- Sprinkle pork chops with poultry seasoning, salt, and black pepper on both sides. Heat vegetable oil in a large skillet over medium-high heat; brown pork chops well on both sides, about 5 minutes per side. Transfer to a plate.
- Discard excess grease from pan and melt butter in the same skillet. Reduce heat to medium and stir onion in the hot skillet with a pinch of salt until onion is very browned and caramelized, about 15 minutes. Stir in garlic and cook for 1 minute; stir in flour and cook for 2 minutes.
- Pour chicken broth into skillet and stir, dissolving browned bits of food in the bottom of the skillet. Pour juices that have accumulated on plate containing pork chops into the sauce. Mix in buttermilk until smooth. Add water. Bring sauce to a simmer, reduce heat to low, and cook until onions begin to break down and sauce is thickened, 15 to 20 minutes.
- Place pork chops into sauce, spooning sauce over meat to coat. Turn heat to low and simmer until chops are tender and cooked through, about 10 minutes. Adjust levels of salt and pepper and serve chops with gravy on top.

- In a small bowl, combine salt, pepper, garlic powder, and onion powder. Pat the pork steaks dry with a paper towel and sprinkle both sides liberally with the seasoning. Set aside until ready to use.
- Add the oil to a large sauté pan over medium-high heat and allow to come to temperature. Add the pork steaks to pan, taking care not to overcrowd the pan and cooking in batches if needed. Cook for 3-4 minutes on the first side, then flip and cook 3-4 minutes more. Remove from the pan and repeat with the remaining pork steaks. Set aside on a plate and make the gravy.
- Reduce the heat to medium heat and add the butter. As soon as the butter has melted, add the onion to the pan and stir. Cook for about 5 minutes, stirring occasionally until softened and cooked through.
- Sprinkle the flour over the onion and stir until evenly coated. Then, one big splash at a time, add the beef broth, whisking well after each addition. - Season the pork chops on both sides with sea salt, garlic powder, onion powder, and pepper.
- Heat the olive oil in a dutch oven over medium-high heat. Add the pork chops and sear on both sides, about 3 minutes per side without moving, until browned. Transfer the pork chops to a plate and set aside.
- Reduce heat to medium-low or medium. Using the same dutch oven, saute the sliced onions for 15-20 minutes, until caramelized.
- Once the onions are caramelized, preheat the oven to 375 degrees F (190 degrees C).
- Add the minced garlic and thyme leaves to the dutch oven. Saute for about a minute, until fragrant.
- Add the chicken broth to the dutch oven. Scrape any browned bits from the bottom of the pan. Bring to a gentle boil, then simmer for about 2-3 minutes, until it gets thicker and the volume is reduced by at least 1/4.
- Remove from heat. Add the cream cheese. Stir in the cream cheese until it melts into the sauce.
- Return the pork chops to the dutch oven and spoon the sauce and onions over them. Cover with the lid and bake for 20-25 minutes, until cooked through. (Time will vary depending on the thickness of your pork chops - use a thermometer to check and cook to 145 degrees F (63 degrees C).)

- In small bowl mix 4 seasonings.
- Place flour in a flat surfaced dish (save unused flour for smothering).
- Sprinkle front and back side of each steak piece and rub deep into groves of steak.
- Heat oil to medium high in skillet (cast iron is best).
- Dredge each piece in flour, press in with finger tips. Re-dredge in flour again and place carefully in hot oil for 1 minute and then turn back heat to medium.
- Fry steak 4-5 minutes on each side. Remove, drain on a separate plate.
- Remove all but 2-3 Tbs of oil, over medium high heat, sprinkle with 3 Tbs flour, whisking until well mixed and roux browns.
- Add water, bouillon cube and remaining seasoning. Mix until gravy begins to thicken slightly. Test taste for spice as this is the time to adjust (salt or water).
- Replace steak back in gravy and spread onion rings over the tops.
- Cover and simmer 30-40 minutes.

