1 1/2 cups pinot noir
12 dried figs, halved if small, quartered if large
Base Cranberry Sauce, recipe follows
2 tablespoons high-quality balsamic vinegar
2 tablespoons canola oil
1 tablespoon grated ginger
1 large shallot, finely diced
3/4 cup brown sugar
1/2 cup honey
1/4 cup orange juice
1/4 cup granulated sugar
Pinch kosher salt
1 pound fresh or frozen cranberries

Steps:

  • Bring the wine to a simmer in a small saucepan. Remove from the heat, add the figs and let soak until soft, about 30 minutes. Drain, and add the chopped figs to the Base Cranberry Sauce and cook another minute or so. Stir in the balsamic vinegar, and, if desired, stir some of the soaking liquid into the finished sauce.
  • Heat the canola oil in a large pot over medium heat. Add the ginger and shallots and cook, stirring, until soft and fragrant, about 3 minutes. Stir in the brown sugar, honey, orange juice, granulated sugar, and salt. Cook, stirring, until sugar dissolves and mixture is nice and bubbly.
  • Add half the cranberries and cook, stirring occasionally, until the cranberries pop and the mixture thickens, about 5 minutes. Add the remaining cranberries and cook another 5 minutes or so.

6 whole allspice
2 cinnamon sticks
1 3x1-inch strip orange peel
1 12-ounce bag fresh cranberries

Steps:

  • Combine all ingredients except cranberries in medium saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Reduce heat and simmer until reduced to 1 3/4 cups, about 10 minutes. Strain syrup into large saucepan. Add cranberries to syrup and cook over medium heat until berries burst, about 6 minutes. Cool. Transfer sauce to medium bowl. Cover and refrigerate until cold. (Can be made 1 week ahead. Keep refrigerated.)

Red wine, raspberries, and cinnamon make for a special - yet still surprisingly simple - homemade cranberry sauce. Tart, just a bit jammy, and warmly spiced. Love!

12 ounces fresh or frozen cranberries
6 ounces fresh or frozen raspberries
1/2 cup honey + more to taste (can substitute granulated sugar [will not be refined-sugar free] or pure maple syrup)
3/4 cup red zinfandel wine (not white zinfandel!)
1/2 teaspoon ground cinnamon

Steps:

  • Rinse cranberries and discard any unripe or shriveled berries. Pick over raspberries and do the same. Place in a medium saucepan over medium heat. Add 1/2 cup honey, zinfandel, and cinnamon.
  • Cook uncovered, stirring occasionally, until cranberries pop and the sauce has thickened, about 20 minutes. Taste and add additional honey until the sauce has reached your desired level of sweetness. Remove from heat and let cool. Serve.
  • Keeps for up to one week refrigerated in an airtight container, or for up to two months in the freezer.

Cranberry sauce with a little spice and everything nice. Most of my family doesn't usually like cranberry sauce, but this one is always eaten - and on more than just turkey.

12 ounces bag cranberries, picked over (float them in a large bowl or pan, those that sink should be disgarded)
1/2 cup honey
3 tablespoons brown sugar, firmly packed (or to taste)
2 cinnamon sticks (1/4-1/2 teaspoon ground cinnamon)
6 whole cloves (1/4 teaspoon ground cloves)
1/4 teaspoon nutmeg, freshly grated (or to taste)
1/2 teaspoon ginger, freshly grated
1 tablespoon orange zest
3/4 cup orange juice

Steps:

  • I like to break up my cinnamon sticks and put the cinnamon pieces and the whole cloves in a tea ball or bouquet garni bag. Otherwise you have to fish out the cinnamon and cloves later.
  • In a heavy-bottomed saucepan combine the cranberries, the honey, the brown sugar, the cinnamon sticks, the cloves, the nutmeg, fresh grated ginger, orange zest and orange juice. Simmer the mixture, covered, stirring occasionally, for 5 to 10 minutes, or until almost all of the cranberries have burst and the mixture is thickened. (If you prefer more whole berries in your sauce, leave more intact. If you prefer a more jellied consistency, use an immersion blender to leave fewer whole pieces.) Remove cinnamon sticks and cloves. Transfer the sauce to a bowl and let it cool before serving.
  • The sauce may be made 2 days in advance and kept covered and chilled. Serve the sauce at room temperature. You may also serve the sauce with cream cheese to be spread on crackers for an appetizer.

1 (6 ounce) package dried sweetened cranberries
1 1/2 cups zinfandel

Steps:

  • Combine first three ingredients in a medium saucepan.
  • Bring mixture to a boil and then reduce heat to a very low simmer.
  • Simmer mixture for 1-1 1/2 hours or until thick and cranberries soft.

1 10-ounce bag fresh cranberries

Steps:

  • Simmer and steep diced figs in 1 cup of red wine; set aside. Combine all other ingredients EXCEPT cranberries in medium saucepan. Bring to boil over medium-high heat, stirring until sugar sidles. Reduce heat and simmer until reduced to 1 ¾ cups, about 10 minutes. Strain syrup into large saucepan. Add cranberries and figs (with red wine) to syrup and cook over medium heat until berries burst, about 6 minutes. Cool. Transfer sauce to medium bowl. Cover and refrigerate until cold. (Can be made 1 week ahead. Keep refrigerated).

6 ounces dried calimyrna figs, stems trimmed and figs coarsely chopped (1 cup)

3/4 cup sugar
3 (3- by 1/2-inch) strips orange zest

Steps:

  • Bring wine to a boil with figs in a small saucepan, then remove from heat and steep figs, covered, until tender, about 30 minutes. Strain mixture through a sieve into a medium heavy saucepan and reserve figs in a small bowl.
  • Add cranberries, sugar, and zest to wine and bring to a simmer over medium heat, stirring until sugar has dissolved. Adjust heat and continue to simmer, uncovered, stirring occasionally, until cranberries burst and mixture is thickened slightly, 10 to 15 minutes. Remove from heat and discard orange zest strips, then stir in figs. Let cool completely.
