1 1/2 lbs orange yams, peeled and cut into 1-2 inch pieces ((2 potatoes))
1 1/2 lbs white sweet potatoes, peeled and cut into 1-2 inch pieces ((2 potatoes))
1 lb carrots peeled and cut into 1-inch rounds ((8 carrots))
6 oz dried apples ((1 1/2 cups))
6 oz dried cranberries ((1 1/4 cups))
2 cups orange juice
1/2 cup honey
1/2 cup brown sugar
2 tsp cinnamon
1 tsp salt
1/2 tsp black pepper
1 1/2 cups chicken broth ((you may substitute "no chicken" broth))
12 oz pitted prunes ((3 cups))

Steps:

  • Place cut yams, sweet potatoes, and carrots on the bottom of a large heavy pot.
  • Pour dried apples and cranberries on top.
  • In a medium bowl, whisk together orange juice, honey, brown sugar, cinnamon, salt, and black pepper. Pour mixture over the fruits and vegetables in the pot.
  • Add chicken broth or "no chicken" broth to the pot, covering the vegetables halfway. Heat pot over medium high until it begins to simmer. Stir the ingredients once gently.Reduce heat to a gentle but constant simmer. Cover the pot.
  • After 45 minutes, open the pot and gently stir again. Place pitted prunes on top of the simmering ingredients.
  • Cover pot. Continue to cook on lowest heat for another 15 minutes, until potato pieces are tender and prunes have warmed and softened. Don't cook too long, or the prunes will dissolve-- it will make a nice sauce for the tzimmes, but it won't look so pretty on the table.Serve warm as a side dish to a festive holiday meal.

3 pounds sweet potatoes (about 4 large), peeled and cut into chunks
2 pounds medium carrots, cut into 1/2-inch chunks
1 package (12 ounces) pitted dried plums (prunes), halved
1 cup orange juice
1 cup water
1/4 cup honey
1/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/4 cup dairy-free margarine or butter

Steps:

  • Preheat oven to 350°. In a greased 13x9-in. baking dish, combine sweet potatoes, carrots and plums. Combine orange juice, water, honey, brown sugar and cinnamon; pour over vegetables. , Cover and bake for 1 hour. Uncover; dot with butter. Bake until vegetables are tender and sauce is thickened, 45-60 minutes, carefully stirring every 15 minutes.

9 medium carrots, (about 1 pound), peeled
4 sweet potatoes, (about 2 pounds)
1 cup bite-size pitted prunes, (about 6 ounces)
1 cup dried apricots, (about 5 ounces)
2 tablespoons fresh lemon juice
1/3 cup fresh orange juice
1/4 cup honey
1 teaspoon ground cinnamon
2 1/2 teaspoons orange zest, (from one orange)
1/4 teaspoon salt

Steps:

  • Heat oven to 350 degrees. Cut carrots into 2-inch pieces. Bring a large saucepan of water to a boil, and lower heat to medium; add sweet potatoes in their skins, and cook for 20 minutes, adding the carrots after 10 minutes. Drain in a colander, and set aside until cool enough to handle.
  • Peel sweet potatoes, and cut into 1-inch chunks. Place in a large bowl along with carrots and remaining ingredients. Mix well, and transfer to a 2-quart baking dish.
  • Cover with foil, and bake for 30 minutes, basting with pan juices after 15 minutes. Remove from oven, and serve immediately.

1 ½ pounds carrots, peeled and cut into 1/4-inch rounds
⅓ cup seedless golden raisins
¼ cup freshly squeezed orange juice
1 ½ tablespoons honey
1 ½ tablespoons brown sugar
kosher salt and ground black pepper to taste
2 tablespoons minced fresh parsley

Steps:

  • Heat oil in a pan over medium-high heat. Add carrots, raisins, orange juice, honey, brown sugar, salt, and pepper; bring it to a boil. Reduce heat; cover and simmer until carrots are tender, about 25 minutes. Uncover, raise heat to high, and cook until sauce has thickened, about 5 minutes. Sprinkle parsley on top before serving.

1 large baking apple, seeded and coarsely diced
1/2 cup granulated sugar

1/2 cup matzo meal
1/2 cup pitted prunes (optional) or 1/2 cup raisins (optional)
2 tablespoons sweet wine or 2 tablespoons orange juice

Steps:

  • Preheat oven to 375°.
  • Grease an 11x7-inch baking pan.
  • By hand or in food processor in two batches, chop and mix all ingredients.

Tzimmes is normally cooked loosely in a pot and served as a pretty wet side dish, but Levana put a whole new spin on this traditional food, and has turned it into a delicious kugel. If you use matzo meal instead of flour, it's a fantastic addition to your Passover repetoire.

1 large sweet potato, peeled and grated (about 1 pound)
1 lb carrot, peeled and grated (4-5 medium)
1 medium onion, peeled and grated
1 cup crushed pineapple with juice
1 inch fresh ginger, peeled and grated
1 cup pitted prune, coarsely chopped
1 teaspoon ground cinnamon
3 eggs
1 cup flour (or matzo meal)
1/2 cup oil
1/4 cup light brown sugar
3 tablespoons brandy
salt and pepper, to taste

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl, mix all the ingredients together.
  • Don't squeeze the mixture or you will extract moisture and the end product will be soggy.
  • Pour into a greased 10 inch round cake pan.
  • Bake for 1 hour, or until a knife inserted into the center comes out clean.
  • Cut into slices and serve warm.

Transfer to large bowl and stir in lemon juice. Change to steel chopping blade (no need to wash bowl). Cut carrots and lemon into chunks and chop finely. Add to apple potato mixture. Stir in raisins, 3 tablespoons of melted margarine, orange juice concentrate, salt, cinnamon, sugar and matzo meal and mix well. Transfer to prepared baking dish and drizzle remaining margarine over. Bake in preheated oven for 1 hour or until browned and firm in center.