- Season the pork chops with 1/4 tsp freshly cracked black pepper, 1/2 tsp of salt.
- Toss the all purpose flour into a large freezer bag, then toss in the pork chops.
- Shake the bag until the pork chops are well coated.
- Remove the chops from the bag, and shake off the excess flour.
- DO NOT THROW AWAY THE EXCESS FLOUR.
- Pour the vegetable oil into a skillet, and warm it up over medium heat.
- Once the oil is hot, start adding in the pork chops.
- Fry each side of the chops for about 30 seconds, then remove from the oil, and set to the side.
- Once all the chops are down, toss in the onions, and fry until they are translucent.
- Sprinkle in the flour, and stir until the onions are coated with flour.
- Cook until the flour turns golden brown.
- Pour in the chicken broth, and stir to prevent lumps.
- Next, pour in the half & half, and stir.
- Add in the minced garlic, celery flakes, and remaining salt & pepper.
- Stir, until everything is well incorporated, and turn the heat off.
- Slow cooker instructions
- Place the pork chops into the slow cooker.
- Pour the gravy all over the pork chops.
- Place the lid on the slow cooker, and cook on high for 3 hours.
- Oven instructions
- Place the pork chops into a 9 x 15 bake dish.
- Pour the gravy all over the pork chops.
- Cover the dish with a lid or aluminum foil.
- Bake on 350 F for 1 hour and 25 minutes.
- Serve and enjoy!

- Cut round steak into serving pieces
- Heat bacon grease in cast iron skillet
- Season meat with salt and pepper to taste
- Brown both sides of round steak until nice and brown
- Transfer meat to a platter.
- Gravy
- Scrape the any of the drippings that are sticking to the bottom of the pan. Heat drippings over medium heat.
- Sprinkle flour onto the drippings. Quickly stir with a whisk or slotted spoon so that the flour gets incorporated in the drippings. Let the flour brown a bit, before adding liquid. (you can also start with a mixture of flour and water)
- Whisk while slowly adding liquid like stock or water to dissolve the flour into the liquid.
- Allow the gravy to simmer and thicken and continue to slowly add liquid until you have enough gravy to cover the browned meat.
- Season to taste with salt and pepper. (Always taste first before adding more salt! It may not need it.)
- Add the browned meat into the gravy, making sure the meat is covered. Cover pan and place in a low oven for several hours. May need to add some liquid to keep the meat covered.
- Make a pan of cornbread and a pan of rice. Serve and use gravy over the meat and the rice.

- Season both sides of steak with salt and pepper. Heat oil in a skillet over medium-high heat. Cook steak, turning occasionally, to medium doneness, about 6 minutes per side. An instant-read thermometer inserted into the center should read 135 to 140 degrees F (60 degrees C). Transfer meat to a bowl to let it rest.
- Pour a splash of water into the skillet; stir to scrape up browned bits and deglaze the pan. Pour this liquid over meat. Allow meat to cool completely.
- When meat is completely cool slice thickly (about 1/2 inch) with the grain, then cut into thinner strips. Dice by cutting into pieces against the grain. Transfer chopped steak back to the bowl; toss with the pan drippings.
- Melt bacon fat over medium heat in a pot. Add onions and a pinch of the salt; cook and stir until softened, 5 or 6 minutes. Stir in oregano. Add pinto beans and water. Bring back to a simmer and cook until onions are soft and sweet, about 5 minutes. Reduce heat to low.
- Mash the beans with a potato masher to your desired consistency. Add additional liquid, if necessary, to achieve your preferred texture. Add the remaining salt to taste. Remove from heat.
- Preheat oven to 450 degrees F (230 degrees C).
- Place tortilla chips about 2 or 3 deep in a heat proof pan. (You may need more than one pan.) Top chips with spoonfuls of beans and a generous handful of steak pieces. Sprinkle with grated cheese.
- Bake in preheated oven until cheese is melted and edges start to brown, about 10 minutes.
- Scatter diced ripe avocado, diced onions, diced tomatoes, and diced jalapenos over the top. Drizzle nachos with sour cream and garnish with chopped cilantro.

