SMOKY SHRIMP SLAW

1/2 pound bacon
1/4 head white cabbage, cored and shredded
1/4 head purple cabbage, cored and shredded
3 celery stalks, sliced thin
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley leaves
3 tablespoons olive oil
1 tablespoon chopped garlic
1 lemon, juiced
1 tablespoon smoked paprika
2 pounds shrimp (21 to 25) peeled and deveined
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup olive oil
1/4 cup cider vinegar
1 teaspoon dry mustard
1 tablespoon cayenne pepper
1 teaspoon coarse sea salt
1 teaspoon coarsely ground black pepper
1 teaspoon chopped garlic

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the bacon strips on top of a grill rack on a baking sheet. Bake until crispy, about 10 to 12 minutes. Remove from the oven and reserve.
  • In a large bowl, add the cabbages, celery, green onion and parsley. Toss together and set aside.
  • In a medium bowl, add the olive oil, garlic, lemon juice, the smoked paprika and the shrimp.
  • In a large saute pan over medium-high heat, add the shrimp. Saute, tossing frequently, until the shrimp are cooked through, about 4 to 5 minutes. Remove from heat and allow to cool.
  • In a blender, add the mayonnaise, sour cream, olive oil, cider vinegar, mustard, cayenne, salt, pepper and garlic and blend together until smooth. Add the mixture to the bowl with the cabbage. Stir in the crumbled bacon and the shrimp and serve.

CHILI SLAW DAWGS

This is one of my all-time favorite Atlanta eats: the chili slaw dog, in the style of the Varsity drive-in theater. That combination of crunchy cole slaw, crispy-skinned hot dog, and spice chili is the best in the world.

1/2 pound Grass-fed ground beef
1 1/2 tbsps chili powder
1 Vidalia onion, diced
2 Garlic cloves, chopped
1 tbsp tomato paste
1/2 tsp pepper
1 cup beer (your own preference)
1/2 cup Water plus more if necessary
Pinch salt
1/2 Small head of cabbage, rough chopped
3 tbsp sugar
1 1/2 tsp salt
2 tbsps mayonnaise
Salt and pepper to taste
8 Hot dogs (preferably Sabrett)
1/2 tsp canola oil
8 Top-loading hot dog buns
yellow mustard
1/2 cup Diced Vidalia onion

Steps:

  • Make the chili sauce: In a small saucepan, with the heat off, add the beef, chile powder, onion, garlic, tomato paste, salt, pepper, and beer. Stir to break up the beef. Add ½ cup water and stir again. Turn the heat on medium/high, bring to a boil, reduce to a simmer and cook 20- 25 minutes (add remaining water if necessary).
  • For the slaw: In a food processor, pulse the cabbage until finely chopped. Remove the blade and sprinkle salt and sugar onto the cabbage. Stir and let rest to draw the liquid out of the cabbage, 20 minutes.
  • Assemble the dawg: Drain the liquid from the cabbage and add the mayonnaise. Stir, check for salt and set aside. In a skillet, over low heat, add canola oil and the hot dogs. Cook until warmed through with a crispy, crackly skin. Fill each bun with a hot dog, then a layer of mustard, then a layer of chili, then onion, then slaw. This order is important! Serve immediately.

GRILLED CARROT "HOT DOGS" WITH TANGY SLAW

This delicious vegetarian take on a backyard barbecue staple swaps traditional hot dogs for glazed carrots packed with earthy umami flavor and spice thanks to a combo of maple, soy, and adobo sauce. Adding white beans to the bright cilantro coleslaw adds extra protein to this easy weeknight meal.

