The Best Baked Salmon image

This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

Number Of Ingredients 10

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

I found this recipe on Pinterest, and thought it needed to be shared here. I searched, and haven't seen anything like it. Since finding this recipe, this is the ONLY way I will make my salmon indoors from now on.

1 salmon fillet (enough for 2 people)
olive oil
salt & pepper
dill weed, dried
2 tablespoons mayonnaise
2 teaspoons dill pickle relish
1 teaspoon dried dill weed
1 few dashes hot sauce (to your taste)
salt & pepper

Steps:

  • DO NOT PRE-HEAT YOUR OVEN. This is the trick.
  • Lightly spray a cookie sheet with cooking spray. Or line pan with tin foil.
  • Place Salmon fillet skin side down on pan.
  • Drizzle with Olive Oil, and season with the salt, pepper, and dill weed. All seasonings are to your liking.
  • Place salmon in a cold oven, set oven to 400 degrees F; bake salmon 25 minutes.
  • You should have perfectly cooked salmon.
  • For Tartar Sauce:.
  • Combine all ingredients in a small bowl. Chill until ready to use.

A simple and tasty salmon entree. Mayo and onions deliver a sweet and creamy flavor which is perfect with the crunch of the bread crumbs. I sometimes add nutmeg--totally optional. Tastes great with rice pilaf.

1 tablespoon olive oil
1 small yellow onion, chopped
½ teaspoon dried minced garlic
salt and pepper to taste
½ cup herb seasoned bread crumbs
2 tablespoons mayonnaise, or as needed
1 teaspoon mustard powder
2 salmon fillets (about 1 inch thick)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet, and set aside.
  • Heat oil in a skillet over medium-high heat. Saute onion with dried garlic, salt and pepper until tender. Transfer to a medium bowl, and mix with bread crumbs, mustard powder and mayonnaise. If necessary, add more mayonnaise to achieve a paste-like consistency.
  • Place salmon fillets onto the greased baking sheet, and press the crumb mixture on the top so that it is about 1/4 inch thick.
  • Bake for 10 minutes in the preheated oven, until salmon is easily cut with a fork, then broil for 5 minutes to crisp the top.