- Trim your pork steaks of excess fat. Generously salt and pepper your pork steaks. Heat a large pan over medium heat on your stove top. Add in the oil and let it heat for a minute. Arrange each of the pork steaks on the bottom of the pan so they are all in contact with the bottom of the pan (you may need to work in batches). Let the steaks brown for 5 minutes. Do not move the steaks or turn them over for the full 5 minutes. You'll be tempted to move them or mess around with them, but don't.
- While the meat is browning prepare your vegetables. Dice the onion, mince the garlic and peel the potatoes. Slice the potatoes into quarter inch rounds. Slice the mushrooms.
- When the 5 minutes is up remove the pork steaks and place them into the slow cooker. I only browned one side of the steaks for sake of time but if you want you can brown both sides. Add the onion into the hot pan and saute for 3 minutes. Add in the garlic and saute for 1 more minute. Pour the chicken broth in and deglaze the pan. Add the mixture into the slow cooker.
- Stir the mushrooms, mustard, lemon juice and tarragon into the slow cooker.
- Place the potatoes in a oven safe dish that will fit inside your slow cooker. You can use a pyrex,* corningware* or cake pan*. Salt and pepper the potatoes and toss. Cover the dish with foil. Lower the dish into the slow cooker on top of the pork.
- Cover the slow cooker and cook on low for 8 hours.
- Carefully remove the dish of potatoes and set aside. Pour the half and half into the sauce. Turn the slow cooker to the high setting. Stir 3 Tbsp of cornstarch and 3 Tbsp of cold water together in a small bowl until smooth. Stir the cornstarch slurry into the pot and let the sauce thicken without the lid for about 30 minutes.
- Once sauce is thickened salt and pepper to taste. Serve sauce, mushrooms and pork over the top of the potatoes.
ONION GRAVY SMOTHERED STEAK
Onion Gravy Smothered Steak is a traditional Southern favorite! The steaks are seared to perfection and then topped with a creamy onion gravy.

- Pat dry steaks with paper towels; season steaks with garlic salt and pepper.
- Heat vegetable oil and 1 tablespoon butter in a large cast iron skillet over medium-high heat.
- Add steaks to the hot skillet and cook until browned and cooked to desired doneness; about 3 to 4 minutes per side for medium-rare steak. DO NOT crowd the skillet; cook two steaks at a time if skillet isn't big enough.
- Remove cooked steaks from skillet; set aside and keep covered.
- Set skillet back over medium-heat and melt remaining butter.
- Add in sliced onions and season with a pinch of salt; continue to cook for 10 to 12 minutes, or until onions are soft and caramelized. Stir frequently.

- Reduce heat to medium-low; return steaks to the skillet and continue to cook for 2 more minutes, or until steaks are heated through, and sauce has thickened.
- Remove from heat.
- Garnish with parsley and serve.

TOMATO SMOTHERED PORK STEAKS (OR CHOPS) FOR THE CROCK-POT
A tasty way to use, and stretch, an inexpensive cut of meat -- pork butt steaks. Simmering all day suits less-premium cuts, which don't dry out like boneless pork loin does. Served over pasta or rice, the spinach variation is a meal in one but otherwise you'll probably want a salad. Italian greens like endive or escarole would go particularly well with these flavors. Note: written for a 6-7qt crockpot. Note 2: I don't cook with salt but usually add it at the table. I found that I needed none on this so be cautious if you choose to add salt to the pot.

- Cut each steak into 2 or 3 pieces and trim excess fat.
- Pour one can of tomatoes into the bottom of a 6-7qt Crockpot. Top with 1/3 of each of the ingredients, ending with a layer made from half the pork steak pieces.
- Make another layer of 1/3 of everything, ending with the rest of the pork steaks.
- Finish with the remaining ingredients.
- Cook on low for 6-8 hours.
- Remove pork steak pieces carefully (they will probably break up so tongs will work better than a fork).
- Use a slotted spoon to scoop out the veggies and serve them over pasta or rice.
- Top with Parmesan.
- Tip: If you chill the flavorful juices to remove the fat you'll have a delicious starter for soup.
- Note: I do not recommend using an extra-lean cut such as boneless pork loin for this. Extra lean meat tends to dry out in long cooking even when submerged in liquid this way.
- Note: This should be just as good made with beef chuck or chicken thighs.

- 1. season steaks with your favorite seasoning (Mrs Dash, season salt or just salt & pepper)
- 2. heat oil in large frying pan over high heat, brown steaks on both sides on high.
- 3. chop onion & add onion, mushrooms & cream of mushroom soup to chops, redude to low & cover. Simmer over low heat for 1 to 1 1/4 hour. If using horseradish you can add that about 1/2 way thru cooking time and mix into the soup & onion mixture. It just adds a little kick but you do NOT need to use it.
- 4. remove steaks to dinner plates & stir soup/onion/mushroom mix together for gravy. Excellent served over wide egg noodles or dumpling noodles.
