie spice
1/4 teaspoon baking powder
Fine salt
12 tablespoons (1 1/2 sticks) unsalted butter, cut into small pieces, at room temperature
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
2 tablespoons meringue powder
One 1-pound box confectioners' sugar (3 3/4 to 4 cups)
Food coloring, as desired
Candy corns, pecans and sanding sugar

Steps:

  • For the cookies: Put the sugar in a food processor and pulse a few times to finely grind. Add the flour, pumpkin pie spice, baking powder and 1/2 teaspoon of salt and pulse just to combine.
  • Add the butter and pulse until all of the butter is incorporated into the flour and the mixture is sandy. Add the egg and vanilla and pulse until the mixture comes together in big clumps.
  • Turn the dough out onto a clean work surface and knead a few times to form a ball. Divide the dough in half, pat into 2 discs about 1/4-inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour.
  • Position an oven rack in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Let the dough sit at room temperature for a few minutes to make rolling easier. Put 1 disc of dough between 2 pieces of parchment paper and roll out the dough to 1/8-inch thick. Cut out with desired cookie cutters and arrange on one of the prepared baking sheets about 2 inches apart. Bake until the bottom of the cookies are golden brown, 10 to 12 minutes. Cool on the baking sheet until firm enough to transfer to a rack to cool completely. Repeat with the remaining dough. Gently gather any scraps into a ball and press into another disc. Chill the disc until firm enough to roll and cut out as many cookies as possible.
  • For the icing: Sift the meringue powder and confectioners' sugar together in a large bowl and add 6 tablespoons water. Beat with an electric mixer on medium-high until the mixture is glossy and soft peaks form, 3 to 4 minutes. Add food coloring if using or divide into several batches and color with different shades of food coloring. Decorate cookies as desired. The cookies can be store in an airtight container at room temperature for up to 3 days.

Categories     Cake     Tea     Dessert     Kid-Friendly     Fall     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield 12 doughnuts

Number Of Ingredients 24

For the Spiced Sugar:
1 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/8 teaspoon ground cardamom
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
For the doughnuts:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 cup sugar
2 tablespoons unsalted butter, room temperature
1 large egg, room temperature
1/3 cup buttermilk
2 tablespoons freshly brewed chai tea
2 quarts canola oil (for frying)
Special equipment:
A 3" round cutter, 1" round cutter, deep-fry thermometer

Steps:

  • Make the Spiced Sugar:
  • Whisk sugar, cinnamon, salt, cardamom, ginger, and nutmeg in a large bowl until well combined.
  • Make the doughnuts:
  • Combine flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger, and nutmeg in a large bowl.
  • Beat sugar and butter in the bowl of a stand mixer fitted with the paddle attachment on medium speed until smooth, about 3 minutes.
  • Add egg and continue to beat, scraping down sides of bowl as needed, until incorporated. Reduce speed to low and gradually add buttermilk and tea, beating just until combined. Gradually add dry ingredients and beat just until dough comes together.
  • Turn out dough onto a large piece of parchment paper and cover with a second sheet of parchment. Using a rolling pin, roll dough between parchment sheets to about 1/3" thick. Transfer dough in parchment to a rimmed baking sheet and freeze until firm, about 20 minutes.
  • Peel off top sheet of parchment. Working on bottom sheet, punch out as many rounds as you can with 3" cutter, then use 1" cutter to punch out center of each round. Gather doughnut holes and scraps and re-roll; repeat process 3-4 times until all dough has been used (you should have 12 doughnuts). Place doughnuts on a second parchment-lined baking sheet and freeze until slightly chilled, about 5 minutes.
  • Pour oil into a heavy-duty pot to a depth of 2" and fit pot with deep-fry thermometer. Heat oil to 375ºF. Working in batches, fry doughnuts until deep golden brown, about 1 minute per side. Transfer to a wire rack lined with paper towels and let cool 2-3 minutes. Toss doughnuts in Spiced Sugar.

OLIVE OIL APPLE CAKE WITH SPICED SUGAR

Olive Oil Apple Cake with Spiced Sugar image

This dairy-free cake hits all the right autumnal notes: it's earthy thanks to the olive oil, warm thanks to the spices. Just be sure to choose your apples wisely-a softer type will melt into the cake, while firmer apples (such as Granny Smith) will give the cake a coarser texture.

