A modest portion of smoked salmon yields a luxurious spread when blended with sour cream and a touch of lemon juice.

1 teaspoon unflavored gelatin, (from a 1/4-ounce envelope)
4 ounces smoked salmon, coarsely chopped
1 1/4 cups sour cream
1 to 2 tablespoons fresh lemon juice
Coarse salt
Fresh dill, for garnish (optional)
Crackers or baguette slices, for serving

Steps:

  • Place 3 tablespoons cold water in a small saucepan, and sprinkle with gelatin; let soften, 5 minutes. Gently heat over low, stirring, just until gelatin dissolves; set aside.
  • In the bowl of a food processor, combine salmon, sour cream, and lemon juice. Puree until smooth; season with salt. With motor running, add slightly cooled gelatin mixture, and blend until combined.
  • Pour into two 8-ounce ramekins or bowls. Without touching surface, cover container with plastic wrap, and refrigerate until firm but spreadable, about 2 hours or up to overnight. Garnish mousse with dill, if desired, and serve with crackers or baguette slices.

150g smoked salmon, trimmings are fine
200g tub soft cheese
1 tbsp crème fraîche, only if you have some
juice half a lemon
small bunch dill or chives, chopped
breadsticks or granary toast, to serve

Steps:

  • If you aren't using smoked salmon trimmings then chop the salmon into small pieces. Tip the soft cheese, crème fraîche (if using) and lemon juice into a food processor, season generously with black pepper and blitz to your liking. Add the smoked salmon and pulse a few times if you want the paté chunky or blitz some more if you want the paté smooth and pink.
  • Stir the herbs into the paté and spoon into a large or four smaller bowls and serve with warm toast as a starter or with breadsticks as a dip.

1 (100 gram) pkg. cold smoked salmon (lox), thawed (see Note)
2 tsp. lemon juice
2 tsp. chopped fresh dill
2 tsp. Dijon mustard
1 (250 gram) brick cream cheese, at room temperature
2 Tbsp. whipping cream
Salt and while pepper to taste
24 pumpernickel cocktail rounds (see Note)

Steps:

  • Small dill sprigs for garnish Place the salmon, lemon juice, dill and mustard in a food processor. Pulse until the salmon is finely chopped. Add the cream cheese and whipping cream and pulse until you create a salmon mixture that is very smooth and light. Season the mousse with salt and pepper. Arrange cocktail rounds on a platter. Transfer salmon mixture to a piping bag fitted with a star tip. Pipe some salmon mousse on each cocktail round. Chill canapés, uncovered, until mousse is set, and then tent with plastic wrap until ready to serve. When ready to serve, uncover, garnish each canapé with a small dill sprig, and serve. Note: Treasure Island brand smoked salmon was used in this recipe. Pumpernickel cocktail rounds are available in the deli department. If unavailable, cut slices of rye bread into rounds or use a sturdy cracker as base for the canapé.

1/2 cup tomato juice
1 (1/4 ounce) envelope unflavored gelatin
1 (7 1/2 ounce) can red salmon, drained,skin and round bones removed
2 green onions, cut into 1 inch pieces
3/4 cup nonfat cottage cheese
1/2 cup nonfat plain yogurt
1/8 teaspoon liquid smoke
2 teaspoons lemon juice
fresh ground pepper, sprinkle

Steps:

  • Combine tomato juice and gelatin in small saucepan, let stand for 5 minutes.
  • Heat and stir on low until gelatin is dissolved.
  • Set aside.
  • Process remaining 7 ingredients in food processor, scraping down sides as necessary, until smooth.
  • Add gelatin mixture through chute.
  • Mix Well.
  • Pour into lightly greased plastic lined 2 1/2 cup mold or deep bowl.
  • Cover with plastic wrap.
  • Chill for several hours until firm.
  • To serve, turn out and remove wrap.

3/4 cup sour cream
2 ounces smoked salmon, chopped (about 1/3 cup), plus 6 ounces smoked salmon, sliced thin
1 tablespoon finely grated peeled fresh horseradish, or to taste
2 teaspoons minced fresh dill plus dill sprigs for garnish
pumpernickel toast points as an accompaniment if desired

Steps:

  • In a small saucepan sprinkle the gelatin over the water and let it soften for 1 minute. Heat the mixture over low heat, stirring, until the gelatin is dissolved, add 1/4 cup of the sour cream, and cook the mixture, whisking, until it is smooth. In a food processor purée the chopped salmon until it is very smooth. In a small bowl whisk together the gelatin mixture, the remaining 1/2 cup sour cream, the puréed salmon, the horseradish, the minced dill, and salt and pepper to taste and chill the mousse, covered, for 1 hour, or until it is firm. The mousse may be made 2 days in advance and kept covered and chilled.
  • Scoop oval-shaped mounds of the mousse onto each of 6 chilled plates, arrange the sliced salmon decoratively on the plates, and garnish each serving with a dill sprig. Serve the salmon with the toast points.

3 sticks unsalted butter
1 pound smoked Norwegian or Scottish salmon, not too salty, cut into inch cubes
1/2 cup heavy cream
Juice of 1/2 lemon
1 tablespoon chives, finely chopped
1 tablespoon dill, finely chopped
1 tablespoon parsley, finely chopped

Steps:

  • Cut the butter into cubes and melt it in a saucepan over low heat. Remove from the heat and set aside for a few minutes to cool and to allow the milky solids to sink to the bottom. Carefully pour off the oily part, or clarified butter, leaving the milky solids behind. Let the clarified butter cool to room temperature.
  • In 2 or three batches, put the salmon cubes, clarified butter, and cream in the bowl of a food processor, and puree until fluffy and completely smooth. Transfer the salmon puree to a large bowl and stir in the herbs and lemon juice to taste. Chill before serving.

1 pound smoked salmon (preferably unsliced), skinned, pin bones removed and fish cut into 1/4-inch dice (about 2 cups)
2 cups 1/4-inch dice seeded seedless cucumber
1/4 cup chopped fresh dill sprigs
1/3 cup chopped red onion (about 1 small), soaked in ice water to cover 5 minutes, drained, and patted dry
2 1/4 cups sour cream
3 tablespoons fresh lemon juice
1 tablespoon freshly grated lemon zest
2 tablespoons cold water
2 1/2 teaspoons (1 envelope) unflavored gelatin
Garnish: thin cucumber ribbons made by cutting 1 large seedless cucumber lengthwise with a vegetable peeler
Accompaniments: assorted toasts and/or crackers

Steps:

  • Lightly oil an 8-by-2 inch round cake pan and line with plastic wrap.
  • Spread 1 1/4 cups salmon evenly in cake pan. In a bowl stir together remaining salmon, cucumber, dill, onion, sour cream, lemon juice, and zest until combined well.
  • Put cold water in a small heatproof cup and sprinkle gelatin over it. Set cup in a saucepan and add enough water to pan to reach halfway up side of cup. Heat gelatin mixture over low heat until gelatin is dissolved and stir into salmon mixture. Season mixture with salt and pepper and spoon over salmon in cake pan. Chill mousse, covered with plastic wrap, at least 6 hours and up to 3 days.
  • To unmold mousse, invert mousse onto plate. Loft off cake pan and peel off plastic wrap.
  • Garnish mousse with cucumber ribbons and serve with toasts.