8 medium carrots, peeled, trimmed
2 tablespoons pure maple syrup
2 tablespoons soy sauce
1 tablespoon adobo sauce from can of chipotle chiles in adobo
1/2 teaspoon honey
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3/4 cup mayonnaise, divided
1/4 cup fresh lime juice, divided
1/2 small red onion
1/2 small head of savoy cabbage (about 10 ounces), thinly sliced (about 6 cups)
1 (15-ounce) can white beans, drained
1/3 cup coarsely chopped cilantro, plus 3 tablespoons whole leaves
Vegetable oil (for grill)
4 hot dog buns
2 tablespoons Corn Nuts

Steps:

  • Combine carrots, maple syrup, soy sauce, adobo sauce, and 1 cup water in a deep, large saucepan. Cover and cook over medium-high heat 10 minutes. Uncover, reduce heat to medium-low, and continue to cook, shaking pan occasionally, until liquid is completely reduced and carrots are coated in glaze, 2-3 minutes more.
  • Meanwhile, whisk honey, salt, pepper, 1/2 cup mayonnaise, and 3 Tbsp. lime juice in a large bowl until smooth. Thinly slice half of onion to yield about 1/4 cup. Add onion, cabbage, beans, and 1/3 cup cilantro to bowl and stir to combine.
  • Prepare a grill for medium-high heat or heat a grill pan or cast-iron skillet over medium-high; oil grate or pan. Grill carrots, turning once, until browned and slightly charred, about 2 minutes on each side. Transfer carrots to a plate. Toast buns until golden brown, about 30 seconds. Transfer buns to plate.
  • Finely chop remaining half of onion to yield 3 Tbsp. Mix remaining 1/4 cup mayonnaise and 1 Tbsp. lime juice in a small bowl until smooth.
  • Nestle 2 carrots into buns with large ends on opposite sides. Drizzle with mayonnaise mixture, then top with finely chopped onion, Corn Nuts, and 3 Tbsp. cilantro leaves. Serve with coleslaw alongside.
  • Do Ahead
  • Carrots and slaw can be made 3 days ahead. Store separately in airtight containers and chill.

Smoked Cabbage Slaw With Creamy Horseradish image

This slaw acquires its smoke flavor not through grilling the greens, but by cold smoking. The advantage is that you flavor the leaves with smoke without cooking them, so the cabbage remains audibly crisp. Cold smoking can be done on a grill or in a smoker, or even in your kitchen using a stove-top smoker or hand-held smoker. The secret is to smoke the shredded cabbage over a pan of ice to keep it from cooking. Horseradish and mustard fire up the traditional creamy mayonnaise dressing.

1 Honey Crisp or other firm apple
1 small head green cabbage (about 1 1/4 pounds), quartered through the core
1 small white onion, peeled and quartered
2 carrots, trimmed and peeled
1/2 cup yellow raisins
Ice, for smoking
1/2 cup mayonnaise
3 tablespoons prepared horseradish
2 tablespoons cider vinegar, plus more to taste
2 tablespoons granulated sugar, plus more to taste
1 tablespoon Dijon mustard
1/2 teaspoon celery seed
Sea salt and freshly ground black pepper

Steps:

  • Set up your smoker following the manufacturer's instructions and heat to 225 degrees. Add applewood or hickory wood as specified by the manufacturer. If using a charcoal grill, set it up for indirect grilling, using half a chimney starter of coals instead of a full chimney. Add wood chips or chunks to the coals following the manufacturer's instructions.
  • Meanwhile, peel and core the apple, then cut the cabbage, onion, apple and carrots into thin shreds on a mandolin, in a food processor fitted with a shredding or slicing disk, or with a chef's knife. Stir the raisins into the slaw. Working in batches if necessary, divide the mixture among 2 disposable 9-by-13-inch aluminum foil drip pans; spread in a loosely packed even layer. (Cabbage mixture should be no deeper than 1 inch.) Place each pan over another 9-by-13 aluminum pan of ice so the vegetables smoke without cooking.
  • Transfer pans to the smoker or grill, cover and smoke until lightly bronzed with smoke but still raw, 10 to 15 minutes. Transfer smoked slaw mixture to a large bowl and repeat as necessary to smoke any remaining slaw.
  • Meanwhile, make the dressing: Combine the mayonnaise, horseradish, vinegar, sugar, mustard and celery seed in another large bowl and whisk until the sugar is dissolved. Season to taste with salt and pepper.
  • Stir the smoked vegetable mixture into the dressing; season to taste with salt, sugar and vinegar. Serve right away, or refrigerate, covered, up to a few hours before serving.
