This Cucumber raita is refreshing, cooling and comforting to the palate. You can make this just under 10 minutes with only a few ingredients. Serve it as a side in any meal, with biryani or pulao.

1 cup cucumber (chopped )
1½ cup yogurt ((thick, more if needed))
¼ teaspoon salt (as needed)
½ teaspoon roasted ground cumin ((jeera powder, refer notes))
¼ teaspoon ground black pepper (( or cayenne pepper, adjust to taste))
2 tablespoons coriander leaves ((cilantro finely chopped))
½ teaspoon chaat masala ((optional, for garnishing))
4 to 5 mint leaves ((optional, finely chopped))
1 green chili pepper ((seeded and chopped))

Steps:

  • Rinse cucumber and peel it. Chop to tiny bite size pieces (about ¼ to ½ inch). If you prefer you may even grate it. Grated cucumbers let out moisture so make sure you use only greek yogurt if you want to grate them. Otherwise cucumber raita becomes runny.
  • Also fine chop coriander and mint leaves (optional).
  • Deseed the green chilli and chop. (optional)
  • Whisk chilled yogurt in a large mixing bowl.
  • Add chopped cucumber, green chilies, coriander leaves, mint leaves and salt. Mix all of them.
  • Taste test and add more salt if needed. Drizzle cumin powder, ground black pepper & chaat masala (optional).
  • Serve cucumber raita as a side in an Indian meal. It is usually eaten with Vegetable biryani or chicken biryani.
  • Cucumber raita is best served fresh but can be chilled for a few hours.

1 medium cucumber
1 teaspoon cumin seeds
2 cups plain, whole-milk yogurt
1 clove garlic, peeled and minced
2 tablespoons fresh coriander or mint leaves, chopped
cayenne or paprika to garnish

Steps:

  • Peel cucumber. Cut lengthwise into 1/4-inch strips, then into thin slices crosswise. Blot off moisture with paper towels. Toast cumin seeds for a few seconds in a small, heavy frying pan over high heat. In a bowl, stir yogurt until it is smooth. Mix it with the cumin, garlic and coriander or mint leaves. Combine mixture with cucumber slivers, sprinkle with cayenne or paprika, and chill before serving.

1 whole cucumber, washed, topped and tailed
500ml (2 cups) plain yogurt
1 garlic clove, peeled and crushed
5ml (1 tsp) ground cumin
30ml (2 tbsp) fresh mint leaves, finely chopped
Salt and cayenne pepper, to taste

Steps:

  • Grate the cucumber then drain the excess water created in the process.
  • Place the grated cucumber in a large bowl then stir in the yogurt, garlic and cumin.
  • Season with salt and pepper and top with mint leaves.
  • Serve as a starter with pappadums or as a side dish to an Indian meal.

1 English cucumber, peeled, seeded and grated
1/4 cup fresh lemon juice (about 1 lemon)

Steps:

  • Line a colander with cheesecloth or muslin. Place a large bowl under the colander. Place yogurt in colander and let sit at room temperature for about four hours or cover and refrigerate overnight. Discard the liquid that has drained into the bowl and proceed with the recipe. Add the onion, cucumber, lemon juice, mint and cilantro and mix well.

6 about 1 1/2 pounds kirby cucumbers
1 teaspoon salt
2 cups plain low-fat yogurt
1/2 cup loosely packed fresh mint leaves, chopped
1 1/2 teaspoons sugar
1 tablespoon fennel seed
1 tablespoon mustard seeds
1 tablespoon cumin seed
2 teaspoons salt
1 teaspoon whole black peppercorn
1 teaspoon dried thyme leaves
3 whole cloves
3 garlic cloves, crushed with garlic press
2 tablespoons fresh lemon juice
3 1/2 lbs boneless butterflied leg of lamb, trimmed
mint sprig, for garnish

Steps:

  • Prepare Cucumber Raita: With vegetable peeler, remove several strips of peel from each cucumber. Cut each cucumber lengthwise in half; scoop out seeds. Cut each half lengthwise in half, then crosswise into 1/2-inch-thick pieces. In medium bowl, toss cucumbers with 1/4 teaspoon salt; let stand 10 minutes. With hand, press cucumbers to remove as much liquid as possible; drain off liquid. Stir in yogurt, mint, sugar, and remaining 3/4 teaspoon salt. Cover and refrigerate until ready to serve or up to 6 hours. Makes about 4 cups.
  • Prepare Spiced Lamb: In spice grinder or coffee grinder, blend fennel, mustard, cumin, salt, peppercorns, thyme, and cloves until finely ground.
  • In small bowl, mix garlic and lemon juice with ground spices until blended. Rub spice mixture over both sides of lamb.
  • Place lamb on hot grill rack over medium-low heat; cook 25 minutes for medium-rare or until desired doneness, turning lamb over once. Thickness of butterflied lamb will vary throughout; cut off sections of lamb as they are cooked and place on cutting board. Thinly slice lamb and arrange on platter; garnish with mint sprigs. Serve with Cucumber Raita.

Steps:

  • Tip the yogurt into a food processor with the mint, coriander and ½ tsp salt, then blitz until smooth. Halve the cucumber lengthways and remove the seeds with a teaspoon. Discard the seeds, then thinly slice. Stir into the herby yogurt just before serving.

1 small cucumber
1 teaspoon cumin seed
1/2 cup plain yogurt
1/4 teaspoon salt
1/4 teaspoon paprika

Steps:

  • Peel cucumber and cut lengthways in half. Slice each half finely.
  • Heat a small pan over a low heat and toast cumin seeds until they darken a little and smell fragrant. Allow them to cool, then crush with a rolling pin or pestle and mortar.
  • Beat the yoghurt until smooth, then stir in the cumin and salt.
  • Add the cucumber to the yoghurt, then transfer to a serving dish and garnish with cucumber slices and paprika.

1 slice white bread
750 g chicken breast fillets, fat trimmed, roughly chopped
1/2 cup mint leaf, finely chopped
1 1/2 teaspoons ground turmeric
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons coriander seeds
2 tablespoons oil
1 lebanese cucumber
1 cup Greek yogurt
1/4 cup flat leaf parsley, finely chopped
1/4 cup mint leaf, finely chopped
1 lemon, rind finely grated, juiced

Steps:

  • Place bread in a food processor. Processs until breadcrumbs form. Add chicken, mint, turmeric, paprika, cumin and coriander seeds. Process until mixture comes together. Using 1/4 cup mixutre pet patty, make twelve 1cm thick patties.
  • Heat oil in a non-stick frying pan over medium-high heat. Cook patties, in batches, for 2-3 minutes each side or until cooked through. Transfer to a plate and cover with foil to keep warm.
  • Raita: - Best made for immediate use as per Jubes review.
  • Meanwhile, using a vegetable peeler, peel long, thin strips from cucumber. Place cucumber, yoghurt, parsley, mint, 1 teaspoon lemon rind and 1 tablespoon lemon juice in a bowl. Season with salt and pepper and stir to combine.
  • Serve patties with normal burger fixings, using Raita as the sauce.

2 garlic cloves
1 tbsp rapeseed oil
1 large onion , quartered and sliced
thumb-sized piece ginger , chopped
1 cinnamon stick
½ tsp cumin seeds
seeds from 8 cardamom pods
1 tsp ground turmeric
1 tsp ground coriander
1 red chilli , halved, deseeded and sliced
1 large red pepper , deseeded and diced
50g freekeh
350ml vegetable stock (made with 2 tsp reduced-salt bouillon powder)
25g sultanas
½ pack coriander , chopped
40g cashew nuts
1 garlic clove
150ml pot bio-yogurt
¼ cucumber , grated
2 tbsp chopped mint

Steps:

  • Chop the garlic for the pilau and set aside. Finely grate the garlic for the raita and put in a bowl. Heat the oil for the pilau in a large open pan, and fry the onion and ginger for 5 mins until softened. Stir in the whole and ground spices, and cook for a few secs to release their aromas. Add the chilli, red pepper and freekeh, stir briefly, then tip in the stock and sultanas. Simmer for 15 mins until the freekeh is tender but still nutty, adding the chopped garlic for the final 2 mins. The stock should have reduced and absorbed into the freekeh now.
  • Meanwhile, finish the raita by stirring the yogurt, cucumber and mint into the grated garlic.
  • When the pilau is cooked, stir in the coriander and cashews, and serve with the raita.
