I used to work in a fabulous Italian restaurant, and the cooks taught me how to make this dish. I have modified it a bit, but it's very similar, and incredibly delicious.

4 ounces small uncooked seashell pasta
2 ½ tablespoons extra virgin olive oil
3 tablespoons butter
2 cloves garlic
1 sprig fresh basil, chopped
1 (8 ounce) can artichoke hearts, drained and quartered

Steps:

  • Bring a pot of lightly salted water to a boil. Add seashell pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the olive oil and melt the butter in a skillet over medium heat. Mix in the garlic, basil, and artichoke hearts, and cook 5 minutes, until heated through. Toss with the cooked pasta to serve.

1/4 cup amy's organic tomato and basil pasta sauce
1/4 cup artichoke heart, drained
4 tablespoons sliced black olives, drained
1 1/2 cups organic pasta

Steps:

  • Mix the marinara with the pasta sauce in a medium sized pot. Let the sauce boil. Add the artichoke hearts and olives. Stir once and let simmer for 5 minutes.
  • In a separate pot, boil water and cook 1.5 cups of favorite pasta according to packaged directions.

2 cloves garlic, minced
3/4 cup finely chopped onion
1 1/2 tablespoons minced drained bottled pepperoncini peppers (Italian pickled peppers)
1/4 cup olive oil
1/3 cup dry white wine
1 (32 ounce) can plum tomatoes, chopped
2 (5 ounce) jars marinated artichoke hearts, drained well and halved
1/2 cup chopped pitted kalamata olive
1/3 cup minced fresh parsley

Steps:

  • In a large skillet cook garlic, onion and peperoncini in oil over moderately-low heat, stirring, until onion is softened, add wine and boil 3-5 minutes, or until wine is almost evaporated.
  • Add tomatoes and simmer, stirring occasionally, for 20 minutes, or until the sauce is thickened.
  • Stir in artichokes and olives and simmer sauce for 5 minutes and stir in parsley and season to taste.
  • Enough for 1 lb of pasta, such as penne.

2 tablespoons extra virgin olive oil
3 tablespoons butter
3 large garlic cloves
salt and pepper
1 (10 ounce) package frozen artichoke hearts, thawed
1/4 cup pasta water
parmesan cheese

Steps:

  • Bring a pot of water to a boil and add salt.
  • Add pasta, cook for 8 to.10 minutes, until almost done and drain, reserving 1/4 cup water.

1 (14 1/2 ounce) can low sodium artichoke hearts
1 (25 ounce) jar of your favorite marinara sauce (I prefer Emeril's marinara)

Steps:

  • Preheat oven to 350°F.
  • Rinse and pat dry chicken.
  • Spray pan (i use disposable) with cooking spray or spread a little olive oil on pan.
  • Place chicken in pan.
  • Pour sauce over chicken.
  • Spread artichoke hearts over chicken.

2 tbsp. Olive Oil
2 tbsp. Butter
3 cloves Garlic, Minced
1/2 whole Medium Onion, Finely Diced
1 can Artichoke Hearts (14.5 Oz. Quartered Or Whole) Drained
1 can Diced Tomatoes With Juice (14.5 Oz.)
1 c. Heavy Cream
1/2 c. Chicken Broth (More As Needed)
1/2 tsp. Nutmeg
Salt And Pepper, to taste
1 lb. Thin Spaghetti
1 c. Parmesan Cheese, Freshly Grated
2 tbsp. Fresh Chives (or Other Herbs) Chopped

Steps:

  • Cook spaghetti till al dente. Drain and set aside.Melt olive oil and butter in a large skillet over medium heat. Add onions and garlic and saute for 2 to 3 minutes.Add artichoke hearts and tomatoes. Stir and cook for 8 to 10 minutes. Reduce heat to low. Stir in cream and chicken broth. Add salt and pepper to taste (do not undersalt!) Cook over low heat until heated through, then turn off heat.Place drained pasta in a large bowl. Sprinkle with 1 cup Parmesan. Pour sauce over the top. Add chives. Toss lightly to combine and coat; add a tiny bit of reserved pasta water if sauce seems too thick.Delicious!

This rigatoni with artichokes, garlic, and olives recipe is a consummate spring supper that's vegetarian, delicious, and, most importantly, fast. Garlic, rosemary, and artichokes are sauteed in butter while the pasta cooks. Everything is tossed together and topped with olives and orange zest.

12 to 16 ounces rigatoni
2 tablespoons (1 oz) salted butter
6 tablespoons olive oil
2 garlic cloves (peeled and finely chopped)
2 tablespoons finely chopped rosemary leaves
1/2 cup pitted Kalamata olives (halved)
6 jarred artichoke hearts packed in oil* (drained and cut into quarters)
1/3 cup plus 1 tablespoon dry white wine
Finely grated zest of 1/2 orange, preferably organic ((or, if you prefer, the zest of a small lemon))
Salt and freshly cracked black pepper to taste
Parmigiano-Reggiano ((optional))

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente.
  • Meanwhile, in a large skillet or wok over medium heat, heat the butter and oil until the butter melts into a puddle. Add the garlic, rosemary, olives, and artichokes and cook, still over medium heat, stirring occasionally, for 3 minutes. Pour in the wine and cook until the liquid almost completely evaporates, about 2 minutes.
  • Add the orange (or lemon) zest to the artichoke concoction, season really quite generously with the salt and pepper, and toss to combine. Remove from the heat.
  • When the pasta is done, drain it and add it to the artichoke mixture in the skillet. Place the pan over medium-high heat and toss again for 30 seconds or so, just long enough to evenly coat the pasta. Taste and, if desired, season with more pepper. Divvy the pasta among plates, spooning any artichoke mixture that remains in the skillet over the top. And, if you please, shave or grate some Parmigiano-Reggiano over the pasta. Serve immediately.

1 clove garlic, smashed

2 teaspoons fresh lemon juice
1 pound refrigerated cheese agnolotti (moon-shaped stuffed pasta) or ravioli

  • Combine the artichokes, half-and-half, garlic, red pepper flakes and 1/4 teaspoon salt in a large skillet and bring to a simmer over medium heat.
