2 tbsp sunflower oil
400g beef mince
1 onion, chopped
2 garlic cloves, crushed
1 tbsp cumin seeds
1 tsp ground coriander
1 tsp dried oregano
1 tbsp cider vinegar
1-2 tsp chipotle paste
1 tbsp tomato paste
400g can chopped tomatoes
¼ tsp yeast extract
1 beef stock cube
400g can black or kidney beans
cooked rice
soured cream
sliced jalapeños from a jar, drained
handful of coriander leaves
1 small onion, chopped

Steps:

  • Heat the oil in a casserole or shallow saucepan over a medium heat, then fry the beef for about 10 mins until any fat has been released and the beef has started to brown. Add the onion and fry for another 8-10 mins until the onions have softened and started to brown slightly. Add the garlic and stir for another minute.
  • Stir in the cumin seeds, ground coriander, oregano and a good grinding of black pepper, and continue to fry the mixture for a few minutes until fragrant. Add the vinegar, then the chipotle and tomato pastes, and stir everything together. Tip in the tomatoes and a can of water, then add the yeast extract and crumble in the stock cube. Stir well and bring the mixture to a simmer. Cook for 20 mins, stirring occasionally.
  • When the chilli has thickened, tip in the beans and half the liquid from the can. Simmer for 20 mins more, taste for seasoning, then serve with rice, and top with the soured cream, jalapeños, coriander leaves and onion.

Make this smoky chilli sauce to go with homemade doner kebabs, burgers or hotdogs. Packed with garlic and spicy heat, it promises to add punch to your dishes

12 red chillies
10 garlic cloves
1 tbsp olive oil , plus a drizzle extra
pinch of caster sugar

Steps:

  • Remove the stems from the chillies, then tip onto a sheet of foil with the garlic cloves, a drizzle of olive oil, caster sugar and some salt. Lift the sides of the foil up and scrunch to close.
  • Grill on the barbecue (or roast at 160C/140C fan/gas 3) for 30 mins until the garlic is soft. Tip into a large pestle and mortar or food processor with 1 tbsp olive oil, and crush or blitz to a chunky sauce. Will keep in the fridge for up to two days.

To reduce calories, fat and sodium, you can opt for a light Alfredo sauce. For a spicier dish, increase the amount of chipotle chiles. Recipe is from Family Circle. I like to use "Recipe#111347" for the prepared alfredo sauce.

12 ounces uncooked penne pasta
1 1/2 tablespoons vegetable oil
1 lb boneless skinless chicken breast, cut into 3/4-inch chunks
1/3 cup onion, chopped
1 teaspoon garlic, minced
2 cups prepared alfredo sauce
1 tablespoon chipotle chile in adobo
2 teaspoons chili powder
2 teaspoons maple syrup
1/2 teaspoon salt
8 slices cooked bacon, heated in microwave and chopped
2 tablespoons fresh cilantro, chopped

Steps:

  • Cook penne following package directions; drain.
  • While penne is cooking, heat oil in a large skillet over medium-high heat and cook chicken for about 4 minutes or until cooked through.
  • Remove to a plate and reserve.
  • Reduce heat to medium.
  • Add onion to the skillet and cook for 3 minutes, stirring occasionally.
  • Add garlic and cook 30 seconds.
  • Stir in the Alfredo sauce, chipotle, chili powder, maple syrup and salt.
  • Cook over medium-high heat until bubbly.
  • Stir in the chicken.
  • Place the pasta back into the pot and stir in the Alfredo and chicken mixture.
  • Spoon pasta onto a large serving platter and garnish with the bacon and cilantro.

Made using Chipotles, smoked salt and cumin giving that yummy smokiness. The heat is also from the chipotles, fresh jalapenos, and ghost peppers so be warned its HOT! Make nice hot gifts!

2 ounces whole chipotle chiles
1 bulb of garlic, peeled
1 onion, peeled and rough chopped
1 1/2 lbs chopped tomatoes
1/2 cup brown sugar
1 teaspoon hickory smoke salt
1/2 cup raisins
3 ounces red jalapenos, stems removed
2 tablespoons ground paprika
1 pinch saffron (optional)
1/2 teaspoon cumin
1/2 cup cider vinegar

Steps:

  • place tomatoes, chilies, raisins, onion and garlic in a blender and puree.
  • Add to a pot with rest of ingredients.
  • Cook for 20 minutes.
  • Pour into sterilized jars leaving 1/2 inch head space. Process for 10 minutes.
  • Let flavors meld for a week or two.

1 aubergine
1 tbsp olive oil or rapeseed oil
1 red onion, diced
2 carrots, finely diced
70g puy lentils or green lentils, rinsed
30g red lentils, rinsed
400g can kidney beans
3 tbsp dark soy sauce
400g can chopped tomatoes
20g dark chocolate, finely chopped
¼ tsp chilli powder
2 tsp dried oregano
2 tsp ground cumin
2 tsp sweet smoked paprika
1 tsp coriander
1 tsp cinnamon
800ml vegetable stock
½ lime, juiced
brown rice
tortilla chips, mashed avocado, yogurt or soured cream, grated cheddar, roughly chopped coriander (optional)

Steps:

  • If you have a gas hob, put the aubergine directly onto a lit ring to char completely, turning occasionally with kitchen tongs, until burnt all over. Alternatively, use a barbecue or heat the grill to its highest setting and cook, turning occasionally, until completely blackened (the grill won't give you the same smoky flavour). Set aside to cool on a plate, then peel off the charred skin and remove the stem. Roughly chop the flesh and set aside.
  • In a large pan, heat the oil, add the onion and carrots with a pinch of salt, and fry over a low-medium heat for 15-20 mins until the carrots have softened.
  • Add the aubergine, both types of lentils, the kidney beans with the liquid from the can, soy sauce, tomatoes, chocolate, chilli powder, oregano and the spices. Stir to combine, then pour in the stock. Bring to the boil, then turn down the heat to very low. Cover with a lid and cook for 1½ hrs, checking and stirring every 15-20 mins to prevent it from burning.
  • Remove the lid and let the mixture simmer over a low-medium heat, stirring occasionally, for about 15 mins until you get a thick sauce. Stir in the lime juice and taste for seasoning - add more salt if needed. Serve hot over rice with whichever accompaniments you want!
