SOUR CREAM APPLE PIE

2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
1 teaspoon salt
1/2 cup (8 tablespoons) cold vegetable shortening
1 1/2 sticks (12 tablespoons) cold unsalted butter, cut into small pieces
2 tablespoons apple cider vinegar
4 pounds assorted apples (such as Granny Smith and Gala)
2/3 cup plus 2 tablespoons sugar
2 tablespoons fresh lemon juice
1/8 teaspoon salt
4 tablespoons unsalted butter
2 tablespoons all-purpose flour
2/3 cup sour cream
1 1/2 teaspoons vanilla bean paste or pure vanilla extract
1/2 teaspoon apple pie spice
1 large egg, lightly beaten

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add the shortening and pulse until the mixture looks like cornmeal. Add the butter and pulse until it is in pea-size pieces. Add the vinegar and 5 to 6 tablespoons ice water; pulse until the dough just starts forming a ball. Divide between two pieces of plastic wrap. Shape each into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Make the filling: Peel the apples and slice 1/4 inch thick; toss with 2/3 cup sugar, the lemon juice and salt in a large bowl. Melt 2 tablespoons butter in a large skillet over medium-high heat. Add half of the apples; cook, stirring, until slightly softened, 5 minutes. Sprinkle with 1 tablespoon flour. Cook, stirring, until the juices thicken, about 1 minute. Transfer to a separate large bowl. Repeat with the remaining butter, apples and flour; add to the bowl with the cooked apples. Gently fold in the sour cream and vanilla paste. Let cool completely.
  • Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9 1/2 -inch deep-dish pie plate. Add the filling, slightly mounding it in the center. Refrigerate until ready to bake.
  • Put a baking sheet on the lowest oven rack and preheat to 425 degrees F for 30 minutes. Meanwhile, roll out the remaining disk of dough into a 12-inch round on a floured surface. Lay the dough over the filling and press the crusts together around the edge; fold the overhanging dough under itself. Crimp with your fingers or a fork. Refrigerate until firm, 30 minutes.
  • Combine the remaining 2 tablespoons sugar and the apple pie spice. Brush the top crust with the beaten egg and sprinkle with the spiced sugar. Make a few slits in the crust with a knife to let steam escape. Transfer the pie to the hot baking sheet and bake 15 minutes. Reduce the oven temperature to 375 degrees F and continue baking until the crust is golden and the filling is bubbling, rotating the pie as needed, 1 hour 15 minutes. (Tent with foil if the crust browns too quickly.) Transfer to a rack and let cool completely.

This is my favorite fruit pie of all. Wish I could find the berries in our area. Tapioca can be used in place of cornstarch if desired.

1 recipe pastry for a 9 inch double crust pie
4 cups elderberries
1 cup white sugar
3 tablespoons cornstarch
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix cornstarch in a little bit of water and add to berries and sugar. Cook, stirring constantly until desired thickness. Add more cornstarch if not thick enough. Add lemon juice.
  • Pour into bottom crust. Dot with butter. Put on top crust or make a lattice.
  • Bake at 375 degrees F (190 degrees C) until browned and berries are bubbling through holes in the crust, approximately 40 minutes.
  • Note: It is a good idea to put a pan or foil under the pie as it bakes since it might bubble over.

Dough for single-crust pie
2 large eggs
1 cup sour cream
1 cup sugar
6 tablespoons all-purpose flour, divided
1 teaspoon vanilla extract
1/4 teaspoon salt
3 cups chopped peeled tart apples
1/4 cup packed brown sugar
3 tablespoons cold butter

Steps:

  • Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes., In a large bowl, beat eggs. Add sour cream. Stir in sugar, 2 tablespoons flour, vanilla and salt; mix well. Gently stir in apples. Pour into crust. Bake 15 minutes. , Meanwhile, combine brown sugar and remaining 4 tablespoons flour; cut in butter until crumbly. Sprinkle over pie. Bake until filling is set, 20-25 minutes. Cool completely on a wire rack. Refrigerate leftovers.

1 cup sour cream
1 egg

Steps:

  • Mix sugar and flour together in bowl.
  • Beat in sour cream, egg,vanilla and salt together until smooth (about 5 minutes).
  • Fold in blueberries.
  • Pour into pie crust, and bake at 400F for 25 minutes.
  • (May need to adjust temperature and time for frozen berries).
  • Meanwhile, combine topping ingredients.
  • Remove pie from oven after the 25 minutes, and sprinkle on topping.
  • Return pie to oven and bake 10 minutes more.
  • Chill before serving.

1 ½ cups sour cream
1 ½ cups white sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place one pie crust in the bottom of a 9-inch pie plate.

1 prepared pie shell
1 cup sugar
4 teaspoons cornstarch
1/4 teaspoon salt
1 3/4 cups nonfat sour cream
3 egg yolks
1 teaspoon grated orange rind
1 tablespoon orange juice
1 1/2 cups sweetened dried cranberries
3 egg whites
1/2 teaspoon cream of tartar
1/4 cup sugar
1/2 teaspoon vanilla

Steps:

  • Heat oven to 450 deg F.
  • Prepare and bake pie crust as directed on package for one-crust baked shell using 9 inch pie pan.
  • Cool 30 minutes or until completely cooled.
  • Reduce oven temperature to 400 deg F.
  • During last 10 minutes of cooling time, in medium saucepan, combine 1 cup sugar, cornstarch and salt; mix well/ Stir in all remaining filling ingredients (sour cream to cranberries).
  • Bring to a boil, stirring constantly.
  • Cook over medium heat for 1 to 2 minutes or until thickened, stirring constantly.
  • Remove from heat; cool 5 minutes.
  • Meanwhile, in large bowl; beat egg whites and cream of tartar until foamy.
  • Gradually beat in 1/4 cup sugar until stiff peaks form.
  • Beat in vanilla.
  • Pour hot filling into cooled baked shell.
  • Spoon meringue over filling sealing to edge of crust to prevent shrinking or weeping.
  • Bake at 400 deg F for 8 to 10 minutes or until light golden brown.
  • Cool on wire rack for at least 45 minutes or until slightly cooled.
  • Serve immediately, or refrigerate until serving time.
  • Store in refrigerator.

Adopted recipe.I made this with a premade graham cracker crust.It's not super sweet.It will puff up slightly during baking but it shouldn't overflow your pie plate, at least mine didn't.You could very easily substitute any flavor of canned pie filling that you like.I didn't garnish with a TBSP on each slice, I just spread the rest of the pie filling over the top.

An easy, tasty summer pie to make. Take advantage of those wonderful little berries at your farmers market. A comment from another member: If there is a tendency for too much juice in the pie, Ive found that adding tapioca roughly 2 tablespoons to the berries before putting into the pie shell will correct the problem. Of course you should like tapioca to do this.

1 tablespoon flour
1 teaspoon almond extract
1 cup sour cream
1 cup dried craisins
1 pie crust, unbaked
whipped cream (optional)

Steps:

  • Preheat oven to 450 degrees.
  • Beat eggs until light & fluffy.
  • Add sugar, flour, almond extract. Mix well.
  • Fold in sour cream & craisins.
  • Pour into pie shell.
  • Place on baking sheet & put into oven. Bake at 450 degrees for 10 minutes. Reduce oven temp to 350 degrees and bake for 25 minutes. Pie should be lightly browned and set in the middle. It will still "jiggle" slightly and will firm as it cools.
  • Cool, cut into wedges, and serve with a dollop of whipped cream.
  • Note: I have also subbed dried apricots (finely diced)for the craisins and added 1/4 teaspoon of nutmeg for a different pie.
