8 ounces Muenster cheese, sliced
2 (10 ounce) packages frozen chopped spinach, thawed and drained
2 eggs
⅓ cup grated Parmesan cheese
1 (8 ounce) package cream cheese, softened
salt and pepper to taste
garlic powder to taste
4 ounces Muenster cheese, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line a quiche dish or 9 inch pie pan with the 8 ounces of Muenster cheese slices. Carefully press all of the water out of the spinach and place it in a large mixing bowl. Add eggs, Parmesan cheese, cream cheese, salt, pepper and garlic powder; stir well. Spoon mixture into pan and top with remaining cheese slices.
  • Bake in preheated oven for 35 minutes and allow to set up for 10 minutes before serving. Decrease oven temperature by 25 degrees F if using glass pie dish.

1 (9 inch) deep dish pie shells (prepared or homemade)
2 tablespoons butter
1 tablespoon olive oil
1/2 cup chopped onion
1 (10 ounce) package frozen spinach, thawed and squeezed dry
1 dash nutmeg
1 (15 ounce) container ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated parmesan cheese
3 eggs (beaten)

Steps:

  • Heat butter and oil in large skillet.
  • Add onions and sauté until soft about 5 minutes.
  • Add spinach to onions and continue cooking for about three minutes until the water has evaporated from spinach.
  • Season spinach with a dash of nutmeg.
  • In large bowl combine spinach, eggs and all the cheeses.
  • Season with salt and pepper if desired.
  • Pile mixture into unbaked pie crust.
  • Bake in a preheated 350°F oven for one hour or until golden brown on top.

½ teaspoon salt

1 cup grated Parmesan cheese
2 cups diced Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press bottom pie crust into glass pie dish.
  • In a large bowl, combine the spinach, salt, pepper, nutmeg, ricotta, mozzarella, Parmesan, and Cheddar cheeses. Mix together well and pour into bottom pie crust. Place second pie crust on top of filling and trim edges.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch pie pan with non-stick cooking spray.
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Squeeze extra water out of the spinach and add the spinach to the skillet. Continue cooking until the spinach is heated through and the extra water evaporates. Spoon mixture into pie pan.

3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. 2 packages (10 ounce size) frozen chopped spinach, thawed and drained
2 eggs, lightly beaten
1/3 cup grated Parmesan cheese
1 package (8 ounce size) cream cheese, softened
salt and pepper, to taste
garlic powder, to taste

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch ceramic or metal pie pan or quiche dish. If using a glass or non-stick dish, decrease the oven temperature to 325 degrees F. Line the bottom of the pie pan with 8 slices of the Muenster cheese. Set aside. Squeeze any excess water from the spinach and place the spinach in a bowl. Stir in the eggs, Parmesan, cream cheese, salt, pepper, and garlic powder. Mix until combined and smooth. Spread the spinach mixture over the cheese slices in the pan. 2 pounds phyllo dough
2 pounds butter, melted

Steps:

  • Preheat the oven to 325 degrees F.
  • To a large pot, add the olive oil and saute the onions until browned. Add the scallions, dill, nutmeg, black pepper and salt.
  • Boil the chopped spinach until blanched and still bright green, stirring occasionally. Mix it together with the ingredients in the pot. Add the crumbled feta cheese and the eggs, making sure that the mixture is slightly cool so the eggs don't scramble. Mix well.

  • Preheat oven to 350 degrees. Over medium high heat, place spinach in a large skillet and pour in 1/2 cup of water. Cover and steam until wilted. Drain spinach and reserve.
  • In a medium bowl, Stir together bread crumbs., 1/4 cup Parmesan and butter. Press crumb mixture into even layer in a 9 inch pie plate and chill for 15 minutes.
  • In a large bowl, beat together the eggs, ricotta cheese, sour cream, 1/2 cup Parmesan, basil, nutmeg and salt and pepper. Stir in the spinach and mix until well combined. Pour into chilled crust. SIMPLE BUT SENSATIONAL SPINACH AND FETA QUICHE

We are usually not big fans of quiche, but we loved this one after tasting it at a friend's house. The flavors really blend well together. Note: This quiche is heavy on the spinach, that is how we like it, if you do not care as much for spinach and want more of an eggy filling, you may use less spinach. If you add an additional egg, the filling will overflow. I make this recipe a few times a month and find it fills a regular pie shell perfectly as written below.

