SOUTHERN BRUNCH CASSEROLE

2 large unpeeled baking potatoes, cut into cubes
1/4 cup butter or margarine
1/4 cup all-purpose flour
1 cup milk
1 cup half-and-half
4 cups shredded sharp Cheddar cheese (16 oz)
1 teaspoon Italian seasoning
1/2 teaspoon pepper
12 hard-cooked eggs, sliced
1 lb bacon, crisply cooked, coarsely crumbled
2 cups soft whole wheat bread crumbs (about 3 slices bread)
3 tablespoons butter or margarine, melted
Chopped green onions, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 3-quart saucepan, place potatoes and enough water to cover. Heat to boiling; boil uncovered 15 minutes or just until tender. Drain; cool. In 2-quart heavy saucepan, melt 1/4 cup butter over medium-low heat; stir in flour until smooth. Cook 1 minute, stirring constantly. Increase heat to medium. Gradually add milk and half-and-half; cook and stir until thickened. Add cheese, Italian seasoning and pepper; cook and stir until cheese is melted. Remove from heat. In baking dish, layer half each of the egg slices, bacon and cheese sauce. Top with potatoes. Layer with remaining egg slices, bacon and cheese sauce. In small bowl, mix bread crumbs and melted butter; sprinkle over casserole. Bake uncovered 30 minutes or until thoroughly heated. Garnish with onions.

2 large baking potatoes, unpeeled and cubed

1 lb bacon, cooked and coarsely crumbled
2 cups soft whole wheat bread crumbs
3 tablespoons butter or 3 tablespoons margarine, melted

Steps:

  • Place potato cubes in a large saucepan;cover with water.
  • Boil 15 minutes to til tender.
  • Drain and cool.
  • Melt 1/4 c butter in a heavy sauce over medium-low heat; add flour, stirring until smooth.
  • Cook, stirring constantly, 1 min.
  • Gradually add milk and half& half; cook over medium heat, stirring constantly, until thickened and bubbly.
  • Add cheese, italian seasoning, and pepper, stirring constantly until cheese melts.
  • Remove from heat.
  • Layer half each of egg slices, bacon, and cheese sauce in a lightly greased 13 X 9 X 2 inch baking dish.
  • Top with potato.
  • Top with remaining egg slices, bacon and cheese sauce.
  • Combine breadcrumbs and 3 T melted butter; sprinkle over casserole.
  • Cover and chill overnight, if desired.
  • Remove casserole from refrigerator.
  • Let stand at room temperature 30 mins.
  • Bake, uncovered, at 350 degrees for 30 minutes or until thoroughly heated.
  • Garnish, if desired.

4 teaspoons butter, softened
2 English muffins, split
1/2 pound bulk pork sausage
4 large eggs
1/4 cup sour cream
1/2 cup shredded sharp cheddar cheese
1/4 cup canned chopped green chilies

Steps:

  • Spread butter over cut sides of each muffin half. Place buttered side up in an 8-in. square baking dish coated with cooking spray; set aside., In a small skillet, cook sausage over medium heat until no longer pink; drain. Spoon sausage over muffin halves. In a small bowl, whisk eggs and sour cream; pour over sausage. Sprinkle with cheese and chilies. Cover and refrigerate for 3 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake at 350° for 20-25 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

1 lb pork sausage
10 white bread, sliced cubed (6 cups)
2 cups shredded sharp cheddar cheese
6 large eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
1/4 teaspoon Worcestershire sauce

Steps:

  • Cook sausage in skillet over medium heat, stirring until it crumbles and is no longer pink; drain well.
  • Place bread cubes evenly in 6 lightly greased 8 oz. individual baking dishes or ramekins; sprinkle bread evenly with cheese, and top with sausage.
  • Whisk together eggs and next four ingredients; pour evenly over sausage mixture. Cover and chill casseroles for 8 hours. Let stand at room temperature for 30 minutes.
  • Bake at 350 for 45 minutes or until set. Let stand 5 minutes before serving.
