Using pantry items plus a couple of fresh items, you can create a cheesy, comforting casserole your whole family will love. Though it does include RO*TEL® and a can of mild green chile peppers, it's not spicy, but if you like the heat, choose hot RO*TEL® and peppers. This pantry chicken casserole reheats well, too, but I had to hide it, or there would have been no night #2! A crusty bread and a green salad complete this easy pantry meal.

cooking spray
1 (16 ounce) package penne pasta
4 tablespoons salted butter
1 large onion, chopped
1 green bell pepper - stemmed, seeded, and finely chopped
1 (8 ounce) package sliced fresh mushrooms
3 cloves garlic, minced
2 (8 ounce) packages processed cheese food (such as Velveeta®), cubed
1 (14.5 ounce) can diced tomatoes, undrained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), undrained
1 (4 ounce) can mild chopped green chile peppers
4 cups cooked chicken, cut into bite-sized pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a large casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • While the pasta is cooking, melt butter in a large skillet over medium heat. Add onion and bell pepper and cook, stirring occasionally, until vegetables are tender, about 5 minutes. Add mushrooms and cook until they release their liquid, about 5 minutes. Add garlic and cook, stirring occasionally, until fragrant, about 1 minute.
  • Stir in processed cheese food, diced tomatoes and juice, diced tomatoes and green chiles with juice, and mild chile peppers. Cook and stir until cheese has melted, 5 to 10 minutes. Remove from heat and stir in cooked pasta and chicken. Pour into the prepared baking dish.
  • Bake in the preheated oven until heated through, about 20 minutes. Serve warm.

1/2 C White Wine
1/4 C Olive oil
8 oz shredded mozzarella

Steps:

  • Preheat oven to 375 spray a 13/9" pan with pam put 2 layers of chicken in pan, cover with proscuitto, top with spinach, sprinkle with a little kosher salt and coarse black pepper top with mushrooms whisk together olive oil, wine and savory herb envelope pour over everything. Lay a piece of foil over (not tight) bake for 30 minutes top with cheese and bake for 5 minutes more.

  • Form ground beef into 8 flat patties with hands.
  • Place a slice of cheese between two patties and seal the edges forming a larger pattie.
  • Fry patties over medium heat in a frying pan until nearly cooked through.
  • Add tomato sauce and garlic powder to frying pan and simmer for 15 minutes.

3 boneless skinless chicken breasts
poultry seasoning
1 (12 ounce) package egg noodles, cooked
8 ounces cheddar cheese, grated
8 ounces mozzarella cheese, grated
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
3 cups milk
30 Ritz crackers

Steps:

  • Preheat oven to 350°F.
  • Place chicken breasts on cookie sheet and sprinkle poultry seasoning on top.
  • Bake in oven for 30 minutes (don't worry if not totally done, we will be baking casserole in oven too!).
  • Meanwhile prepare to make a cheese sauce, place butter in a sauce pan and melt.
  • Once melted, add the flour in and stir with wire whisk to combine. Let cook 1 minute.
  • Remove saucepan from heat and SLOWLY add a little of the milk. Stir. Continue doing this untill all flour mixture is incorporated into the milk.
  • Bring just to a boil then add cheeses. Stir to combine. Set aside.
  • Once chicken is done dice into pieces. Leave oven on!
  • Combine chicken, noodles and cheese sauce in a casserole dish and crush Ritz crackers on top.
  • Cover casserole and place into oven and bake for 30 minutes.
  • Uncover and continue cooking for 10 minutes until top is golden brown.
  • Enjoy!
