CORN CAKES WITH CRAB AND SMOKY AVOCADO YOGURT



Corn Cakes with Crab and Smoky Avocado Yogurt image

2 ripe avocados, diced
1 cup Greek yogurt (2 percent)
1/2 cup fresh cilantro leaves
2 teaspoons chipotle in adobo puree (see Cook's Note)
Juice of 1/2 lime
Kosher salt and pepper
1 cup whole milk
4 tablespoons unsalted butter, diced, plus more for cooking the corn cakes
1 tablespoon clover honey
1 1/2 cups corn flour
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/8 teaspoon cayenne powder
2 large eggs, separated
2 cups fresh or frozen corn kernels
1 large egg white
8 ounces jumbo lump crab meat
Microgreens, for garnish

Steps:

  • For the avocado yogurt: Put the avocados, yogurt, cilantro, chipotle puree, lime juice and some salt and pepper in a blender. Blend until smooth. Cover and refrigerate for at least 30 minutes and up to 4 hours to let the flavors meld.
  • For the corn cakes: Combine the milk, butter and honey in a small saucepan. Bring to a simmer over low heat and cook until butter has melted. Remove from the heat and let cool for 5 minutes.
  • Meanwhile, whisk together the corn flour, baking powder, salt and cayenne in a large bowl.
  • Whisk the egg yolks in a bowl until smooth. Add the cooled milk mixture and mix until smooth, then stir in the corn. Stir the wet mixture into the dry mixture until a batter just comes together. In a clean, dry bowl, beat the 3 egg whites until stiff (they should hold their shape), then fold them completely into the corn mixture.
  • Heat some butter in a cast-iron skillet over medium heat until almost smoking. Working in batches, make the cakes with 2 tablespoons of batter each, leaving a few inches of space between them as they spread quite a bit. Cook until browned on the bottom and starting to bubble around the edges, about 2 minutes. Flip the corn cakes with a spatula and cook until lightly browned on the reverse side, about 1 minute. Remove to a baking rack to drain.
  • To assemble: Top each corn cake with a dollop of avocado yogurt, a few pieces of crab and some microgreens.

When we set out to make the "best" crab cakes, opinions in the test kitchen were strong and varied. But we could all agree on plenty of fresh, high-quality crabmeat with very little filler. After some tinkering, we created these decadent cakes-generously sized and highly seasoned-with plenty of lemon juice, fresh herbs and spices. The jumbo lump crabmeat is front and center, so splurge on the best and freshest you can find.

2 pounds fresh jumbo lump crabmeat, picked over for shells and cartilage
1 1/2 cups panko
1/2 cup mayonnaise
1/4 cup chopped chives
1 tablespoon Dijon mustard
2 teaspoons seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper
Juice and zest of 1 lemon, plus more lemon wedges for serving
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup mayonnaise
1/2 cup chopped dill pickles (about 2 whole pickles)
1 tablespoon capers, chopped
1 tablespoon minced chives
Juice and zest of 1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
  • Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
  • Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
  • Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula. Continue to cook until lightly golden, about 1 1/2 minutes then transfer the pan to the oven. Cook until the crab cakes are completely heated through, about 10 minutes.
  • Serve the crab cakes with the tartar sauce and lemon wedges.

  • Mix mayonnaise, egg yolks, lemon juice, Worcestershire, mustard, pepper, salt, blackening seasoning, red pepper flakes, parsley, breadcrumbs. Gently add crabmeat. Make into 4-ounce patties. Fry in 1 inch of oil until golden brown.

FOR THE CRAB CAKES:
12 ounces , fresh, frozen or canned cooked lump crab meat
3/4 cup plain bread crumbs
1/2 cup finely diced red bell pepper
4 green onions, (white part only), finely chopped
3 tablespoons mayonnaise
2 teaspoons Dijon style mustard
1/4 teaspoon hot pepper sauce
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
FOR THE DRESSING:
2 tablespoons extra-virgin olive oil
2 teaspoons white wine vinegar
1/2 teaspoon Dijon style mustard
kosher salt
freshly ground black pepper
4 ounces mixed lettuce salad greens (4 handfuls)
vegetable oil
4 lemons wedges

Steps:

  • TO MAKE THE CRAB CAKES: In a colander drain the crabmeat (if frozen, allow to defrost) and pat dry with paper towels. In a medium bowl flake the crabmeat with a fork and discard any shell or cartilage. Add the remaining crab cake ingredients and mix gently but thoroughly. Shape into eight small cakes about 3 inches in diameter and 3/4 inch thick. Place the cakes on a plate, cover with plastic wrap, and refrigerate for 30 minutes to 2 hours so they hold together on the grill.TO MAKE THE DRESSING: In a medium bowl whisk together the salad dressing ingredients, including salt and pepper to taste. Just before serving, toss the salad greens with the dressing and arrange on four plates.Lightly brush or spray both sides of the crab cakes with vegetable oil. Grill over Direct High heat until the bread crumbs are toasted, 6 to 8 minutes, carefully turning with a wide spatula once halfway through grilling time. 1 1/4 c. unflavored bread crumbs, divided
1 lb. crabmeat, flaked and picked over
1/2 c. finely chopped red pepper
1/3 c. mayo
1 large egg, lightly beaten
1/4 c. minced onion
1/4 c. chopped green onions
2 T. minced fresh parsley
2 T. Dijon mustard
1 T. fresh lemon juice
1/2 t. minced garlic
1/2 t. Worcestershire sauce
1/4 t. red pepper sauce
1/8 t. salt
3 T. vegetable oil

Steps:

  • Line cookie sheet with wax pepper. Place 1 c. breadcrumbs in shallow dish. Combine remaining 1/4 c. breadcrumbs with remaining crab cake ingredients except oil in large bowl until just blended. Shape mixture evenly into 8 patties. Coat each crab cake with crumbs, cover both sides. Transfer to prepared cookie sheet. Cover and refrigerate 2 hours. Heat 2 T. oil in large non-stick skillet over medium heat. Cook crab cakes in batches until golden brown. (Add oil if needed.) 4-5 minutes per side.

I love to make copy cats from restaurants so I can have them whenever I want. These are very good as posted but for a change you might like to add chopped green onion and/or red bell pepper. I serve these with my Roasted Garlic Aioli recipe.

1/3 cup mayonnaise
2 1/2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon dry mustard
1 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon Old Bay Seasoning
1/4 teaspoon salt
1 1/4 cups fresh breadcrumbs
3 tablespoons chopped fresh parsley
1 lb crabmeat
flour, to coat

Steps:

  • Beat together first 9 ingredients.
  • Fold in breadcrumbs and parsley.
  • Fold in crab meat.
  • Form into approx 6 crab cakes (can make smaller ones for appetizers).
  • Lightly coat patties in flour on both sides.
  • Deep fry crab cakes in 350°F oil till browned on both sides.
  • Serve w/ garlic ailoi.

  • Preheat the broiler. On a large rimmed baking sheet, toss the onion with the oil and season with kosher salt. Broil 8 inches from the heat for about 8 minutes, stirring occasionally, until the onion is softened and charred in spots. Let cool, then finely chop. In a medium bowl, whisk the onion with the mayonnaise, vinegar, chives, shallot, chili powder and cayenne. Season with smoked sea salt.
  • In a large ovenproof skillet, heat 2 tablespoons of the oil. Add the fennel, onion, red pepper and jalapeño and cook over moderate heat, stirring, until softened and just starting to brown, about 7 minutes. Stir in the brandy and Old Bay and cook until the brandy has evaporated, about 1 minute. Scrape into a large bowl and let cool; wipe out the skillet.