Provided by David Tamarkin

Categories     Dessert     Cake     Dairy Free     Apple     Cinnamon     Cardamom     Ginger     Egg     Vanilla     Olive Oil

Yield Makes one 9x5" cake

Number Of Ingredients 14

1 cup mild extra-virgin olive oil, plus more for pan
1/2 cup plus 2 tsp. (100 g plus 10 g) granulated sugar, plus more for pan
2 sweet apples, such as Golden Delicious or Gala
1 tsp. ground cinnamon
1/2 tsp. freshly ground black pepper
1/2 tsp. ground cardamom
1/2 tsp. ground ginger
1 1/2 cups (185 g) all-purpose flour
2 tsp. baking powder
2 large eggs
2 egg yolks
1/2 cup (100 g) (packed) brown sugar
1 tsp. vanilla extract
1/2 tsp. kosher salt

Steps:

  • Preheat oven to 350°F. Pour about 1 Tbsp. oil into a 9x5" loaf pan and coat bottom and sides with fingertips. Sprinkle granulated sugar onto sides and bottom of pan to lightly coat.
  • Grate apples, peel and all, on the large holes of a box grater. Gather apples in a clean kitchen towel and wring out excess liquid. Be aggressive! You want them as dry as possible when they go into the batter.
  • Whisk cinnamon, pepper, cardamom, and ginger in a medium bowl. Transfer 1/4 tsp. spice mixture to a small bowl; set aside. Add flour and baking powder to remaining spice mixture and whisk to combine.
  • Whisk together eggs, egg yolks, brown sugar, vanilla, salt, and 1/2 cup granulated sugar in a large bowl. Continue whisking vigorously until lightened in color and thickened. Whisking with one hand and pouring with the other, slowly stream 1 cup oil into egg mixture until combined. Gently fold flour mixture into whipped eggs with a flexible rubber spatula just until combined, taking care not to overmix.
  • Fluff up grated apples and scatter over batter. Gently fold to incorporate.
  • Transfer batter to prepared pan; smooth top. Add 2 tsp. granulated sugar to reserved spice mixture and mix to combine. Sprinkle spiced sugar evenly over top of batter.
  • Bake cake until deep golden brown and a tester inserted into the center comes out clean, 60-70 minutes. Let cake cool in pan. Run a butter knife or offset spatula along edge of cake to loosen and invert onto a platter.
  • Do Ahead: Cake can be made 3 days ahead (the flavor gets slightly more intense each day). Store in an airtight container at room temperature.

OLD ENGLISH SPICED AND FRUITED SUGAR FOR APPLE PIES ETC!

Old English Spiced and Fruited Sugar for Apple Pies Etc! image

An easy spiced and fruited sugar, which really adds a "zing" to your apple pies, apple crumbles, cake toppings, baked desserts etc. This spiced sugar mix is based on a 400-year-old English recipe. Spiced sugars were extremely popular in England many centuries ago, they disguised a multitude of sins; and, as spices & citrus fruits were still new & seen as extremely exotic, they were held in high regard and enjoyed especially by Royalty and the Gentry!

Spiced Sugar Apple Pie Light image

I used French Tart's "Recipe #219453" as inspiration for a lighter apple pie, after apple picking. This is a crumb crust and uses little sugar. Feel free to add more if your apples are especially tart. I use Pillsbury Ready Crust, but feel free to make your own. I use a combination of apples tart and sweet.

JAMIE'S SPICED SUGAR AND CHRISTMAS POPCORN RECIPE

Jamie's Spiced Sugar and Christmas Popcorn Recipe image

This Jamie Oliver sugar mix really does smell like Christmas (although you are not limited to eating it only at Christmas!). The sugar recipe makes loads, (but is easily halved) and it keeps in an airtight container for absolutely ages and can be used on a variety of things (to sweeten whipped cream, on porridge, on fruit--you name it...), so it's well worth doing a full batch. I don't usually do sweet popcorn, but I like this one!

Provided by Noo8820

Categories     Lunch/Snacks

Time 20m

Yield 1 batch

Number Of Ingredients 12

3 fresh bay leaves
2 oranges, zest of, finely grated
2 lemons, zest of, finely grated
6 whole cloves
1/2 teaspoon ground cinnamon
whole nutmeg (10 gratings)
1 vanilla pod, halved lengthways
1 kg caster sugar, unrefined if possible
olive oil
1 slice butter
250 g popcorn
6 tablespoons spiced sugar

Steps:

  • SPICED SUGAR:.
  • Put all of the sugar ingredients, except the sugar into a food processor and whiz until well blended and fine. Add the sugar and whiz again to combine everything together.
  • Spread the sugar out on a tray to dry out for a couple of hours before using, as it will be slightly moist at this stage.
  • Once dry, sieve the sugar to catch any large pieces and discard them. Keep the sugar in an airtight container. It will keep for ages!
  • POPCORN:.
  • Put the oil and butter into a pan on high heat. Once the butter has melted, add the popcorn and stir well to coat. Cover and leave to pop, shaking occasionally.
  • Put the sugar into a large bowl and when the popcorn is ready, add it to the bowl, tossing quickly to coat it with the sugar.

A DAMN GOOD HOMEMADE SPICE RUB (SUGAR-FREE) | PHOTOS & FOOD
Spice rubs can eventually start drying out your foods, so the duration of time you leave on the rub before cooking the food mainly depends on the type of meat/veg and its size. I always recommend a more immediate cook, after application, for more delicate meats like chicken breast or fish, and for vegetables.
