Steps:
- Flake the fish into a bowl, mash in the cream cheese, add a good squeeze of lemon and plenty of black pepper.
- Refrigerate until ready to serve.
- Bloody Lovely!
SMOKED FISH DIP
Steps:
- Combine the cream cheese, jalapeno, celery, onion, Worcestershire and hot sauce in a food processor and mix until smooth. Break up the fish into the processor and process again until just mixed but not mushy. Thin the mixture with sour cream to a spreading consistency.
- Chill for 1 hour before serving. Serve with crackers or fresh raw vegetables.
SMOKED SPANISH MACKEREL DIP
A friend catches Spanish mackerel in South Florida and fillets it for us. He delivers it, and we spend the day smoking 10 pounds of fish. We vacuum pack what we don't need and freeze it for later. It keeps very well for months in a freezer. How long? We don't know, because we make this so often! Can't find smoked mackerel? There are YouTube videos to smoke your own! Serve with an assortment of crackers, toasts, celery, and carrots immediately.

Steps:
- Place mackerel, mayonnaise, ketchup, chipotle pepper with 1 teaspoon adobo sauce, onion, cilantro paste, lemon juice, sea salt, and pepper into a food processor and process until thoroughly combined.
- Transfer mixture to a plastic container with a lid and refrigerate until thoroughly chilled, 1 to 2 hours. Serve.

- In a mixing bowl, stir the smoked mackerel, soured cream and spring onions together to make a textured dip, then stir in the horseradish. Spoon into a serving bowl and serve with sticks of raw veg for dipping. Can be chilled for up to 3 days.

CREAM CHEESE AND SMOKED BEEF
May be served in a bowl or... I like to slice the top of a green bell pepper off, clean the seeds out, then scoop in the cream cheese mixture. Serve with crackers around it. It looks so pretty. You can slice the green pepper up, and also eat it with the spread. If you prefer, you can also make this with turkey or ham.

KEY WEST SMOKED FISH DIP
My first trip to the Keys resulted in a whole new palate for me. One of my new yummies is this recipe. I got it from cooks.com and it is the closest thing to what we had at Conch republic. If you live close to Pittsburgh, you can get the smoked whitefish in the Strip at Wholeys.

- Flake white fish, making sure there are no bones, into food processor.
- Add everything else and pulse until smooth.
- Serve with good crackers.
- We had them with Cuban crackers that i had to order after i returned home.
- The longer you make it in advance, the better the flavors meld.
