2 tablespoons butter
Extra-virgin olive oil
1 onion, diced
2 garlic cloves, minced
6 sprigs fresh thyme, leaves only
1/4 cup all-purpose flour
6 cups canned vegetable stock
2 cups heavy cream
2 Idaho potatoes, peeled and diced
6 ears corn
Salt and freshly ground black pepper
1/4 cup chopped fresh parsley leaves

Steps:

  • Heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Add the onion, garlic, and thyme and cook until the vegetables are good and soft, 8 to 10 minutes. Dust the vegetables with flour and stir to coat everything well. Pour in the vegetable stock and bring to a boil. Add the cream and the potatoes, bring to a boil and boil hard for about 7 minutes, until the potatoes break down (this will help to thicken the soup and give it a good texture).
  • Cut the corn kernels off the cob and add to the soup. Season with salt and pepper and simmer until the corn is soft, about 10 to 12 minutes. Stir in the parsley and give it another little drink of olive oil. Ladle the soup into bowls and serve.

¼ cup butter
1 green bell pepper, chopped
⅔ cup chopped onion
3 cups whole milk
1 (10.75 ounce) can condensed cream of potato soup
1 tablespoon Worcestershire sauce
1 pound ground venison
1 (16 ounce) can cream-style corn
ground black pepper to taste
4 cups shredded Cheddar cheese

Steps:

  • Melt butter in a large pot over medium-high heat. Saute green bell pepper and onion until tender, 5 to 10 minutes. Stir in milk, potato soup, and Worcestershire sauce. Let soup simmer, uncovered, for 15 minutes.
  • Heat a large skillet over medium-high heat. Add venison; cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add venison to the soup; stir in corn. Season with pepper. Simmer until flavors meld, at least 15 minutes. Stir in cheese until melted.

1 large yellow onion, diced
1 -1 1/2 cup celery, diced
2 tablespoons butter
8 cups potatoes, peeled and diced
16 ounces chicken broth
4 cups water
2 cups milk
2 cups corn
1 lb bacon, cooked crisp and diced
6 eggs, hard boiled and diced
2 tablespoons fresh parsley, chopped
2 teaspoons salt
1 teaspoon pepper

Steps:

  • In a Large stock pot :Sauté the onion and celery in butter until soft.
  • Add potatoes, chicken broth and water. Simmer for 25 minutes or until potatoes are cooked.
  • Mash the potatoes just a little to make chowder thicker.
  • Add milk, corn, bacon, and eggs.
  • Sprinkle with parsley, salt, and pepper.
  • Cover and simmer for 20 minutes.
  • Serve warm.

1 medium yellow onion, chopped
3 medium russet potatoes, peeled and cut into 1/2 inch cubes (about 1 lb)
2 cups chicken broth
1 cup corn (fresh, frozen or well-drained canned)
1 cup milk
1/2 teaspoon salt (optional)
1/4 teaspoon ground black pepper
chopped chives

Steps:

  • Melt butter in a large saucepan over medium-high heat.
  • Add onion and cook, stirring frequently, until golden and tender, about 7-10 minutes.
  • Add potatoes and chicken broth. Bring mixture to a boil. Reduce heat to low and simmer, partially covered, until potatoes are tender, about 15-20 minutes.
  • Stir in corn, milk, salt and pepper; simmer uncovered 5 minutes.
  • Ladle chowder into bowls.
  • Sprinkle with chopped chives.

1/2 teaspoon salt

2 cups milk
2 (14 3/4 ounce) cans cream-style corn
8 ounces cheddar cheese, shredded (about 3 cups)

Steps:

  • Melt butter in a Dutch oven over low heat.
  • Increase heat to medium, add onion and celery, and cook until tender, 5-7 minutes.
  • Add salt, pepper, and paprika and stir with a wooden spoon.
  • Add potatoes, milk, and corn and stir until soup is heated through.
  • Remove Dutch oven from heat and stir in cheese until melted.
  • If necessary, place soup over low heat and cook, stirring until all of cheese is melted; do not boil.
  • Ladle soup into bowls and sprinkle with chopped parsley.
  • Store leftover soup in a covered container in the refrigerator.

3 ears fresh corn or 3 ears bicolor corn
4 ounces bacon, cut into 1/3 inch dice
2 tablespoons unsalted butter
1 medium onion, cut into 1/2 inch dice
1/2 large red bell pepper, cut into 1/2 inch dice
1 sprig fresh thyme, leaves removed and chopped
1/2 teaspoon ground cumin
1/8 teaspoon turmeric
1 lb yukon gold potato, peeled and cut into 1/2 inch dice
3 cups chicken stock
kosher salt
fresh ground black pepper
2 teaspoons cornstarch, dissolved in
2 tablespoons water
1 cup heavy cream
2 tablespoons minced fresh chives or 2 tablespoons thinly sliced scallions

Steps:

  • Husk the corn.
  • Carefully remove most of the silk by hand and then rub the ears with a towel to finish the job.
  • Cut the kernels from the cobs and place in a bowl.
  • You should have about 2 cups.
  • Using the back of your knife, scrape down the cobs and add the milky substance that oozes out to the corn kernels.
  • Heat a 3-to 4-quart heavy pot over low heat and add the diced bacon.
  • Once it has rendered a few tablespoons of fat, increase the heat to medium and cook until the bacon is crisp and golden brown.
  • Pour off all but one tablespoon of the bacon fat, leaving the bacon in the pot.
  • Add the butter, onion, bell pepper, thyme, cumin, and turmeric and sauté, stirring occasionally with a wooden spoon, for about 8 minutes, until the onion and pepper are tender but not browned.
  • Add the corn kernels, potatoes and stock, turn up the heat, cover, and boil vigorously for about 10 minutes.
  • Some of the potatoes will have broken up, but most should retain their shape.
  • Use the back of your spoon to smash a bit of the corn and potatoes against the side of the pot.
  • Reduce the heat to medium and season the chowder with salt and pepper.
  • Stir the cornstarch mixture and slowly pour it into the pot, stirring constantly.
  • As soon as the chowder has come back to a boil and thickened slightly, remove from the heat and stir in the cream.
  • Adjust the seasoning if necessary.
  • If you are not serving the chowder within the hour, let it cool a bit, then refrigerate; cover the chowder AFTER it has chilled completely.
  • Otherwise, let it sit at room temperature for up to an hour, allowing the flavors to meld.
  • When ready to serve, reheat the chowder over low heat; don't let it boil.
  • Ladle into cups or bowls and sprinkle with the chopped chives.

1 medium onion, chopped
1 tablespoon butter
2 cans (14-3/4 ounces each) cream-style corn
4 cups whole kernel corn
4 cups diced peeled potatoes
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 jar (6 ounces) sliced mushrooms, drained
3 cups milk
1/2 medium green pepper, chopped
1/2 to 1 medium sweet red pepper, chopped
Pepper to taste
1/2 pound bacon, cooked and crumbled

Steps:

  • In a large saucepan, saute onion in butter until tender. Add the cream-style corn, kernel corn, potatoes, soup and mushrooms. Stir in milk. Add green and red peppers. Season with pepper. , Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. Garnish with bacon.
