STRAWBERRIES IN ORANGE JUICE

Steps:

• Stem the strawberries and put them in a serving bowl. Sprinkle with the sugar and pour over the juice. Cover and leave to macerate several hours or overnight before serving.

Steps:

• Wash the strawberries quickly without letting them soak.
• Remove the stems.
• Place the berries whole into the dish in which they are to be served.
• Sprinkle generously with sugar and pour over the orange juice.
• Leave to macerate, covered, in the refrigerator for a couple of hours before serving.

STRAWBERRIES IN ORANGE JUICE

Steps:

• Wash and hull: 1 1/2 pints sweet ripe strawberries.
• Cut the berries in half or in quarters if they are large.
• Stir together: 1 1/2 cups fresh orange juice (from 3 large oranges), 3 tablespoons sugar, or to taste.
• Pour the juice over the berries and let them soak for at least 30 minutes. Serve cold.
• Substitute a fruity red wine for the orange juice and add a squeeze of lemon juice.
• Add the segments of 1 or 2 oranges to the sliced strawberries.

STRAWBERRIES IN ORANGE AND CARAMEL SAUCE

Steps:

• Grate zest from orange into a small bowl, then squeeze juice into bowl. Add butter, liqueur, and a pinch of salt.
• Heat sugar in a dry 10-inch heavy skillet over medium heat, stirring with a fork to heat sugar evenly, until it starts to melt, then stop stirring and cook, swirling skillet occasionally so sugar melts evenly, until it is dark amber. Remove from heat and immediately add orange-juice mixture. Boil, stirring, until caramel has dissolved and sauce is slightly thickened, about 2 minutes.
• Add strawberries and cook, stirring, until heated through, about 1 minute. Serve immediately.
