1 1/2 pounds lean ground beef
1/2 onion (chopped)
1-2 cloves garlic (chopped)
1/2 cup green pepper (diced)
1 cup water
8 ounce can tomato sauce
2 tablespoons brown sugar
2 teaspoons Dijon mustard
1 1/2 teaspoons salt
1/2 teaspoon pepper
Buns
Avocado (sliced)
Cilantro (few sprigs per sandwich)

Steps:

  • Over medium-high heat, brown ground beef in skillet until cooked though. Drain grease.
  • Add garlic, onion and green pepper. Stir and combine and cook for 2 to 2 minutes until softened.
  • Add 1 up of water and tomato sauce. Mix to combine well.
  • Stir in brown sugar, Dijon mustard and simmer for about 40 minutes or until sauce has thickened and liquid has reduced.
  • Add in seasonings and serve up on sandwich buns or rolls.

1/4 cup water
10 ounces tomatoes and green chilies (canned diced UNdrained)
8 ounces tomato sauce (no salt)
4 teaspoons brown sugar
1/2 teaspoon cumin (ground)
1/4 teaspoon salt (lite)
9 whole wheat hamburger buns

Steps:

  • Heat large skillet over high heat. Add turkey, onion, celery, & water. Reduce heat to medium.
  • Cook and stir 5 minutes or until meat is done, drain fat.
  • Stir in tomatoes, tomato sauce sugar, cumin, & salt; bring to a boil over high heat. Reduce heat ; simmer 20 minutes or until mixture thickens.
  • Serve on buns; garnish as desired.

Our Chopped Dinner Challenge this week was chorizo. We decided to give the basic sloppy joe a Mexican spin using chorizo instead of ground beef, but keep the sloppiness that everyone loves. Chopped Basket Ingredient: chorizo

1 lb(s) fresh tomatoes or one 16-oz can of tomatoes in juice
2 Tbsp unsalted butter
1 onion, chopped
1 red bell pepper, chopped
3 cloves garlic, finely chopped
1 ½ lb(s) fresh Mexican chorizo, casings removed
½ cup Mexican beer
3 - 4 Tbsp chopped pickled jalapenos
2 Tbsp Worcestershire sauce
1 Tbsp light brown sugar
4 sandwich rolls
Sour cream and chopped fresh cilantro for serving

Steps:

  • Puree the tomatoes in a blender until smooth.
  • Heat the butter in a medium saucepan over medium high heat until melted and bubbling then stir in the onion, pepper, garlic, 1/4 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring occasionally, until onion is golden brown, 6 to 8 minutes. Add chorizo, stirring to break up lumps, and cook until browned, about 6 minutes. Add the pureed tomatoes, beer, jalapenos, Worcestershire, and sugar, and boil until the sauce has thickened, 14 to 18 minutes. Remove from heat and season with salt. Serve with sour cream and cilantro on rolls.

1 onion, finely chopped

1 can tomato puree (14.5 ounces)
2 tablespoons light-brown sugar
1 tablespoon cider vinegar
1 tablespoon tomato paste
1 teaspoon Worcestershire sauce
4 hamburger rolls, cut into mini buns
1 tablespoon chopped fresh cilantro
1 tablespoon chopped pickled jalapeno chiles
2 hoagie rolls, split in half
1/2 ripe avocado, thinly sliced

Steps:

  • For the Kids (Serves 2): In a large skillet over medium-high heat, cook beef, breaking apart pieces with a wooden spoon, until lightly browned, 5 to 6 minutes. Season with 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Add onion and garlic; cook, stirring, until translucent, about 5 minutes.
  • Add pureed tomatoes, sugar, vinegar, tomato paste, Worcestershire, and 1 1/2 cups water. Reduce heat to medium-low; simmer until thickened, about 20 minutes. Reserve half the beef mixture for the adults. Divide remaining beef evenly among the mini buns (2 per serving).
  • For the Adults (Serves 2): Stir cilantro and jalapenos into the reserved beef mixture. Dividing evenly, spoon over bottom halves of rolls; top with avocado slices.

We tried them today for the first time and they were delicious! I modified the ingredients only to suit what was available to me. I think this would also be good on tortillas.

1 tablespoon vegetable oil
1 medium red onion, diced
1/2 cup celery, diced
1 teaspoon ginger puree
1 teaspoon minced jalapeno
1 lb ground pork
1/2 cup diced canned tomato
1/2 cup barbecue sauce
1 ounce jim bean whiskey
1 tablespoon soy sauce
1 1/2 tablespoons lime juice
4 -6 sandwich buns
8 -12 iceburg lettuce leaves
4 -6 tablespoons guacamole

Steps:

  • Heat a large saucepan over high heat. Add the oil and swirl to coat. Add the onions, celery, ginger, and jalapenos. Saute until soft, about 2 minutes.
  • Add the pork and brown lightly.
  • Add the tomatoes, barbecue sauce (I used Billy Bee), whiskey, soy sauce and lime juice. Bring to a simmer and cook stirring occasionally for 15-20 minutes or until mixture will mound sloppy-joe-style.
  • Toast the rolls. On the bottom half, place a leaf of lettuce, then scoop on the pork mixture. Top with lettuce, guacamole, and the top half of the roll.
  • Great with a pint of light beer.

  • Heat butter in a large skillet over medium heat. 1 cup ketchup
1 can (4 ounces) chopped green chiles
1/2 cup beef broth
1/4 cup chili sauce
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
6 hamburger buns, split
2 tablespoons butter, softened

Steps:

  • In a large skillet, cook beef and onion over medium heat for 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add garlic; cook 1-2 minutes longer. Stir in the ketchup, chiles, broth, chili sauce and seasonings. Bring to a boil.