4 ounces muenster cheese, in pre-packaged slices
1 (10 ounce) package frozen chopped spinach, thawed and drained

garlic powder
4 ounces feta cheese (or more)

Steps:

  • Preheat oven to 350 degrees F.
  • Line instant pie shell with a SINGLE layer of the Muenster cheese slices.
  • Carefully press all of the water out of the spinach and place it in a large mixing bowl. If you prefer, you can use just half the amount of spinach called for in the recipe, we like a lot of spinach so we use the whole box.
  • Whisk or blend the cream cheese until it is smooth and has no lumps, add eggs, Parmesan cheese (Note: if you use pre-grated parmesan you may get a gummy texture to the interior of your quiche because of the commercial non-clumping agents put into pre-grated cheese), salt, pepper and garlic powder to taste; stir well.
  • Pour into pie shell and top with crumbled feta. Bake in preheated oven for 35 minutes or until feta is lightly golden. NOTE: If you are using a frozen shell, bake the quiche on a lower rack in the oven an add 10-15 minutes to the cooking time. 12 ounces muenster cheese, slices
1 small onion, finely chopped
1 cup low fat cottage cheese (or regular)

pimiento strips or chopped tomato (I never do but looks nice, OPT)

Steps:

  • Drain spinach well, pressing between layers of paper towels (or whatever) and set aside.

1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
2 Tbsp. flour
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Heat oven to 375ºF.
  • Microwave spinach in microwaveable bowl on HIGH 3 to 4 min. or just until wilted. Meanwhile, whisk eggs in large bowl until blended. Add cottage cheese and flour; mix well.
  • Chop spinach coarsely. Stir into cottage cheese mixture along with the mozzarella. Spoon into 9-inch pie plate sprayed with cooking spray.
  • Bake 40 min. or until center is set.

1 recipe pastry for a 9 inch double crust pie
1 tablespoon olive oil
1 onion, finely diced
½ pound fresh mushrooms, sliced
2 bunches fresh spinach, washed, stems removed
1 pint part-skim ricotta cheese
½ cup grated Parmesan cheese
1 egg, beaten
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees (175 degrees C).
  • Heat a skillet over medium heat. Add olive oil, then onions. Saute onions until soft, about 5 minutes. Add mushrooms and saute 5 minutes more, stirring occasionally. Add spinach and cook just until wilted, about 1 minute.
  • In a large mixing bowl combine ricotta, parmesan, and egg. Mix well, then add spinach mixture. Stir thoroughly. Add salt and pepper to taste.
  • Spread mixture into pastry-lined pan. Cover with second circle of pastry. Trim and seal edges. Cut steam vents in top.
  • Bake in preheated oven for 35 to 45 minutes, or until crust is golden brown.

2 tablespoons olive oil
8 ounces sliced button mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
1 store-bought pie crust
One 10-ounce box frozen chopped spinach, thawed, drained and pressed to remove any water
6 ounces Gruyere, grated
1 1/2 cups half-and-half
8 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic and thyme. Cook, stirring occasionally, until the mushrooms have browned, 5 to 6 minutes. Season with a pinch of salt and pepper. Remove the skillet from the heat.
  • Press the pie crust into a deep, 9-inch tart pan with a removeable bottom (or a deep-dish pie pan). Layer the mushrooms and spinach into the crust and top with the cheese.
  • Whisk together the half-and-half, eggs and a good pinch of salt and pepper in a large bowl. Pour the egg mixture into the crust.
  • Place the pan on a rimmed baking sheet. Lightly cover the pan with aluminum foil and bake for 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, another 10 to 15 minutes. Let the quiche sit for 10 to 15 minutes, then remove from the pan, slice and serve.
